  10. Amaranth. It has this interesting quality to it, that when I've used it in breads, the result is mold retardant when the bread is stored in the refrigerator. You also must check and make sure any and all medications you take are really gluten free.   18. Nope! You just put them in tap water and stir to wet them. They gel up on their own. If you have kids, they can have fun watching this. The seeds are not that noticeable in the finished bread.
