Have her retested for celiac by a blood test, and also ask for guidance on getting her tested for other allergies. If none of this pans out, you can try an elimination diet. -
If you have been on a gluten free diet for a year and a half, eating gluten for TWO DAYS and expecting this to show up as celiac positive in either a blood test or a biopsy is ludicrous. Pedi is correct, this may not show up on a blood test, but your son could still be gluten intolerant. Long reactions in the beginning, not uncommon until the gut heals. Look out for cross contamination from toasters, cutting boards, colanders, rubber/plastic tupperware, etc. What about shampoos, lotions, pet foods if you have inside pets that drool... -
You should contact the store manager of that Costco and report the incident. They need to know that "sample lady" is an idiot who was going to make customers sick, if it was not a gluten free soy sauce - did you specifically ask what brand/type she used ? I would never assume anything about samples.

There is a brand of soy sauce, San-J Tamari, made without wheat, which is gluten free. In the U.S. the "official" diagnosis is done with the Medical Professional running that scope down your gullet and then the biopsy finds the damage in the small intestines, but they also want a positive blood work panel first so the insurance will okay the cost of the biopsy scope.
