Takala replied to GFreeMO's topic in Gluten-Free Recipes & Cooking Tips

ARCHIVED Just Need Some Support, Nobody Seems To Understand
Takala replied to livelifelarge24's topic in Coping with Celiac Disease
You just proved to yourself you're gluten intolerant. We live by Post - It notes. "this too shall pass." How's the toothache coming along ? don't let the dentist gluten you. -
You're not going to be able to order safely at a restaurant without revealing something. Better the boss finds out sooner rather than later, glutened employees tend to be either sleepy or cranky, it's better for them to take you to someplace where there is something edible. (start googling hard now for restaurants in the area w/ gluten free options...

ARCHIVED Should I Cheat? Olive Garden..
Takala replied to BarbieGirl's topic in Gluten-Free Restaurants
Before you order, ask for the gluten free menu - you can do this at the hostess station and then repeat it to the waiter/waitress that you will be ordering off the gluten free menu. Then Confirm It when they take your order "I will have the gluten free chicken... gluten free side dish, and NO BREAD, NO CROUTONS." Then when the food shows up, ask nicely... -
ARCHIVED Anyone Have High Calcium- Lab Work?
Takala replied to AVR1962's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Wow, somebody else writing this..... my kidneys were very busy harvesting that calcium out of the blood, and depositing it in my bladder. Which is causing chronic infections. Very wise urologist figured part of this out (but not the cause) about 2 decades ago and told me to lay off the Tums. (this was back when the other docs are looking at the bone loss... -

Does your actual ribcage feel tight and constricted? That could be costochondrosis, (costochondritis) which is inflammation of the connective tissue of the ribs. When one has certain forms of arthritic (like spondylitis) or auto immune inflammation and it's moving around, sometimes it visits the ribcage, and it is nasty. Sounds like you're still eating...

ARCHIVED Hand Washing Alternatives At School
Takala replied to SilverSlipper's topic in Parents, Friends and Loved Ones of Celiacs
Wash and rinse to get rid of gluten. Rinse like under the tap or wiping it away w/ a wet cloth... It is a protein, so it won't be "destroyed" or "killed" by the alcohol in the hand sanitizer, which is alleged to be able to kill viruses and germs like bacteria.... but they have to get it on the entire hand surface and between the fingers... I'm sort of grossed... -
If you cannot take it all the way apart.... Sell it, and buy another one with the proceeds. Or freecycle it to someone who needs it. Read the reviews on this model... even normal people complained it was difficult to clean.

ARCHIVED Flour Substitution For Cornbread?
Takala replied to LisaM7's topic in Gluten-Free Recipes & Cooking Tips
Yes, like a giant pancake you don't flip - The 'under the broiler' part will depend on how far away from the top burner element the rack is set - about 6". And it goes fast. Maybe a minute or two, maximum, and you watch the top of the bread until it starts to turn color and lightly brown- then pull it out with a hot mitt potholder on your hand. This... -
ARCHIVED Flour Substitution For Cornbread?
Takala replied to LisaM7's topic in Gluten-Free Recipes & Cooking Tips
Use water. You could use milk, buttermilk, (or add a bit extra vinegar to the plain milk) or other milk sub like nut milk if you wanted to. Skillet bread in small 8" round cast iron pan, like cornbread: I would be using those 3 gluten-free flours as part of the recipe, I use salt, and pure apple cider vinegar and baking soda to leaven it.... -
ARCHIVED Creamy Dressing?
Takala replied to Hungrylady's topic in Gluten-Free Recipes & Cooking Tips
I wonder if mashed potato would work? Or something like Vance's dairy - free, which is the same idea, flavored potato starch milk substitute. If you add cumin or tumeric type pinches of spices to coconut milk, you can get a lot of different sauce flavors. Did a search - oh, you have GOT to see this recipe, this is what you are looking for: (Gluten... -
ARCHIVED Flour Substitution For Cornbread?
Takala replied to LisaM7's topic in Gluten-Free Recipes & Cooking Tips
Almond meal with amaranth and sorghum - this baked with a little molasses and sweetener tastes very much like cornbread without any corn having to be in it. Heat the skillet with oil, pour in the batter, cook on stovetop, finish under the broiler. Almond meal and amaranth are "sticky" enough you don't have to use gums when cooked this way, and sorghum... -
No, it doesn't heal anything, it's the electrical equivalent of "white noise" which the theory is that by playing that, one does not hear the more annoying noises and it acts as a jamming/blocking device. If you want to heal, stick to the diet and take vitamins and exercise so your body can metabolize and use the nutrients properly.

