Regular or allergy/gluten free cookbooks? I have about 18 cookbooks dealing with allergy free cooking recipes since I learned I was allergic to wheat, dairy, soy, nuts, sesame. Many were purchased used on-line, and your local library may have specialty cookbooks available. When I first had to go gluten free, the local library had a copy of Bette Hageman's cookbook...

ARCHIVED Bread Machine Question
Ginsou replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
For those pizza lovers out there, you may want to consider using a Presto Pizzazz maker....it cooks both the top and bottom of the pizza at the same time. I cooked a gluten free pizza on it a few months ago, and it came out perfectly....much better than the ones I was using my oven for. It's a bit pricey at $39, but if mine ever stops working, I won't hesitate... -
I'm one mile from a Kroger, and they do not carry this product here, so I did not mind ordering it via mail. I'm sure I could order it from Kroger, as they are carrying more and more products, but we will be leaving the area soon. A few days ago I wiped out their shelf supply of Pamela's Cornbread and Muffin mix....I now have enough to get me thru the coming...

I just ordered King Arthur gluten free whole grain flour mix for bread. I'm presently located at an altitude of 7500 ft. and am anxious to try King Arthur. I've had fabulous luck with King Arthur, and yesterday made blueberry muffins with their muffin mix, and they were excellent.I'll make a smaller than normal bread loaf, and do a few hamburg buns.Hate to...

Every person on this forum is still looking for the perfect bread and bun recipe....I still choke down the store bought gluten free buns....have found that grilling them helps a bit...I use a cast iron pan to do mine. I also have discovered that using both heel ends of gluten free bread as a "bun" has worked out well....grilled, with a bison burger,tomato...

ARCHIVED Bread Machine Question
Ginsou replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Gosh, Marc, was waiting with baited breath to see how your cooking experimentation turned out! Sounds like KitchenAid is a good company that stands behind their product. I have the Cuisinart SM-55 that you had inquired about, but did not see your post until after you sent for the KA. I purchased the Cuisinart because the wattage was higher than the KA... -
ARCHIVED Bread Machine Question
Ginsou replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
Udi's gluten containing bread is sold fresh....their gluten free bread is sold frozen because it only has a shelf life of 3 days. Where does she purchase her bread? I've been in the Denver area for over 2 months, and have never seen gluten free Udi's sold fresh, unless they sell it right in downtown Denver at their bakery, if that is where the bakery is located... -
ARCHIVED Bread Machine Question
Ginsou replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
I have not yet tried the hamburg roll recipe from the MaidinAlaska website yet. I have been using Mike Eberhart's Brown Honey Bread recipe from his book and website. He has 14 bread recipes....including multi-grain and pumpernickel. His recipes have many ingredients, are very precise, and this is the recipe I have been using over the past few years. Make... -
ARCHIVED Bread Machine Question
Ginsou replied to Marc49's topic in Gluten-Free Recipes & Cooking Tips
That French Bread recipe has received quite a few raves.....I was going to order a special pan over the internet, and a few days ago went into a thrift store and found a brand new one for a few dollars. I'm presently traveling in a motorhome and only have a micro/convection oven and will have to wait until I get home to try out the recipe. Re: hamburger... -
ARCHIVED Rudi's Gluten Free Multigrain Bread
Ginsou replied to Ginsou's topic in Gluten-Free Recipes & Cooking Tips
I recently took out the Costco membership only because one opened up near where I live in Arizona....I also belong to Sam's, and the membership cost is split between my sister and I. I also love Rudi's Cinnamon bread, and Costco only sells the multigrain, which I also prefer. I found the Rudi's bread near the bread/cakes/pastry area in an open freezer case... -
ARCHIVED Rudi's Gluten Free Multigrain Bread
Ginsou posted a topic in Gluten-Free Recipes & Cooking Tips
Today while browsing at Costco in Colorado Springs, CO I came across Rudi's Gluten Free Multigrain bread, 2- 18 oz. loaves for $6.99. You have to buy a package of two. I have found this bread a much better buy over another popular brand, and now have made this my bread of choice for store purchased gluten free bread. I do not know if it is carried at other... -
I'm dairy, wheat, soy intolerant so there are some commercial mixes that I cannot use. I have used King Arthur's with great success...I love their chocolate cake mix, and have also made a loaf of bread that rose very high. Yesterday I made chocolate chip cookies and they came out pretty good. I like my cookies a bit "puffy", so next time will add a bit of gluten...

