  1. What is it with pHD biochemists and gluten issues ? There is NO STANDARD for serving sizes, either, in the United States. There is a plethora of single serving packages that contain "one and a partial" servings, to give the illusion of the foodstuff being lower calorie. And they screw it up ALL THE TIME! I would be infuriated...
  2. They are really tasty. I had read a travel writer's review in a midwestern newspaper and thought, hey, that's within a weekend trip driving distance, no airplane trip required, so we had a meal there last year. The hot chai tea and the lamb burritos were very good, too.

  4. You need to show what the ranges are, not just the one number, because laboratories use different scales. Make them give you a written copy of the test results, not just over the phone.   6. They're not calling Asperger's or Autism auto immune right now, but I predict there is a good chance in the future that "they" might be. I had gallstone/gallbladder symptoms but no diagnosis before going gluten free, which resolved my inability to digest fats. My rule: if something bothers you, don't eat it.

  10. Eat simply. Some of the gluten free substitutes eaten as replacements can be rough on you until you figure out which ones they are.

  13. What flours ? Are you using gums? My first thought is try adding a bit more vinegar and baking soda for some more leavening.
  14. Start keeping a food diary and write down everything that your child eats. And at the bottom of each page day, what sort of day he had. This way you will start to see patterns. The two most common "problem" foods that run together with this is soy, and then dairy cow milk products. When making a change, it's easier to change one thing at a time....

Something is wrong here, especially with the endocrinologist suggesting "depression" when it is clearly either gluten cross contamination or accidental consumption, combined with thyroid disease which the replacement therapy is not resolving. She is a dietician and an associate prof at a small private midwestern university.