ARCHIVED Fda Comment Period Open For 20 Ppm Standard For Gluten Free
Takala replied to padma's topic in Super Sensitive People
They must have been throwing out the highs and lows (extremes) and going for the mean average. (Been decades since I had statistics, hope that made sense) but by using a small number of participants, if they would have expanded it to be a representational sample, it would have meant a large number of people would have been shown to be getting sick on the... -
ARCHIVED New, Stressed, And Confused
Takala replied to CurlyCyn83's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you have the opportunity to switch health insurance out of Kaiser and into a PPO, do it. It is not that they are not "well educated" on the topic, it is that their system is designed to discourage you to seek the use of their services, because that costs them money, and they do this by deliberately telling patients that their symptoms are "all in their... -
Used one for c spine injury - honestly the most useless, ridiculous thing, one is trying to get rid of the sensation of the nerves being impinged, so this 10s unit thing instead shoots you with the same sensation so it's even more annoying. Stick to the diet, supplements, try to keep busy so you don't think about the constant buzz, and it should eventually...

ARCHIVED What If Medication Helps?
Takala replied to desperate's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
It turns out my neurological symptoms were being caused by brain and nerve damage from being an undiagnosed gluten intolerant, plus damage to my c- spine from bone loss, and there is no anti depressant on the planet that can fix having to walk with a cane to stay upright because of malnutrition. This was your post 8/21 This is not the symptom set... -
ARCHIVED Doctor's Advice Not Helping
Takala replied to Marie1976's topic in Coping with Celiac Disease
You are stressed, they should have given you both the blood test and the acupuncture, Lord, what a bunch of cheapskates. You are probably getting cross contaminated, as being cranky is one of the symptoms. But acupuncture is safer than something like tylenol. You said you have kids... they are also known as culprits. Is this a mixed household? And... -
ARCHIVED Fda Comment Period Open For 20 Ppm Standard For Gluten Free
Takala replied to padma's topic in Super Sensitive People
No, no, no, no, and NO on the "low gluten" category. This is horrible, and this is the only thing we are going to get with the commercial, for - profit mindcast in DC, if they think that they can palm off a "low gluten" category on everyone. I may not be a "super sensitive," but I am in complete sympathy with them, as I'm certainly not a "silent... -
ARCHIVED FDA Open For Comments
Takala replied to LDJofDenver's topic in Gluten-Free Foods, Products, Shopping & Medications
Shauna, There is an election coming up, and they do respond to public pressure, if you can articulate this to a wider audience. They've timed this latest "consideration" that they might get around to it, to coincide with "if you re elect some of us... we could get around to doing something not as well done as in other countries, but y'all should be grateful... -
My reaction - Who puts breading on perfectly good chicken, tomato sauce, and cheese ? But over quinoa... there is polenta, corn pasta, rice pasta, rice itself, risotto. Quinoa is getting written up a lot in the food sections of business papers. It's like broccoli, or cilantro, some people don't care for it. They don't "get it" because they are not...

ARCHIVED FDA Open For Comments
Takala replied to LDJofDenver's topic in Gluten-Free Foods, Products, Shopping & Medications
Can you edit your post to say that is a 93 page FDA pdf download. They also say they need to research rye and barley.... and that individuals vary greatly in sensitivity and this may be based on genetics (duh!). -
Good grief, what a sort of dud of an almond recipe. Note the "please see my updated Gluten free bread recipe" at the top of it.... Which is here: "Bread 2.0" Open Original Shared Link this time she replaced part of the almond flour with arrowroot starch and flax meal, and added yet another egg and apple cider vinegar. She is still using a...