Spectrum shortening is soy/dairy/gluten free.....comes in a 24 ounce blue container...they also have a new butter flavored shortening, which I haven't tried yet. The product is 100% palm oil. I have purchased it mainly in natural food stores, and some supermarkets sell it. The supermarkets sell it in the special diet/gluten free section, if there is one....

Ten thumbs up for Earth Balance...soy,dairy,gluten free, in the red and yellow container. It costs about $4.49 for a 15 oz. container. I use it all the time for baking and on vegetables. Before this product became available, I used coconut oil on veggies, and still do from time to time, especially on corn on the cob. I don't miss margarine at all.

ARCHIVED Best Stand Mixer?
Ginsou replied to MichaelJacksons#1Fan's topic in Gluten-Free Recipes & Cooking Tips
You may also consider purchasing a Cuisinart heavy duty stand mixer. I had a 20% off coupon for Bed and Bath and went in fully expecting to purchase a Kitchen Aid, and instead purchased the Cuisinart because it was the same price as KA, but it had slightly more wattage and the bowl had 2 handles on it vs. 1 handle on the KA. My husband paid for it, bless... -

I'm not sure which model Z machine you have purchased...I have the Model BBCC-X20 and on page 12 there is a recipe for gluten-free brown rice bread. It also says to call customer service at 800-733-6270 for more gluten free recipes or visit their website: www.zojirushi.com. Annalise Roberts has a book titled Gluten-Free Baking Classics for the Bread Machine... -
ARCHIVED Baking Cookies Specifically Chocolate Chip
Ginsou replied to Marlie's topic in Gluten-Free Recipes & Cooking Tips
I've tried several Chocolate Chip cookie recipes, and until now, the one that worked best for me has been Annalise Roberts' recipe.I found I had to add 1/2 to 3/4 of a cup of extra brown rice flour to make it work for me. A few weeks ago, I tried the 36 hour cookie recipe, suggested by Melinda Lee, and that is now my favorite. No alterations were needed... -

ARCHIVED Pie Crust Help! 911!
Ginsou replied to hunter6009's topic in Gluten-Free Recipes & Cooking Tips
Most of the gluten free pie crust recipes say to chill the dough for an hour or so. Today I was reading Elizabeth Barbone's cookbook and she confirms what I have suspected in my 3 years of gluten free pie crust making: "If you try to roll cold piecrust it will break apart.Take it out of the refrigerator 15 minutes before you plan to roll it out". Hooray for... -
ARCHIVED Pie Crust Help! 911!
Ginsou replied to hunter6009's topic in Gluten-Free Recipes & Cooking Tips
Until you find the perfect store bought mix, I would recommend Bette Hagman's recipe. I also had bad luck with Gluten Free Pantry Pie mix. When I used Bette Hagman's recipe and made an apple pie, my neighbors did not know the difference. It does take some time to make, tho. 1 cup white rice flour 3/4 cup tapioca flour 3/4 cup cornstarch 1 rounded teaspoon... -
ARCHIVED Need Help Finding A gluten-free Milk Substitute

Yep....Rice Dream bothers me also....I sometimes buy So Delicious shelf stable Coconut Milk, but because I have so many food allergies, I find Vance's DariFree to be more economical for me in the long run. I order Vance's online, and it lasts me for a long, long time. I especially like to have hot cocoa during the winter months. Better Than Milk rice beverage... -

I recently learned of a soy, dairy, gluten free cheese substitute and purchased it at my local natural food store....it is the answer to my prayers....I'm gluten, dairy, soy intolerant and have really been missing pizzas. I read good reviews on this product and when I made myself a pizza, my husband tasted it and my cheese tasted better than his real cheese.... -
ARCHIVED Saltines Or Another Substitute?
Ginsou replied to tea-and-crumpets's topic in Gluten-Free Foods, Products, Shopping & Medications
Until recently I have used Glutino, and saw some Dr. Schar crackers and purchased them. They were excellent....the closest to Saltines that you will find in my opinion.
