I had a ziplock bag of half amaranth and half sorghum flours in the fridge that my spouse raided for dredging fish one time, it worked so well we keep doing it. Just looked up the ingredients on the King Arthur gluten free multi purpose flour mix, which is brown rice, tapioca, and potato starch. This should work fine. -

Reintroducing gluten for a few weeks is not going to cause enough damage to show up in a biopsy. The result will therefore likely be false, whether or not you have celiac or gluten intolerance. No, it won't "harm" them, but you have to do it carefully so they realize that instead of depriving them of what they think of as "goodies," you are actually going to greater amounts of effort to get them special food so they don't feel bad.
