What it comes down to is......We eat funny looking sandwiches. There are myriad different recipes and bread pan shapes, both conventional and bread machine. Matching them up so they work together is a real trip. Each gluten free flour has its own characteristics. -

Uhm, ah, no. Many companies make B vitamin mixes with way over the recommended daily amount, so that won't hurt you, but a normal person will feel pukey on that much iron. Wow. Of course at one point I was sucking down blackstrap molasses like manna from heaven. -

You said earlier this month that you were getting another set of blood tests for celiac.... what were those test results ? What tests were done besides genetic ? Oh. My. G*d. Bras. Straps. I tried switching brands of deodorants and had the mother of all reactions to the new "organic natural" stuff. It seems to be complicated by using a razor with one of those lubricating strips to shave with. I had to stop using anything on the skin there for a few days, and have been limited to using a little bit of baking... -
These docs love to ship people who don't know any better around on referrals. The next gastro doc will tell you you only have IBS, after testing you when you've already been off gluten, so the test won't be accurate. It's near criminal behavior.

Sami's -They are not a gluten free bakery. Look again. They do a lot of wheat mixtures, low carb and millet and flax stuff, for people wanting more fiber and fewer calories in their bread. Lots of us out here without the "official" diagnosis. Yeah, they want to see you 3/4's dead and strung out on every medication before they'd acknowledge that something could be causing this. Yup! Farmer's Kitchen. Very good food, but not real fast service, but that is okay. Adjacent to gluten free bakery. Mariposa Bakery in Oakland, CA has a few sit down seats and you can get a bagel and coffee or pizza slice there at lunch. You can do a work- around for this by putting the yeast in warm water to dissolve it, then mixing it into the dry gluten free flour mixture and doing a very long, slow rise. You may want to sweeten some of these breads a little bit with whatever you can tolerate, even a bit of artificial sweetener or stevia, as some of the higher protein flours taste better... -

Sometimes the substitute gluten free ingredients that are used in commercially prepared gluten free baking do not agree with the newly gluten free eater. Try sticking to foods that are as unprocessed as possible, such as meats, fish, eggs, fruit, vegetables, nuts, and going easy on the grains at first. Maybe just stick to rice, potatoes for the carbs.... -
We have a gluten free kitchen after my husband volunteered to go gluten free at home, to avoid cross contamination issues, after he saw how 1 reaction could wipe me out and ruin a weekend. Much easier this way. He's still gotten me a few times that we have not figured out how, other times we do figure it out, but it is a lot less.

Stick with the gluten free diet. There is no "wonder drug" to deal with this. I wouldn't "assume" with the B vitamins. Take the B vitamins, the multi, the calcium, magnesium, and D, in gluten free. I've gotten over enough of the neuro symptoms that I can now concentrate and touch type and write, something that wasn't possible a decade ago. ... -
