  1. Me too, but using the mocha recipe on the side of the bag, I don't think I've ever tasted a better cake--EVER!! I use a ganache as frosting: 2c heavy whipping cream-bring just to boil-remove from heat add 12 oz pgk chocolate chips let set for 2 minutes, stir and cool a bit before frosting the cooled cake
  2. We were carb-oholics and I thought I was doing my kids a favor by giving them whole wheat, whole grain "healthy"stuff. Now I know I was killing them slowly. We have always eaten pretty healthy, but we can still eat all the stuff you mentioned (besides the whole wheat of course). It depends on how much it means to you. Are you willing to have a different...
  3. That's a GREAT idea!! I'm fortunate that there's another child with Celiac in our dd's 1st grade class, plus one with a dairy allergy. I'm one of the room mom's so we coordinate parties to make sure that parent's bringing in items know what they can and can't bring. The teacher has let all the parents know to tell her in advance if they're bringing in...
  4. OK, I'm in the 2nd section, the info is good, but the speaker is a little "deer in the headlights"
  5. I'm in the middle of watching this, so far it's pretty good. Let me know what you think, it's 86 minutes long. Open Original Shared Link Might be good to fwd to friends and family. So far it's pretty easy to follow.
  6. My son has been off gluten for about 3 weeks now. He's only had 2 solid BM's, it's not consistant at all. No more rashes, skin issues, he's eating really well, talking a lot more, throwing less fits--still a little ornery, but he's 2 As far as my husband goes, we talked more about it last night. He's lived like this for so long, he's learned how to...
  7. Update: I made my regular recipe today, used the Pamela's like I said, used 1/2 the fats-used Smart Balance instead of the butter/shortening. They turned out BEAUTIFULLY! Everyone loved them! Thanks for all your help and suggestions, I really appreciate it!
  8. Hi To add just a little--although there is a normal range, what's normal for one isn't normal for another. Mine has to stay at 0.1. If I go over 0.4, my body starts to shut down and I can't stay awake for more than an hour at a time. I have no thyroid at this point. When they removed what was left 4 years ago, post-op I was around 7 and I thought I was...
  9. We just use their shampoo or johnson's liquid baby soap. For the shampoo we use Suave kids, we get the 3 pack at Costco. The extra conditioner makes their skin soft!
  10. He just wants to see if the symptoms return at this point. Based on the blood tests we had done before, our GI (who I really do like and trust) isn't convinced that it's gluten. He was very quick to say that if he ever does exhibit symptoms to call and we would re-evaluate, which is where we are now. I guess it was pobably my fault that I took him off...
  11. There's a big difference between saturated fats and transfats which are in the processed foods. The transfats are significantly worse thus the influx of the heart disease. I've found that our population is more apt to fill up on drugs to lower cholesterol and blood pressure, but the patients that I'm seeing aren't willing to make the lifestyle change needed...
  12. I'm going to try again tonight with Smart Balance, I've baked with it before, never cookies....I will decrease by 1/2. I can't use the coconut oil shortening either, here are some stats: Coconut oil shortening: 120cal, 16g fat, 12g sat fat (!!!) Butter (salted): 102cal, 12g fat, 7g sat fat margarine (average): 102cal, 11g fat, 2g sat fat Smart...
  13. I guess I will try using less butter. No matter how great shortening is in baking, I'd personally have my cookies look horrible than us it. The thought of it makes me sick to my stomach--but as my DH says-I'm really weird Thanks for all your suggestions!
  14. Thanks for the info! I talked with both the pediatrician and GI yesterday. They want him to see the GI on 3/4/08 go gluten-free until a week before and then load him up that final week to bring back symptoms--if this is what it is. I totally understand why they want to do this, but the thought of it is making ME sick. I guess we could do this and it could...
  15. My SIL was born at 27 weeks, has a mild form. My boss's daughter was born at 26 weeks, also has a mild form. The big thing that I have learned from watching both of these girls grow up is to treat them like a normal child. Recognize any difficulties/limitations they have, but DON"T cater to their every need, teach them to be self sufficient, and treat...
  16. I think you should look into the stuff I posted before--check blood pressure, heart rhythm issue, CBC, CMP just to make sure there is no underlying issue if you know you aren't dehydrated, hungry etc... An exercise stress test may be helpful.
  17. I saw that tip about cutting back the butter, I just didn't know by how much. The chocolate chip cookie recipe on the pkg says 1/4 cup, versus the regular recipe which calls for 1/2 cup. Maybe I'll try that. Thanks!
  18. I routinely convert regular recipes to gluten-free ones. I have no problem converting cakes and muffins using Pamela's baking mix for the flour, salt, baking powder, baking soda and xanthan gum, BUT whenever I make cookies with it, they flatten to about the thickness of a quarter. Although they taste good, they look HORRIBLE. What do I need to alter in...
  19. Just came back from the peditrician. He said it sounds like he has at least a wheat allergy if not celiac disease. He has a bunch of questions that he needs answered before we move fwd, so he's going to conference with our GI and get back to me tomorrow. He wants me to keep him off wheat/gluten before we do anything else. He says he knows enough to know...
  20. My work computer lets me vote as many times as I can sit there and hit refresh.....!!!
  21. I looked up the info from enterolab, I will look into the lab fees for our lab, although, I have to pay the deductable first (350$) so it might be a wash, BUT, if he needed anything else done this year, the deductable would already be paid. I'll find out more this afternoon. I would like a host of testing done to see if there's anything else he's allergic...
  22. Here are 2 threads where I've posted some of our favorites. I bake A LOT!! Open Original Shared Link This one is TDF, I make it (in muffin cups) once a week for my DD Open Original Shared Link Try the french bread recipe that's been posted too, it's REALLY good: Open Original Shared Link Have fun! Let me know what you think!
  23. I know you can go thru enterolab to have the gene testing done, but has anyone had the gene testing thru your dr? I just found out our insurance WILL cover it, as long as it's thru our lab. I will talk to our dr, I just wanted to see if anyone else did this.
  24. I eat very little gluten, I've never had any health issues other than thyroid, but that was from a medication my mother was taking while nursing me. My husband, on the other hand, has had intestinal issues his entire life and since the blood work on him was negative, he sees no reason to change--and won't, no matter what I say. I'm positive he has it. ...
  25. So an update on my DS, he had the d for 2 weeks straight, started a gluten-free diet for trial, eczema cleared up, he started eating everything I put in front of him, but poo stayed mushy until sunday--1st solid BM in 3 weeks!! I was so happy for him. We went to a superbowl party, I was in total control and then someone left their bowl of pretzles on a...
