  1. Hey Terri: Well, I guess I'm an exception to the theory that menopausal difficulties are caused by dairy/soy/grains producing too much estrogen. Menopause was a nonevent for me. But then I didn't have excess natural estrogen producing/retaining body fat at that time. I wasn't underweight, but at the low end of normal. However, I read just...
  2. Terri: Thanks for that website www.dogterj.com. He wrote soooo much about the three ingredients that zap me (gluten, dairy and soy). I understand much better how I will probably never be able to consume any of those without bad reactions. I kept reading posts about how intolerances other than gluten would disappear after my intestines healed. After reading...
  3. According to my Enterolab test results I don't tolerate dairy or gluten. However, when I tried to substitute soy products for dairy items, I experienced the same symptoms as I had with dairy. So I'm gluten, dairy and soy intolerant. I also limit my consumption of spicey foods or acidic foods like tomatoes, acidic berries, citrus fruit, wine and caffeine...
  4. You should read Ron Hoggan's book "Dangerous Grains" wherein he explains how gluten digests leak from the gut, travel to the brain and stimulate opiate receptors just like morphine so gluten peptide molecules become 'opiate peptides'. He describes how people may feel 'addicted' to gluten. Also see articles on his website at Open Original Shared Link about...
  5. I think celiac disease is a gastrointestinal disease affecting the whole body with psychological ramifications. Long undiagnosed, even painful symptoms can make anybody confused, desperate, anxious and depressed. I believe lack of knowledge by medical 'experts', years of misdiagnoses from doctors who discount celiac disease symptoms, and needless suffering...
  6. I'll be interested in seeing results of this poll. Before I learned I had celiac disease, I created a website for people who have struggled with 'disordered eating' (ED habits which I don't consider a 'disease') and are now committed to recovery. So I moderate that website for almost 40 members. Since I've corresponded with other celiacs and posted...
  7. Hey Rachel: Check out www.enterolab.com which describes various tests, prices and maybe test accuracy. I haven't read their website information in awhile, but I did their tests in June about 2 months after going gluten-free. WARNING: I'm very PRO Enterolabs. I was suffering sooooo much pain when I first suspected I had celiac disease and was so relieved...
  8. Mariann: OOOPPSS! Sorry, I got it backwards. The mozzarella variety of chreese IS casein/soy free but NOT GLUTEN free. If you want to see the ingredients of all the cheese mix varieties, just look under the Road's End Organics' website (www.chreese.com) chreese mix or bulk categories. There are 'ingredients' buttons under each of the cheese powder mix...
  9. Mariann: I suggested the 'Chreese' brand of cheese substitute for people (like me) who can't have gluten, dairy (esp. casein) OR SOY. There are lotsa soy based cheeses, but Chreese (pitiful as it may be ) is the only gluten/casein/soy free cheese tasting anything I have found. BTW the mozzarella flavor is not casein/soy free. 10. I also got continually zapped by Sensodyne (recommended by my dentist for enamel erosion sensitivity probably influenced by celiac disease) while I was trying to avoid all gluten for several months. I had used Sensodyne for many years previously. I think both Colgate and Crest both have gluten-free varieties, but I couldn't find a combo whitener and sensitive...
  11. Terri: Do you or members of your family have any diabetes history? According to Ron Hoggan's "Dangerous Grains" book, gluten, casein and soy are diabetogenic foods. He speculates that consumption of those 3 ingredients has influenced the epidemic of diabetes during the past several decades. My father, his mother, grandmother and greatgrandmother all...
  12. For those of you who must abstain from casein and soy as well as dairy (like me) check out www.chreese.com. They have several 'chreese' (gluten-free/CF/SF cheese substitutes) in cheese mix packets, mac & cheese mixes and nacho cheese dips. They also have a retail outlet locator on their site. So I learned my local Whole Foods, QFC and PCC (Seattle...
  13. Tiffany: My Enterolab test results interpretation said I'm 'immunologically sensitive to foods containing cow's milk', so I avoid lactose, whey, casein and any other dairy proteins. I get really BAD cramping pains, excessive sinus mucous, bloating, acid reflux and constipation from any amount of dairy, so I won't try anything with dairy ingredients. Soy...
  14. Hey Tiffany: I've been casein free for 2 months now (gluten-free over 4 months) since receiving my Enterolab test results and soy free for over a month (after experiencing similar symptoms when I tried to substitute soy for dairy products). Learning to cook without dairy or soy is challenging, but definitely doable. My gluten/casein/soy symptoms are...
  15. We raise vegies, berries and grapes on our tiny city lot, so I freeze most of our harvest. This year we made several batches of our own raspberry jam, and froze strawberries, green beans, tomatoes and yellow crookneck squash. We ate soooo many fresh lettuce, carrot, spinach, and tomato salads from our garden all summer that I look forward to cooler weather...

