  5. On this same thread as mentioned above, at message #8, I have a recipe for gluten free, egg free, dairy free buckwheat pancakes that works REALLY well. The same proportions of 1/3 each buckwheat, potato, and bean flours works well in other recipes, too.

  21. One of the symptoms of eating gluten when you are a celiac, is fuzzy thinking that makes you think you might not be. This is an auto immune reaction which causes long term malnutrition damage, which will not magically disappear in a week and a half of a flawed gluten free diet.
  22. Try eating high protein, high good fats, and lower carbohydrates, with lots of vegetables. Good fats include olive oil, coconut oil, nuts, eggs, avocado. Exercise, but gently.   25. Citric acid, commonly used in fruit preserves, can be derived from wheat, but that is usually a European problem. Found that out when I was eating imported jelly. Try putting pure apple cider vinegar and cumin on beans.
