ARCHIVED Eating Gluten Free At Others Houses
Takala replied to Ally1978's topic in Coping with Celiac Disease
You either BYOGFF or invite them to your house and cook for them. "I have learned that I am super sensitive to the slightest cross contamination .... I've been told that shared kitchens just can't work for me anymore.... I can't believe I have to be this careful, but it looks like the gluten molecule is indestructible.... some say it's like a prion... -
ARCHIVED Sooo, A Month On Gluten And This Is What The Specialist Said
Takala replied to Hawthorn's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Welcome back to Sanity World. -
This is why I really do not like my area's newest Whole Foods store, because they scatter- shotted the gluten free items in with the non gluten free items all over the store, deliberately to slow down the shopping speed. And I've seen the two types of gingersnaps right next to each other on the shelf. No, you haven't set yourself back to "square one...

ARCHIVED Flour
Takala replied to Boss'Wife's topic in Gluten-Free Foods, Products, Shopping & Medications
The labels intend to mean roughly the same thing, a type of gluten free flour blend that is alleged to be able to work as a substitute for wheat flour..... but..... they are all different, and they don't really all sub exactly one - for - one the same way. Just as there is bread wheat flour and cake flour and whole wheat flour, these blends are going... -
ARCHIVED Enterolab Results - Should I Get Additional Tests Done?

Not a medical professional, but I do think this says "no ick say on the gluten- ay." -
ARCHIVED Coping With Uninformed People
Takala replied to JaniceS's topic in Coping with Celiac Disease
????????!!!!!!!!!!!!! I'm sorry, but this seems not only harsh, but inaccurate. Most commercial baked goods picked up in the supermarket aisle taste like cardboard chemicaled dreck. They use massive amounts of sugar, salt, and high fructose corn syrup to disguise the lack of quality. It just takes a bit of practice to create better alternatives... -
ARCHIVED I Am A Widow At Age 42
Takala replied to okieinalaska's topic in Introduce Yourself / Share Stuff
I would be wanting to stay where my friends were and not moving, if I lived in a place like that. The severe weather has been especially horrible down here in many parts of the midwestern/southeastern lower 48 for over a decade, alternating between drought, flood, and tornados, and you could not pay me to move back to that part of the country. I love the... -
ARCHIVED Never Ending Hunger.... What Do I Do?
Takala replied to phil1's topic in Coping with Celiac Disease
Classic signs of eating too much white carbohydrates and sugars. Eat more protein, fat, and vegetables, and lay off the other stuff. Olive oil, nuts, avocado, coconut milk, dark gluten-free chocolate, eggs, butter & cheese if you tolerate it. Cheese may take awhile. Don't forget to drink plenty of water. Take a gluten free multivitamin with... -
ARCHIVED Coping With Uninformed People
Takala replied to JaniceS's topic in Coping with Celiac Disease
This is where it helps to be somewhat either self assured or arrogant yourself, depending on what sort of people you are dealing with. Also, I assume in casual atmospheres that NOBODY will understand what I am saying. This means I must be succinct, short, clear, and precise. I don't say "I can't eat gluten." 99% of people have no idea what it is, and... -
ARCHIVED Anyone Feel Like A Full Time Chef?!
Takala replied to GFreeMO's topic in Coping with Celiac Disease
I get in a slight exasperation sometimes when in a hurry and packing the travel food box for the car trips. Like my house, but the kitchen is very "TV dinners" generation sized. Then again, I've seen a lot of brand new $$$ expensive houses with larger, but even more poorly laid out "trophy" kitchens. Not having a dishwasher would nearly be a tragedy... -