    ARCHIVED Thirst

Hey Lib: The flushing out theory sounds good to me ... even if I never get diarrhea. I find that drinking lots of warm water really helps with my cramping pains as well as helping resolve my inevitable constipation from gluten/dairy/soy slips. BURDEE
  17. Hey Bill: I know about that craziness. I can't tolerate soy either--it gives me the same cramping/bloating as dairy does. Rice and almond milks are so low fat/low protein, it seems pointless to put them on high carb cereal. So I went from dairy all day long--cereal and milk, butter on anything, cheese sandwiches, cheese on salads and casseroles and...
  18. My celiac symptoms have always been bloating, cramping pain, excessive gas AND constipation. Before I learned I had celiac disease I tried FiberCon (which stopped me up even more ), laxatives (which caused more excruciating pains due to sorbitol ), wheat bran (recommended for IBS with constipation and obviously counterproductive ) and magnesium supplements...
  19. That's why they call it a medical 'practice'. They are all still practicing and WE are their guinea pigs. Maybe someday they will get it right. Sometimes practice makes perfect. But I'm not so sure with some doctors who are working with outdated celiac 'profiles' and other celiac myths and misinformation. Fortunately we know our own bodies better...
  20. Kathleen: There are MANY gluten free bakeries/retailers which produce a WIDE variety of great gluten free breads, muffins, bagels, cookies, cakes, pastas, etc. So you don't have to bake your own bread, unless you really enjoy that. I personally like Food for Life breads and almost anything from Ener-G Foods which is my local Seattle-based gluten-free bakery...

    ARCHIVED Thirst

I'm also thirsty all the time. Yes, I've been tested regularly for diabetes, which runs in my family. I also have the constipation, bloating, gas, fatigue stuff as celiac symptoms and have had anemia previously. I may have borderline anemia now, since I get cold easily, have TERRIBLE fingernails (brittle, vertical ridges, thin and easily chipped) and often...
  22. THANKS, celiac3270, for posting all that. I have been posting here for a while and (sheepishly) admit I have NEVER read the board rules and guidelines. Thanks for making those VERY visable in your post. I hope I haven't broken too many of those rules. But, since I haven't received any warnings, I guess I'm doing okay. But thanks, anyway, for the...
  23. Hi Redkms: If you're worried about weight gain, as long as you're gluten-free, don't focus on the calories or fat grams, but focus on how you eat and whether you choose foods which actually satisfy your hunger or just make you hungrier. Is your 'hunger' true physiological hunger or are you eating to cope with stress, boredom, sadness, loneliness or frustration...
  24. Hey Bill: No problem ... it is a strange nickname/login name. Blame my husband. Have you tried eliminating dairy as well as gluten? That reduced my constant sinus mucous (post nasal drip and allergic sinus reactions) to almost zip! Still have occasional mucous from the other end, when I have any kind of cramping intestinal twinges, most likely...
  25. Racheleona: Back to your original question about amenorrhea and infertility ... When I was 17 I had a long stretch of almost a year, when my periods disappeared for no apparent reason (after 6 years of regular cycles). It returned on the day of my appt. with an ob/gyn to figure out what happened. His guess was I 'had a lazy pituitary gland' (how's that...
