My Enterolab test results (back in 7/04) indicated that I "have a copy of one of the main genes that predisposes to gluten sensitivity and celiac sprue, HLA-DQ3, subtype 8 (HLA-DQ8). This genotype also can predispose to microscopic colitis and other autoimmune syndromes". BURDEE -
I really don't miss many gluten containing products, since I LOVE most gluten free substitute foods. HOWEVER, I must also avoid dairy and soy. If I could tolerate soy, I could have soy milk, icecream, margarine, yogurt and even dairy free chocolate bars. Can anybody make me a gluten/dairy/soy free fudge? I agree about using digestive enzymes and probiotics. However, watch out for malt diastase (barley source) in enzymes. I agree that gluten intolerance symptoms mask other intolerances. Since too much magnesium can cause diarrhea, that's precisely why it's used in 'Milk of Magnesia'. However that same magnesium is available with a good magnesium supplement. I would highly recommend the Enterolab stool tests which also tests milk sensitivity (casein antibodies) even AFTER you have gone gluten-free for several months. From what I understand, blood tests can only detect gluten antibodies which have LEAKED from the small intestines into the blood stream. So those tests require that you've been sick with celiac... -
It's easier to carry little chewable lactaid pills than milk or butter to someone's place, out of town, etc. They do help prevent lactose intolerance reactions. However casein/soy intolerance is another story ... I sure miss ice cream, cheese and butter. BURDEE
