ARCHIVED Newly Diagnosed And Struggling (Ended Up Being Pretty Long Sorry)
Takala replied to mamabear272's topic in Coping with Celiac Disease
This is going to take a while, so don't despair. Celiac may have left you in a temporary state of lactose intolerance, so you may not do too well in the beginning with dairy products until you have healed up somewhat. You may want to stick with aged cheeses or safe, gluten free yogurt which are supposed to be very low lactose. Or you may want to use... -

____________ Liking baking is a very good thing. You will want to not be baking with regular flour anymore, however, as the cross contamination issues will eventually either make you sick no matter how conscientious you are, or drive you batty. Handling pre made ones, wiping up crumbs, and then washing your hands is okay. You can try buying a bag... -
ARCHIVED Nightshades And Corn Starch In Hellman's Mayo.
Takala replied to GFinDC's topic in Gluten-Free Foods, Products, Shopping & Medications
For the chicken salad I would go to an olive oil and vinegar dressing. You could probably mix in a little bit of coconut milk. I've faked ranch type dressing before, so this would just need some sort of thickener, could be done in the microwave to warm it up then add the oil.... thinking.... maybe I should add a sig line that says outwitting food manufacturers... -
ARCHIVED Nightshades And Corn Starch In Hellman's Mayo.

_________ So now they are ruining the mayonnaise experience for some of you. I am terribly sorry. It's the same thing with cosmetics and toiletries. I swear marketing departments are run by flacks who are rewarded for exhibiting the most evidence of short attention spans. _________ Spectrum Canola Mayo Ingredients (says Gluten Free... -
ARCHIVED What Should Labs Look Like Post-gluten-free
Takala replied to jeslk's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Congratulations and keep plugging! Hopefully you will avoid damage, unlike some of the rest of us who had to figure it out the backwards way of there was so much.... You might become more sensitive as time passes, and be able to notice something when and if you get cross contaminated. -
ARCHIVED Aldi Foods A Possible Problem.
Takala replied to Niebr's topic in Coping with Celiac Disease
With so many commercial breakfast cereals being made on shared equipment, or having malt or cross contaminated oats or corn in them, it's safest to stick with cereals that are specifically labeled "gluten free." -
I don't understand how contacting an organization such as PETA, which is opposed to all domesticated animals is actually a way to "help" animals. Companion animals would not exist at this point without humans being willing to feed and care for them. If you want to help an animal, actually HELP an animal. That means instead of harassing animal caregivers...

Takala replied to Moongirl's topic in Gluten-Free Foods, Products, Shopping & Medications
Garnier Nutrisse original with avocado/grapeseed oil (2011) is gluten free. I have very sensitive skin and haven't had any problems. I do not use any sort of conditioner with any sort of wheat/gluten/oat products, I refuse to get that oily residue smeared all over the place. While it is somewhat controversial over whether or not topical applications... -
Ick. I'd put on some disposable gloves, and get a roll of paper towels and some cider vinegar water and baking soda, and go after that microwave. I lay a fresh 1/2 paper towel on the inside turntable of our microwave oven before using it anyway, because it's glass and I hate the chink- chink sound of glass hitting ceramic, and I don't trust some of this...

ARCHIVED Eating Gluten-Free Is NOT a Trend - The Stir
Takala replied to Scott Adams's topic in Publications & Publicity
Meh. Another one of these types who doesn't see the Big Picture. People who this doesn't help won't stick with it, but telling people who are not "officially" whatever auto- immune to not try gluten free food out of curiosity to see if it would make them feel better... or just for whatever reasons (like they don't want to cross contaminate a spouse or... -
The burgers were undercooked. That is why the e coli was not killed and people got sick. When there was an e coli outbreak here in CA a few years ago, it traced back to raw spinach - except they never did find the exact source, but they found the probable farm fields where it happened, after nobody was supposed to eat salads for weeks and weeks. That...

May be time to think about converting the home to a gluten free zone. They (whoever you live with, unless it's a roomate situation and you're pretty much stuck) can eat it whenever they want elsewhere, just not in the house. -
Or put the dough batter in the cups/pan first and top dress the blueberries or chips, and they sink in. That is what you are supposed to do with pancakes, anyway.

You're discovering that if you keep consuming gluten in trace amounts, it makes you just as sick as if you are consuming it in gross amounts. Earlier discussion on this Pristiq stuff: -
ARCHIVED Superfine Vs Regular White Rice Flour? Used Too Much?
Takala replied to sreese68's topic in Gluten-Free Recipes & Cooking Tips
Normally I'd say yes, you substitute by weight, but, each of these gluten free substitute flours and meals acts slightly differently when it's mixed with liquids and other ingredients. The one thing that is interesting to me is that every time I've tried to follow a gluten-free recipe exactly, being very careful, it seldom comes out exactly as promised... -

Takala replied to Fire Fairy's topic in Coping with Celiac Disease
The smoothies, or something in your kitchen. Is the coffee safe ? Most of the time it is not the ingredient, it is what happened to it on the way to your lips. A lot of the Kind bars, which are otherwise delicious, have soy in them now. -
For yourself, the meat and vegetables wrapped securely in a tin- foil packet to be put on the grill, something to drink, and some sort of gluten free bread if you're into buns. If you don't have gluten-free buns readily available, you can make a gluten-free microwave bun-in-a-cup for yourself. You could do coleslaw. Take bag of cabbage shreds and...

I was told by several different doctors at the initial examination that I probably or could have it. Dating back to the early 1980's. Ugh. Underwent the spinal tap thing too decades ago, surprise it didn't show it but there I was with all the symptoms. About 8 years ago had another neuro want to do the spinal tap thing again and told her hell would...

Well, hopefully in the future, Gluten Pretzel Woman of Doom will be more careful !!! Good catch! Interesting statistics, was wondering if their (Canadian) population had a higher prevalence because of where their population was originating from, combo of Indigenous and a lot of northern European. Also there seems to be some pushback coming...
