  1. I have been making my own tartar sauce for about a year now...being originally from New England, I love fried scallops. I'm soy, wheat, dairy intolerant and use Hellman's/Best Foods canola mayo, lemon juice, and pickle relish to make my own sauce. If the pickle relish is too tart for me, I add a bit of sugar to the mixture. I just plop everything in a small...
  2. I just purchased some Kinnikinick bread also at $3.99 in Cottonwood,AZ (Mt.Hope Natural Food Store),both white and multigrain....16 oz. loaf...in the freezer it went. This certainly is worth switching brands for. I like it, and it regularly sells for $5 a loaf at this store.Yay,no ordering or shipping costs!
  3. I use King Arthur and Bisquick for waffles and pancakes and they cook up perfect.Perhaps you could substitute some buckwheat flour for some of the packaged pre-mix. My gluten eating husband loves my King Arthur pancakes and prefers to eat my pancakes rather than his wheat ones.
  4. Here's a home made gluten free bisquick mix...I'm allergic to milk so have never tried it. I think perhaps some Vance's powder and a bit of vinegar may produce the same results...I will try it this fall when the weather is cooler. Open Original Shared Link The recipe is from Bette Hagman.
  5. Victoria and Mindy are 100% correct ....as of 2008 Celiac is considered a disability. There was an article fairly recent on this forum about Pizza Hut having charges brought against them by a mother who brought a school group to the restaurant and a child brought in ....I think...MacDonald's fries. They were asked to leave. I seldom eat out because of...
  6. Just a thumbs up--Basha's Supermarket in Arizona has Gluten Free Bisquick on sale this week until Tuesday for $2.99. I did not expect to find it at my local store because I live in a small community.....they had it, the expiration date was good thru 2013, and I purchased 6 boxes and in the freezer it went.
  7. I'm also lactose intolerant, allergic to milk and casein, and allergic to soy, nuts, and a few other things, so that greatly limits my diet...I should have mentioned that in my "soup" post. I exist on filet mignon, pork roasts, ribs, wings, salmon, lobster, veggies, fruit, etc.....oh, poor me I've never seen the inside of any of the restaurants where I live with...
  8. The "offerings" most likely were diminished because you purchased them!!! Ask the manager/customer service if the items you previously purchased can be special ordered.
  9. I agree with Sylvia about the Health Valley soup....it's just OK for me...it will do in a pinch.Progresso makes 1 gluten free soup, but it is very hard to find....Progresso Vegetable Classics Garden Vegetable is gluten-free. I purchase it at my local Safeway only when it is on sale. This gluten-free soup is not the same as Progresso's Vegetable Classic Vegetable...
  10. I use Earth Balance for baking and eating....I'm allergic to gluten, soy, dairy and this is the best substitute for me. I also like coconut oil on my veggies and have adapted quite well to the flavor.
  11. While browsing today I discovered a wonderful website that has tons of allergy friendly cost cutting recipes. I'm gluten, soy, lactose, intolerant and have been purchasing So Delicious coconut milk and both my husband and I have been drinking it quite often. A few days ago I gagged at the price of about $5.49 a half gallon and decided that was the last time...
  12. King Arthur Chocolate cake is my #1 favorite. Betty Crocker mix has soy in it, and I'm allergic to soy. When BC first came out with their chocolate cake mix, it did not contain soy and I made some very delicious cupcakes. Several years ago they switched to soy, so I tried KA and it is now the one I serve for gluten eating company. No one can tell the difference...
  13. I have also previously ordered from Jules....and am ashamed to say that I have not tried cooking with this product yet.....I'm still gorging out on Easter "Peeps" which were 70% off after the holiday.I've never had a weight problem, so have not been concerned all these years about my sugar intake, but think from now on will cut back. I used to prefer to cook...
  14. I also save up my bread pieces and use a $12 coffee grinder to grind mine if I have only a small amount to do. For a large amount.....usually a failed loaf of bread.....I use my blender. I don't use any particular speed on the blender, I just keep pushing buttons until the crumbs are fine enough. Blenders run about $24. Have you checked the price on ready...
  15. I also serve gluten free goodies to company....that is my way of knowing if something is "good enough". Betty Crocker makes a great product. I made King Arthur blueberry cupcakes that were out of this world.
  16. I have never tasted the shortening in the frosting, but......I did have one Spectrum failure and had to dump the whole thing out....the shortening was old and did not incorporate with the other ingredients....it looked like curdled milk. Spectrum now makes a butter flavor shortening, and I have it but have not tried it...I've only seen it in one store...
  17. SEVEN MINUTE BOILED FROSTING makes a large amount, good for whoopie pies, hot chocolate topping, makes enough to frost 24 cupcakes or one 2 layer cake. This is the consistency of marshmallow fluff 1 1/4 cups granulated sugar 1/4 teaspoon cream of tartar pinch of salt 1/4 cup cold water 2 egg whites, room temperature 1 teaspoon pure vanilla extract...
  18. BASIC BUTTERCREAM FROSTING 2 cups confectioner's sugar 1/4 cup softened Spectrum shortening small amount of water or milk substitute flavoring of choice, clear vanilla, peppermint, coconut, etc. Beat all with hand mixer on low speed until mixed, then beat on medium speed until creamy and smooth. If needed, add more confectioner's sugar to desired...
  19. I also use a buttercream recipe....I use Spectrum shortening and coconut milk or Vance's Dairy Free. I find I sometimes have to use more confectioner's sugar than recommended to make it thick enough to spread properly. I also use a 7 minute boiled frosting recipe that results in a frosting similar to marshmallow fluff....too ooey and gooey to bring to school...
  20. I believe Whole Foods rice milk is safe to drink. Rice Dream in the past used barley in the process...a small amount, I'm sure, but enough to make me sick when drinking it on a regular basis. Companies are allowed to have a small amount of gluten in their product, without having to declare it on the label. I switched to coconut milk, and Vance's Dari free...
  21. I had stopped purchasing Udi's because of the tunnels, some of which were large enough for a mouse...and the price and small size of the package. I have switched to Rudi's 18 ounce loaf at a more reasonable price. I will try Genius if I ever come across it....I saw it advertised in Living Without magazine. Some Safeway stores now carry Rudi's, along with...
  22. That's quite interesting....maybe some were from a different batch? Maybe some whole grain ones got mixed up with non-whole grain?
  23. I haven't purchased Udi's Hamburger buns for the past year because I found them unpalatable and not like what they used to be when they first started selling them. I also noticed they were not being sold in the stores where I used to buy them, and when I inquired I found myself being steered to other brands, which were't up to par either. I have been staying...
  24. I no longer cook pot roasts....one of my favorite meals.....if you are lucky to live in an area where there is a Costco store, check it out for a pre-cooked pot roast in the refrigerated section....open shelves, not the large freezer cases. It is soy, gluten, dairy free, and the best pot roast my husband and I have ever eaten. I will be shopping for one on...
  25. My favorite books have been written by Bette Hagman, Carol Fenster, and Annalise Roberts.
