  1. Well, I found out today that mine really didn't know what gluten was so first maybe a definition is in order. It may be a big deal letting him know he really isn't missing out on anything "manly". Then point out the regular foods he likes that do not contain gluten.

  3. I know we have fed fish lettuce and spinach before. One of our big ones at bananas and cheese (Ok, probably getting as bad at wheat). There is also peas (soft cooked), cucumbers, zucchini. Then you have the brine shrimp. What are the ingredients on the tubed worms? I know they have worms but is there any wheat in there too??

  8. I read about it somewhere just this morning. You pour off the separated watery part and whip the creamy part. Make sure it is cold (fridge overnight).

  10. I read somewhere to let your gluten-free flours sit a while with the liquid ingredients before baking. Somehow they need to soak up moisture so they don't turn into door stops.

  12. Not necessarily, there was an article not too long ago about a study done with true, old-fashioned sourdough and celiacs/gluten sensitive. According to the article the enzymes in the starter would predigest the gluten (sounds gross) making it tolerable. I believe they did villi testing too in addition to just "feel good" results.   13. We quit traveling. Our safety comes first. I don't let my kids get in a car with a drunk driver. Why should I let them sit at a table with a careless cook?? I cook a full blown Thanksgiving. If they want to drive here they are welcome but don't expect us to travel.
  14. I keep liquid acidophilus on hand. When I feed my pet or portion out for a project, I add a tiny bit of the acidophilus. I don't measure but would say it is about a Tablespoon for my pet and a teaspoon for a project.

  16. Milk free is way easier for me I think because the sub are more 1:1 and tastier. I use pretty much all the basic recipes. Like juliem, I use lots of olive oil instead of butter for sauteeing and such. Sweet potatoes are baked then sliced. I cook them briefly with orange juice and spices.   17. Double check with homeschool legal (great info there too) but I believe most do recognize homeschool diplomas now.
  18. I was in a School of Tomorrow school from 6-12 grade. It was a good education. IMO it would be good in your situation. Something else to look into is Switched on Schoolhouse (SOS). It is computer based but not online. It is similar to School of Tomorrow in its setup. I like it because it because the computer does the grading, record keeping, etc....
  19. It was suggested to us that we try a gluten trial with the whole family instead of just the one suspected member. We saw changes in the WHOLE family.
  20. We often associate milk sensitivity with tummy/intestine problems. Some people also experience muscle weakness and other non obvious symptoms. We see it a lot with kids and bed wetting. With adults it is more subtle because they are more "in control" even through weakness -- a drop here and there, with certain movements, with a sneeze...

  24. This year I am crushing EnerG pretzels. In the past I have tried gluten-free bread and another time potato chips. I chop onions and hide in with the beans (gotta get it past the kids) so you get the flavor. IMO the saltier tasting things work better.
  25. I make my own green bean casserole. This year I am crushing the EnerG pretzels for the topping. I use real onions in with the green beans so you still get that flavor. I make my own mushroom soup with CF butter or oil (depends upon my mood), soy milk, thickener (Bob's baking mix or a starch of some kind).