Hello, on the off chance that the writer of that story or the person who it profiles will see it - there's a Big Mistake with the link provided inside the story linked. ARCHIVED Some Questions From An Ignorant Newby
Takala replied to notanothername's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Since whether or not he is on dairy won't affect the tests for celiac, and dairy intolerance is a side effect because the part of the intestine that processes dairy gets damaged from gluten intolerance, you could try taking him off of dairy during this period, and see if that helps his discomfort any. Or at least start by taking him off of lactose, which... -
ARCHIVED Rice Dream
Takala replied to missy'smom's topic in Gluten-Free Foods, Products, Shopping & Medications
I don't get why they would do that. They should use water, sugar, flavoring such as vanilla, and a bit of rice flour and it would be a much safer and cheaper equivalent. Maybe drop them a note, since the problems with this stuff are well known if you've ever been drinking it regularly, and then had to attempt to figure out what was "getting" you with a... -
ARCHIVED Great Article From Here In Toledo, Oh
Takala replied to mamabear272's topic in Publications & Publicity
I just downloaded the pdf file for the menu for this bakery, "Organic Bliss Delis, Bakery, and Expresso Bar" in Sylvania, Ohio. They are NOT a gluten free enterprise, they are listing "choice of gluten free bread" on the sandwiches and clearly list some items as being made on wheat flatbreads. Where do these wheat items come from ? Are they made at... -
ARCHIVED Traveling With Celiac?
Takala replied to HeatherB.'s topic in Gluten-Free Foods, Products, Shopping & Medications
Rice cakes (Lundberg are reliably gluten free) are good for this sort of activity. I would be baking some heavy duty, high protein almond nutmeal & amaranth skillet quick breads, or flatbreads in the cast iron, and then cutting them in to wedges or slices, and then freezing them in plastic ziplocks in individual servings. Amaranth flour is mold... -

Takala replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
Okay, I have something in a mini loaf pan that is cooling on the counter. The test piece I did in the microwave has already been demolished. We just sliced and ate some. It worked ! This is a preliminary recipe. It is not tested at higher amounts. Gluten Free, gum free, yeast free Vegan Buckwheat Mini Loaf of Bread, whole grain type -

ARCHIVED New Here...need Advice!
Takala replied to Sunshine79's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
You said you've been previously "diagnosed" with "IBS" and Barrett's esophagus.... you've been sick for years, got slowly malnourished, and now you're finally noticing. You will have to do two things 1) stick to the gluten free diet very strictly and 2) avoid cross contamination, which means you are going to have to really either purge and segregate... -
ARCHIVED Timely Update About Soyfoods and Gluten-Free Diets - HealthNewsDigest.com
Takala replied to Scott Adams's topic in Publications & Publicity
Well, talk about an agenda ! This turns out to be a press release by the "Soyfoods Council" which claims that soy flour can substitute for replacing wheat flour in gluten free recipes. Talk about being oblivious to reality. The "Soyfoods Council" of Ankeny, Iowa, is the non profit funded by the for- profit, Iowa Soybean Association. THEIR chief customer... -

ARCHIVED I React To Cashews Like They Have Gluten In Them?
Takala replied to HeatherB.'s topic in Gluten-Free Foods, Products, Shopping & Medications
I have also become more sensitive to cashews since going gluten free. Oh well. Found out an interesting thing about them this weekend. They come from the same botanical family as the poison ivy group, and the nuts must be steamed open to harvest because the inner nut cannot touch the shell or it gets poisoned. I am super sensitive to poison ivy and poison... -
The world is FULL of deliberately malicious food trolls on the internet. You would be surprised who is behind some of it. And it's not somebody living in their basement with nothing else to do. There is big $ money in the industry right now for medical and genomic research. Also in treating the side effects. They want it, and they don't want people...

ARCHIVED Does Anyone Have A Good Bread Recipe, Not Using Yeast, That You Have Tried And Liked?
Takala replied to freeatlast's topic in Gluten-Free Recipes & Cooking Tips
_________________ I have been experimenting a lot with buckwheat blends this month. If you give me a coupla days, I should be able to have something that should work in a loaf pan. Note for above recipe- use a smaller pan like an 8" by 4", not a nine by five, since it's 2 cups of flours. May want to cut down amount of oil, 1/2 cup is a lot, as one...
