  1. Bummer! But great for you, congratulations on your success!
  2. Colleen, Are you in the Vancouver School District??
  3. We use the Premier Japan Teriyaki sauce. Will use the LaChoy if desparate. The PJ one is on the spendy side but it's REALLY thick, so I dilute it before I add it to the stir fry (or whatever). It ends up lasting longer than the cheaper brands.
  4. I buy the BRM oats because they're substantially cheaper here than the others--(5-6$$ vs 12-15$$!!), I eat them every day and like them a lot, but I bake them so they're really well done... here's the recipe I use. I actually divide it into 2 bowls instead of 4, it's really hearty. I make them the night before and they reheat really well (you can also...
  5. I made this last night, it was so good! I tried it out on my co-workers this morning and everyone loved it! Ingredients Nonstick cooking spray 1-1/4 c Pamela's baking mix (see note at bottom) 1 teaspoon finely shredded lemon peel/zest 3/4 cup granulated sugar 3 tablespoons butter or margarine, softened 2 eggs 1 teaspoon vanilla 1/...
  6. I think so. Like I said, I knew nothing different. Everything happened so fast, I didn't know there were any other options. I just wanted her to get better and I felt we were getting fantastic care, so I went along with it and only researched Celiac Disease. Everything I read said the biospy was the only confirmation, that was how it was truly diagnosed...
  7. We always ask for an omlette (dd likes just cheese) in a clean pan, not put on the grill. I always specify the allergy, explain as easily as I can to make them understand and scare them-just a little on how sick she gets. We always ask for a side of fruit instead of the other sides. I don't trust the hashbrowns anywhere. If we're trying a new place, I...
  8. I got all my weight lifting info from the Mens Health magazine website, if you search the 'abs diet' on that website, it should bring up the workout info--it's for women too. It has a breakdown with pictures for each day of the week. I usually do it 3x week. If you're interested and can't find it, let me know and I'll see what I can find.
  9. Thanks everyone! I'm going to make it tonight and try my recipe with the extra 1/2 cup water, I always add extra sauce, so hopefully I'll be OK. You're all the best! I REALLY appreciate all of you, every day!
  10. I want to make lasagna tomorrow. I have a great recipe, but long for the days I could use no boil noodles. Can I do this with the tinkyada (sp?) noodles? Has anyone tried this? I love lasagna but hate boiling the noodles.....
  11. I understand how you feel. 2 of the places I work in the hospital is in surgery and the endoscopy lab. I see adults daily having this same procedure, so I thought I was prepared for watching my DD go thru it. I have to say, NOTHING could have prepared me for what I saw. They warned me once they started the meds "in about 10 seconds she's not going to...
  12. Fruit and a protein--Yogurt, string cheese, LARA bars, nuts, gluten-free granola, gluten-free oatmeal if you have time... You also don't have to stick with just 'breakfast' foods. Right after a workout I like banana with PB, ham rolled up with a piece of cheese and deli mustard, 1/2 sandwich Hope this gives you a start.
  13. Hi! Welcome! If you're going back in April for the biopsy, she can't be off gluten--the test results won't be accurate, epecially after that much time. Do you know why they want to wait that long? When our daughter was diagnosed (age 4) it was a whirlwind of appts, I didn't know which end was which, but she had the positive blood test results and then...
  14. I would try maybe adding an extra egg and sub oil for the butter. I always use oil in all of my muffins and cakes.
  15. No Problem!! I love to cook, I collect cookbooks and I'm always trying out new things. Baking is really my thing and it's been a little difficult to try to create these recipes and make them taste like their gluten-filled counterpart but also be healthy. Lately things have been working out pretty well-I guess lots and lots and lots and lots of practice...
  16. I made the broccoli dredged chicken nuggets. WOW! They were fantastic, I had everyone try to guess what was in it, No one could. My 2y/o son who eats nothing let alone a vegetable ate one without spitting it out claiming "I no like that!" DD and DH were fighting over the leftovers. Regarding the baked oatmeal recipe--I'm having girlfriends over for breakfast...
  17. Took me a while to type it out but here ya go! Baked oatmeal (not from the book, but made it this morning-super good-I ate 3 of the 4-breakfast, lunch and snack, DD devoured it!) Cooking spray 1 c gluten-free oats
  18. I'm on call tonight, so I probably won't get a chance till tomorrow--I'll try to put some stuff together and get back to you tomorrow.
  19. In a giant bowl, I mix 1 container of mixed nuts from costco--and everything else I add is UNsalted, couple handfuls of mini-marshmallows, pkg each regular and peanut m&m's, honey roasted soynuts, sunflower seeds and a pkg of 'just fruits' mixed fruit, craisins. It makes a ton, I store it in a large cereal container.
  20. As far as I can research back, I'm Irish nearly 100% (I guess I'm considered 'black Irish' or so I'm told...dad's side. Mom is a freckled redhead), DH is English and French. We haven't done the gene testing, so we don't know who donated to our DD.
  21. I like to hear about other's stories, how they got to where they are now. Mine started when I was hitting puberty ~12y/o. I have a brother and sister who could eat whatever they want and stay abnormally skinny. I was always compared to them. The question was often asked "Don't you wish you could look like your sister, don't you wish you could be as thin...
  22. I buy most of my stuff by the case at amazon. It's free shipping over $25. It's cheaper overall if you buy it by the case. I also check prices online at Bob's Redmill, if I choose to have it sent to me, shipping isn't much because I live within 10 miles and you get a certain percentage off if you buy by the case--I only do this with products I know and...
  23. I bought that book too. If you're going to cook dinner with a recipe anyway, it doesn't take any extra time to modify a recipe (from my experience with it). My kids love it and everything works out great--I guess the only extra step I add is adding xanthan gum as necessary in the baked goods, otherwise I just straight across sub my gluten-free flour mix...
  24. I'm sorry if I misunderstood. Although I'm in cardiovascular services, I have done extensive training in nutrition and weight loss. I don't have a degree in it--wanted to but I my DH says I make too much $$ doing what I do and I do like it. I've worked with a lot of women with their health and nutrition so I feel really comfortable with my 'methods' but...
  25. I have found that I can't use the Pamela's straight across for flour in recipes because of all the other stuff in it--baking powder, soda, xanthan gum, etc... I do use it (and LOVE it) for pancakes, muffins, etc... Their website has some fantastic recipes on it--biscotti YUMMMMM!!! The chocolate chip recipe on the side of the package did not turn out right...
