  1. There is almost nothing worse than grabbing a commercially made gluten free manufactured food when you're hungry, and then the thing sits in your stomach like a rock or worse, because you can't tolerate one of the other ingredients. Not only does the thing usually cost a fortune, but you now feel awful, and could have felt better if you had just...
  2. I don't take thyroid meds, but it is so outrageously wrong for a pharmaceutical company to be having undeclared gluten in a medication that is frequently used by celiacs, it may be time to organize for an FDA intervention. This is criminal behavior.
  3. Yes, that is one of the articles, everybody should bookmark that one. Here is the paper it was based on: BMJ, GUT journal Diversity in oat potential immunogenicity: basis for the selection of oat varieties with no toxicity in coeliac disease Open Original Shared Link Glad the Europeans are looking at this, explains a lot of random...
  4. ~Basic Buttercream Frosting~ : 1 stick of butter, margarine, or the equivalent in shortening, such as palm or coconut based, gluten free 1 box of powdered sugar, or the equivalent amount of regular sugar spun in a blender or food processor until it is "powdered" pinch (about a quarter teaspoon) salt vanilla extract, gluten-free, teaspoon liquid...
  5. It's not gluten free. The manufacturer is using a dodge, claiming that the processing is rendering it gluten free, but it isn't. Same way that some of the Europeans use highly modified "codex" wheat starch in their gluten free goods, then they have a lot of people reacting, and wonder why the percentage of celiacs who respond to the diet isn't perfect....
  6. Rule for eating out: If you must be fully functional and up on your game the next day.... it's better to eat at home than to go to a new restaurant, even if they have a gluten free option. And the day before a holiday will have the "B" team at the restaurant... trust me, you want to eat there some other time. But if you're not a hyper super sensitive...
  7. Well, that just completely *****s. You just really won the lottery on stupid, obscure diseases with this one. But at least here is the excuse for the other problems. That's amazing you managed to find a hospital that could do gluten free. I wouldn't trust any of them around here to be able to do that, and assume that any major illness would take...
  8. I had read somewhere it is also that within the oats that are grown in a gluten free manner, avoiding being grown in old wheatfields and harvested on the same equipment, for example, there are still varieties that provoke reactions more than others, but I apologize for not being able to remember where I read this.
  9. My spouse eats gluten free at home, and a lot of times if and when we go out, he orders off the gluten free menu, as well. He's only getting it out on work/business lunches. Since he started working at home this summer, he is now sometimes going days without gluten. He can, if he wants, switch back over and eat a glutenoid meal if he wants to. He doesn...
  10. Okay, I think I found the recipes you may have been using Open Original Shared Link That online version isn't specifying whether it is fast rapid rise yeast or regular yeast. Regular yeast may act differently. There seems to be enough xanthan gum in it, a teaspoon per cup of flour. the Brown Bread has 3.25 cups of gluten-free flours total.......
  11. I made three loaves of bread today. A skillet, a loaf pan multi grain, and an attempt at yeast rise.... experimenting with my gumless recipes. First two usual success, third one comical. Hyperactive fast rise yeast loved the agave syrup. Flooped over before baking, dough everywhere after 20 minutes in warm place. LMAO. Baked it anyway, laying...
  12. Darwin Award 2011 contender ! Some "gluten-free" manufacturers do not have the brains God gave a gnat. Yeah, people really need to drink wheat. Maybe we'll get lucky and the product will fail. Spectacularly.
  13. Yes, this. It's like they've all been grainwashed by Michael Pollan.
  14. Technically, you are gluten intolerant, because you have not been formally diagnosed by a medical physician who did a biopsy of your small intestines and saw damage. You might even be celiac, but there's no seal of Medical Approval
  15. If she was diagnosed with celiac by a medical doctor, she has celiac. Giving approval for her to "cheat" on her diet is wrong, and giving her enzymes, which don't work anyway, is wrong, because then she will think it is okay to cheat. She is still damaging herself. It is likely the undiagnosed celiac caused the damage to her thyroid. Just because...
  16. Nuts can be ground in a blender. Buckwheat kasha can be ground in a coffee grinder. All of these do not need xanthan gum and use olive oil and higher protein gluten-free flours/meals. They can be made sugarless because they are leavened with apple cider vinegar or lemon juice and baking soda. buckwheat flatbread (if you want sweeter, you can add...
  17. My guess is that you have family members who suspect they might have a gluten intolerance, but they've accepted the fantasy that everyone can expect digestive upset when eating gluten, as normal, because they think it's easier to be in denial. Normal people can switch back and forth, at will. The rest of us can't, without consequences. Remember the...
  18. Do not keep the "carby garbage" in the house, and it becomes a chore to go get it. Eat more fat, proteins, vegetables. Allow yourself a daily treat, such as a form of gluten free chocolate or something similar that is higher in fat, and no grain carbs. Home roasted clean nuts and raisins, peanut butter on a banana with safe gluten-free chocolate...
  19. Are you using Splenda in the little individual packets, or the bulk Splenda? People here have reported problems with the bulk form.
  20. Oh, puh -lease. Nonexistent? I don't think so. Yeah, your hypothetical is right up there with neuro Idjiot #1 who told me I was going to be hopeless and deteriorating around age 26, after calling me a head case, and telling me there was no cause for what was going on in my c- spine, which at the time was getting blamed for the nerve damage...
  21. I wouldn't be upset with the doctor, but after my current PCP saw all my test results and listened to my multiple year saga of the run- around with the "specialists," (ending with no official diagnosis, of course ) he accepts that my saying I have avoided gluten has ameliorated a lot of health problems, and we co - conspired to mark my records as patient...
  22. Wow, you are all much more tolerant than I am of somebody calling and telling you to **** off like that. And the hostess should have dealt with you, not the nephew, on this. It sounds like she didn't make any accommodations, or could not, which is fine, BUT, she should have at least had the nerve to call you up and say, So Sorry, we can't make this work...
  23. I would go to the health food store and grocery shop for gluten free ingredients, then to the Baking Forum farther down on the forum homepage, and start researching how to bake gluten free cakes. They've done blood tests on me, and told me that I didn't have my arthritis, sjogren's, celiac/gluten intolerance, nerve damage, etc. It is truly amazing how...
  24. No.
  25. This was old news, the lunch makeover bill passed a while ago, but the GOOD NEWS TODAY is that the Senate came to their senses and nixed the part about restricting potatoes. Thank God for Sen. Susan Collins, never thought I'd say that. It wasn't only potatoes, they were after beans, too. Only supposed to do 2 servings a week. Nincompoops. ...
