ARCHIVED Finally Found gluten-free Bisquick
Ginsou replied to TrillumHunter's topic in Gluten-Free Recipes & Cooking Tips
I'm allergic to gluten, soy, and milk. I have tried the Bisquick mix for waffles, and even my husband raves about the waffles. He prefers them to Krusteaz. I've had no digestive problems with this product....and the soy warning scared me also. Waverunner has posted a Bisquick "mix it yourself" recipe, and as of yet I have not tried it. I've been traveling... -
ARCHIVED Hot Cocoa, Cocoa Powder Question
Ginsou replied to GFreeMO's topic in Gluten-Free Recipes & Cooking Tips
I've had no problems with Hershey's cocoa. I'm allergic to milk, and use Vance's powder with no issues. -
Really, Really Foul Breath Post-glutening?
Ginsou replied to Kyalesyin's topic in Parents, Friends and Loved Ones of Celiacs
My husband has had foul breath for years, and it is not a dental problem. I do not have diabetes, but I know the odor of a diabetic, and this is not the same as a diabetic.....it is a very foul, rotting corpse type odor...it comes and goes, and interestingly enough, his adult son has the same problem. One product that seems to help immensely, is a product... -
ARCHIVED Anyone Familiar With This Book....?
Ginsou replied to Monklady123's topic in Gluten-Free Recipes & Cooking Tips
Let us know how the bread comes out. I have had several store bought mixes that taste quite good (Betty Crocker,Bisquick) and they have very few ingredients. I'm lactose intolerant, so the buttermilk for me would be Vance's or Rice Milk with some vinegar added to it. Still looking to come close to Udi's as possible. I just purchased Schar hamburg rolls, and... -
ARCHIVED Store-Bought Bread?
Ginsou replied to Superfudge's topic in Gluten-Free Recipes & Cooking Tips
I agree with you 100%...I thought perhaps I was the only one who noticed the "change" in Udi's bread. I started buying it 2 years ago in the Denver area, and the past year, since they have gone nationwide, it is not as soft and some loaves I have purchased seem a bit stale, even tho the bread was purchased frozen and had a 6 month frozen shelf life date on... -
I keep mine in a canning jar with a screw top lid in a cool dark place....have never had them go bad. I also save the crumbs from Rice Chex cereal and add them to the bread crumbs.

ARCHIVED Trouble With Kinnikinnick Donuts
Ginsou replied to finally diagnosed's topic in Gluten-Free Recipes & Cooking Tips
I've had no problem with Kinnikinnick donuts. I prefer the sugar coated ones to the glazed, simply a matter of taste. I have noticed that when I have more than a few Tablespoons of 100% real maple syrup on pancakes or waffles, I feel slightly sick to my stomach. I've always been that way. You never know what might be bothering you. I'm on the way to the store... -
ARCHIVED Store-Bought Bread?
Ginsou replied to Superfudge's topic in Gluten-Free Recipes & Cooking Tips
I agree on Udi's!! I'm presently just outside the Denver area and have loaded the freezer with as much Udi's that will fit, because we are leaving tomorrow traveling toward the East coast. It can be ordered online, but there is a shipping charge which can be avoided if you are able to find it being sold at a nearby natural food store. They just started selling... -
I also had joint pain constantly, among other symptoms before I was able to have more tests done...on my own without insurance. I've been lactose intolerant for 30 years, and the past few years have also found out I also am milk intolerant, soy intolerant, gluten intolerant, and am allergic to chicken, nuts and sesame! I still eat chicken, tho, because I only...

