I just wanted to pass on what the dietician at the support group I visited last night said regarding oatmeal. Take it for what it's worth, it may or may be true for you. She said that even with gluten-free oats, most celiacs can only tolerate between 1/4 to 1/2 cup at a time because of the protein found in oats. That while it is safe, it's still hard... -

They're based out of Asheville, NC and have maybe a dozen or so stores. They have a great gluten free selection also. I had an issue with them though, and have refused to buy gluten-free baked goods since then from then. They had very confusing signage pertaining to a carrot cake, and it took me FOREVER to get a response from them. But that's just me... -

Patti, that just cracked me up. I really needed the laugh!!! I went to a support group for the first time ever, and had to listen to this man who made biscuits, took them to bojangles and TOOK THE HAM OFF THE BISCUIT AND PUT IT ON HIS gluten-free BISCUIT!!!!!!!!HE washed it off though.... I shudder to even think what would happen if I did something... -

That's kind of what I did. Somewhere around the end of Nov I realized that I just cannot trust anyone but my husband or my mom to cook for me. That just because a product says gluten-free on it, doesn't make it safe. And just because a food is naturally gluten free, doesn't make it safe in a restaurant. I can't stand to be sick. Simply put. Eating gluten knocks me down for a week or so, and that's enough incentive for me to run far, far away from it. I also have a really strong support system. That is probably the most frustrating this for me. I know that I just don't feel right. They have tested me for all sorts of things, and everything comes back within range. I wonder if being a super sensitive celiac makes you more susceptible to other food sensitivities? On a side note, my GI told me that with something like celiac that causes such damage to your gut, the chance of being completely normal afterwards is slim to none. He told me is was "damaged". I am SOO glad you are getting a second opinion! I would definitely take the list. That way you don't forget anything. Have you been tested for any food allergies? I have a friend who is allergic to egg whites. (I am too, which is how we got on the topic) Her symptom was joint pain. Sounds random, but allergic reactions create inflammation... inflammation does bad things. It may be worth looking into. -

Just because you cut gluten out of your diet doesn't mean that you can't make the gluten free counterpart of cupcakes, cakes, cookies, etc. I lost weight initially because I didn't eat any gluten-free subsitutes. According to the results, your husband is reacting to gluten, while carrying the genetic marker DQ2,2 which puts him in an immediate risk. There are also diagnosed DQ1s here and DQ1 is becoming more and more associated with celiacs. The skinny and overeating part sound like celiac symptoms. Is he willing to do a trial? Purple- sorry, I was wrong. The recipe in Carol Fenster's big book does NOT have eggs. But it uses her blend and some potato starch. Perhaps it is simply the issue of the toaster oven versus the oven. -
