honeypie, The anxiety is a symptom of malnutrition and also can be a symptom of gluten intolerance. Once on a gluten free diet, it will ease off and go away, but you may need to take gluten free vitamin B complex and calcium, D, and magnesium supplements. The blood tests are not completely accurate, but I don't know for sure the % of false negatives. I do know that the disease is woefully underdiagnosed, and that it is frequently missed, because the standard sequence is that they want a positive blood test to then give the go ahead for doing a biopsy. Gluten intolerant, went grain free and low carb for a good while, and eventually went to being able to handle non lactose dairy, such as organic cheese or safe yogurt, where the lactose is very low. Not as long as it was gluten free. If (safe) vinegar was bad for us I would have been a goner years ago. Some of these pickled things like saurkraut and olives and cabbage are high in natural probiotics. You stomach is already full of acid, that's how it starts breaking down the food for digestion. -

The reaction to gluten, if that is your problem, is not straightforward and immediate in all people. It varies. The pale skin is another characteristic. There is a rash called DH, dermatitis herpetiformis, that is associated with celiac. They can do a skin biopsy right next to one of the blisters and see if it is positive, and that is another way to diagnose celiac. -

Gluten Intolerance and celiac can be triggered by an infection. Lyme Disease is another one that can do it.