ARCHIVED Need To Keep My Rice/potato/xanthan, Etc., In Fridge?
Ginsou replied to TrickyMama's topic in Gluten-Free Recipes & Cooking Tips
Ditto. I purchased 3 boxes of the Bisquick mix to tide me over until I can try halfrunner's mix. I made waffles and they were excellent. I froze some and they were excellent 2 days later....soft when thawed out! My husband has been using Krusteaz for his waffles, and he ate some of mine, and now he has decided he wants the wheat free ones from now on! I have... -
ARCHIVED gluten-free Hamburger Buns?
Ginsou replied to sayccrn's topic in Gluten-Free Recipes & Cooking Tips
I make sure I go straight home after eating elsewhere. I'm soy, dairy, wheat intolerant...severely. My dear daughter-in-law made mashed potatoes for a meal, used rice milk, but apparently used butter or margarine. The steaks were marinated in soy sauce, so my husband went out to get separate steaks for us.She never knew I got sick, and she will never know.... -
ARCHIVED Distilled Vinegar Question
Ginsou replied to Mizzo's topic in Gluten-Free Foods, Products, Shopping & Medications
I've never had a problem with distilled vinegar...I believe WalMart brand vinegar says gluten free on the container. There's some very old information out there.... I was in a natural food store a while ago and a professional nutritionist of 30 years saw me buying white rice flour, and gave me an 6 minute lecture on the nutritional advantages of brown... -
ARCHIVED Need To Keep My Rice/potato/xanthan, Etc., In Fridge?
Ginsou replied to TrickyMama's topic in Gluten-Free Recipes & Cooking Tips
I travel in a motorhome part of the year, and when on the road I store most flours in a 2nd small refrigerator, with the exception of white rice flour and xantham/guar gum. The rice flour and xanthan gum are kept in air tight glass containers under the sink cupboards. They are just fine, and I think some of the gum is about 2 years old. When we get home... -
ARCHIVED gluten-free Hamburger Buns?
Ginsou replied to sayccrn's topic in Gluten-Free Recipes & Cooking Tips
Even better, but a bit more expensive are Wilton Excelle Elite 4" x 1 3/4" Springform pans. I used to purchase them one at a time at Michael's Crafts and used a 40% off coupon a few years ago....haven't seen them lately, but they can be ordered online ...google them. -
ARCHIVED gluten-free Hamburger Buns?
Ginsou replied to sayccrn's topic in Gluten-Free Recipes & Cooking Tips
LaChoy brand sliced water chestnuts also has a can that will substitute as a ring. The cans only measure 3 1/4" across....some people might prefer a 4" bun, tho, so this size may be too small. Great for sliders. -
ARCHIVED gluten-free Hamburger Buns?
Ginsou replied to sayccrn's topic in Gluten-Free Recipes & Cooking Tips
I purchased a muffin top pan at Bed Bath and Beyond, but all stores may not carry them. English muffin rings are also sold at Bed Bath and Beyond, saw some a few weeks ago, but the store was in Colorado Springs, CO. Check your supermarket Asian food area for Dynasty brand Sliced Bamboo Shoots or another brand. They use the old style can that can be cut... -
ARCHIVED gluten-free Hamburger Buns?
Ginsou replied to sayccrn's topic in Gluten-Free Recipes & Cooking Tips
I also love Kinnicknick, and have found the best way to have a great (bison) burger is to grill the bun on a cast iron pan. I find that the buns are too hefty for my small mouth, so I cut out the middle portion of the bun, dry it out, and grind it up in my coffee grinder for bread crumbs. All my baking bread/bun failures are ground into crumbs, which I use... -
Whole foods sells dough enhancer....I almost purchased some the other day but decided not to. Am glad to hear cider vinegar can be used instead...easier on the budget. Tapioca flour and tapioca starch are both the same. It is potato starch and potato flour that are not the same. Am curious as to where the recipe you are talking about originated....perhaps...

ARCHIVED Any Gluten-Free Bisquick Mix Sightings?
Ginsou replied to MindytheOrganist's topic in Gluten-Free Recipes & Cooking Tips
I found gluten free Bisquick and King Arthur gluten free multi-purpose flour at King Sooper (Kroger) in Monument, CO. A bit pricy, but I want to try both products, and did not want to pay shipping for King Arthur. Would like to try Bisquick strawberry shortcakes first....will save the bread mix for when I get to a lower altitude. -
ARCHIVED Umm, I Made The Betty Crocker gluten-free Choc Chip Cookies...
Ginsou replied to lischro's topic in Gluten-Free Recipes & Cooking Tips
I can't use BC cookie mix because of dairy and soy intolerances, but would choose the Spectrum shortening or Earth Balance. I find the Spectrum or Earth Balance works best. Room temperature, not melted! -
ARCHIVED Homemade Mayo Recipe
Ginsou replied to vbecton's topic in Gluten-Free Recipes & Cooking Tips
West of the rockies, Hellman's is known as Best Foods, and they also have a canola mayonnaise with no dairy or soy. Spectrum Canola mayonnaise is also dairy and soy free, but a bit more expensive. Check the ingredient label, because different varieties are made. I've made mayonnaise from scratch, and it tastes just like the real thing when made with canola... -
ARCHIVED Turn On The Today Show Right Now!
Ginsou replied to GlutenFreeManna's topic in Gluten-Free Recipes & Cooking Tips
Google Living Without Red Velvet Cake for a recipe. Make cupcakes instead of cake. Also, www.glutenfreecookingschool.com/archives/gluten-free-red-velvet-cake/ has a recipe using brown rice flour, sorghum, and tapioca flour. -

ARCHIVED King Arthur gluten-free Brownies
Ginsou replied to summerteeth's topic in Gluten-Free Recipes & Cooking Tips
Monica, does KA brownie mix have any soy or wheat in it? I love the Betty Crocker yellow and chocolate cake mix for cupcakes, but cannot use their cookie or brownie mix because I am dairy and soy intolerant also. -
ARCHIVED Udi's Cinnamon Rolls
Ginsou replied to Ginsou's topic in Gluten-Free Recipes & Cooking Tips
Here's the reply from Udi's: You can leave the rolls at room temperature or refreeze/refrigerate if you are not able to consume it within 5-7 days. Here is the recommended shelf life for our products: At room temperature, 5-7 days In refrigerator, 21 days ( the refrigerator will prolong the life of the product, but it...
