Probably they don't care what sort of starch is used, but I'm not sure. The term "gluten" is used internationally to mean a grain's protein, like wheat gluten, corn gluten, etc. But who knows what they meant when they called buckwheat that. It is a "sticky" sort of grain when mixed with water. Like sweet rice is called "glutenous" rice or mochi, it's stickier but it is gluten free if not cross contaminated. LMAO... -

It's not so "off the wall" for people or other living things with nut allergies. One of our horses has multiple allergies to many common things horses can come in contact with or eat, such as soy, ryegrass, barley, and he's in the only pasture we have that has no oak trees for a reason - some horses will beaver down those acorn nuts like it's cracker jacks...
