Do you have an asian market near you? I can get many of my flours there very inexpensively. White rice flour, tapioca, potato starch, cornstarch, etc. can be had for $.39 - $.99/lb. I tried this recipe to take to a potluck with the Gluten Eaters yesterday. I pulsed the Bob's Red Mill oats in my food processor a few times to break them up a bit. Here is some more info that may be of use to you. Complete celiac blood panel: Antigliadin IgA and IgG Anti-tissue Transglutaminase Antibody (tTG), IgA and IgG Anti-endomysial (EMA), IgA and IgG Total serum IgA (this rules out IgA deficiency) The EMA is highly specific to celiac disease. There are several different IgG results within the complete celiac panel. Specifically which one was elevated? Is your son IgA deficient? If possible, please post his bloodwork results with the reference ranges. -
Lactose (milk sugar) is initially a problem for many people because the enzyme that breaks it down (lactase) is produced on the tips of the villi. The celiac panel consists of a battery of tests: Anti-Gliadin (AGA) IgA and IgG Anti-Tissue Transglutamise (tTg) IgA and IgG Total Serum IgA Endomesial Antiobody (EMA) IgA and IgG If blood tests are positive (and occasionally even if they are not), the GI doctor may want to proceed to an endoscopy to confirm the diagnosis. Every time I have my bloodwork done, the results are back within 3 days. If it were me, i would wait until Wednesday and then call again. You can use it for the difference bestween the gluten and gluten-free version, but not the whole amount. Celiac is not an allergy. It is an intolerance. If you are indeed celiac or gluten intolerant, it would not show up on an allergy test. Allergy tests measure a completely different class of antibodies (IgE). Celiac is an IgA and IgG response. One can have allergies and not intolerances and vice versa. Food glazes are additives that provide a protective coating and/or shiny appearance to foods. Generally they are based on a wax like beeswax or some other crystaline wax. Your best bet is to contact the vitamin manufacturer to determine if the product is safe to consume.
