  1. I just wanted to pass on what the dietician at the support group I visited last night said regarding oatmeal. Take it for what it's worth, it may or may be true for you. She said that even with gluten-free oats, most celiacs can only tolerate between 1/4 to 1/2 cup at a time because of the protein found in oats. That while it is safe, it's still hard...
  2. They're based out of Asheville, NC and have maybe a dozen or so stores. They have a great gluten free selection also. I had an issue with them though, and have refused to buy gluten-free baked goods since then from then. They had very confusing signage pertaining to a carrot cake, and it took me FOREVER to get a response from them. But that's just me...
  3. Patti, that just cracked me up. I really needed the laugh!!! I went to a support group for the first time ever, and had to listen to this man who made biscuits, took them to bojangles and TOOK THE HAM OFF THE BISCUIT AND PUT IT ON HIS gluten-free BISCUIT!!!!!!!!HE washed it off though.... I shudder to even think what would happen if I did something...
  4. That's kind of what I did. Somewhere around the end of Nov I realized that I just cannot trust anyone but my husband or my mom to cook for me. That just because a product says gluten-free on it, doesn't make it safe. And just because a food is naturally gluten free, doesn't make it safe in a restaurant. In some ways, I am glad that I am sensitive, although...
  5. I had a reaction to it too. It's not hard to avoid since I'm not a big oatmeal fan, but I liked to put it in stuff.
  6. I can't stand to be sick. Simply put. Eating gluten knocks me down for a week or so, and that's enough incentive for me to run far, far away from it. I also have a really strong support system. Perhaps your husband doesn't fully understand the implications of your continuing to eat gluten. If he wants to have you around, and your daughter wants to have...
  7. Truly mind-boggling. Blows my mind. And what's even more mind-boggling is the people who think it's really not that serious.
  8. Sweetfudge, I just wanted to give you a big ole high five!!! I remember some of your posts regarding weight and I'm so happy that you hit and went over your goal!
  9. That is probably the most frustrating this for me. I know that I just don't feel right. They have tested me for all sorts of things, and everything comes back within range. Although when they tested me for vitamin D it came back "low normal" so she suggested I take a supplement. At least she doesn't think I'm crazy. The irony is that for me, when I...
  10. Thanks for posting, Laura. That was fascinating! I copied/pasted it to my documents to share with others. It was really informative.
  11. I wonder if being a super sensitive celiac makes you more susceptible to other food sensitivities? On a side note, my GI told me that with something like celiac that causes such damage to your gut, the chance of being completely normal afterwards is slim to none. He told me is was "damaged". LOL Sometimes I wonder too about genetics, and if certain...
  12. Thanks for recreating the thread Patti From what I remember of my post in the first thread: I know that as time as gone by, I've gotten more sensitive. When I first went gluten-free, I was so thankful that I wasn't like so many here who are sensitive and have other intolerances... HAHAHA the jokes on me! I think I finally had to accept...
  13. I am SOO glad you are getting a second opinion! I would definitely take the list. That way you don't forget anything. Be sure to tell the doc that your sister had/has a problem with gluten, as celiac is hereditary. (Sounds like she still has a problem w/gluten) I've had experiences with two GI docs. The first gave me a lot of time, and let me talk,...
  14. Have you been tested for any food allergies? I have a friend who is allergic to egg whites. (I am too, which is how we got on the topic) Her symptom was joint pain. Sounds random, but allergic reactions create inflammation... inflammation does bad things. It may be worth looking into.
  15. When I found out my genetic risk and my doctor gave me a clinical diagnosis, my mom and my son both got tested. (Although my mom told me a bit later after she did it) But I KNOW that genetically my son is at risk for it, so I had him screened. Dr Green's book recommends that if someone in the family is diagnosed, then everyone in the immediate family should...
  16. My mom just got remarried and we had a big bash for her about two weeks ago. We had it catered. The caterer was great, when we picked the food, I kind of knew what would be gluten-free and not. A good catering company makes most things from scratch anyway, so talk to a few and tell them your concerns. They made everything onsite, but we rented a big hall...
  17. I'm glad this is coming to the attention of more people. In the city I grew up in, a large percentage of the kids I went to school with had brown teeth where the flouride in the water had actually discolored and eroded their teeth enamel. It was awful...
  18. Just because you cut gluten out of your diet doesn't mean that you can't make the gluten free counterpart of cupcakes, cakes, cookies, etc. I lost weight initially because I didn't eat any gluten-free subsitutes. Then I started baking and found gluten free beer, etc. And gained a few pounds back. The gluten-free diet, is, by nature, healthier. And I'm...
  19. Blogger.com is incredible easy to use. You can also get into adsense (through google) if you want to try making a few extra bucks. You can also write reviews and get paid (you get more money the higher trafficked your blog is). Check out www.snapbomb.com or www.ihype.com For what it's worth, Karina (The gluten free goddess) uses blogger.com and she...
  20. There's a place nearby that opened about 6 months ago that is gluten free, peanut free and shellfish free. I'm assuming these are allergy/intolerances that the women's children have, but either way, it's been a huge benefit to me. I'm sure that you would need to look at the demographics and since it would be specialty, see if your area has enough...
  21. Here is an article that is a little more detailed about genetics and their role in celiac/gluten sensitivity. https://www.celiac.com/articles/21628/1/Cel...tics/Page1.html
  22. According to the results, your husband is reacting to gluten, while carrying the genetic marker DQ2,2 which puts him in an immediate risk. There are also diagnosed DQ1s here and DQ1 is becoming more and more associated with celiacs. The skinny and overeating part sound like celiac symptoms. Is he willing to do a trial? Or he can go to the doc and get a panel...
  23. Me too! It just sounds more like glutenease or something already out there. Just to serve as a precaution against contamination, not so much to actually make it edible for us. That was a very poorly written article.
  24. Purple- sorry, I was wrong. The recipe in Carol Fenster's big book does NOT have eggs. But it uses her blend and some potato starch. Perhaps it is simply the issue of the toaster oven versus the oven.
  25. I actually bought her crazy big book of 1,000 recipes. I can't remember where it's categorized. I'll double check the egg thing when I get home and make sure.
