ARCHIVED Do Symptons Go Through Cycles?
ksymonds84 replied to kristionii's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Nausea is definately a symptom of being glutened for me. Sometimes accidently being glutened will show up in a couple of hours and sometimes not till the next day. A gluten challenge is going without gluten (for me 2 months) then challenging it by eating gluten to see what your reaction would be. If I were you, I would have the biopsy first and if shows... -

ksymonds84 replied to a topic in Gluten-Free Restaurants
You know we used to have a Beau Jo's here in the Springs but because of bad accounting, they closed down. Too bad, I go to Beau Jo's after a day's Rocky game now. It would be nice to have an option down here. -

I too tested negative to celiac but the diet works for me. I did however get the rash that could be HD so if it ever comes back I will have it biopsied. ksymonds84 replied to RiceGuy's topic in Related Issues & Disorders
Thanks Rice Guy. That's her picure I use here. She's 17 and a dedicated dancer mostly ballet point (she did the Phil Harmonic Nut Cracker with the San Diego Dance Company so she's a serious one) so she gets lots of aches and pains mostly that time of month though (sorry) is when she takes 4 ibuprofens at a time. I should have her see a doctor about something... -

ARCHIVED Another Breadmaker Question
ksymonds84 replied to Emilysmomma's topic in Gluten-Free Recipes & Cooking Tips
Iknow exactly what you mean. I usually use Pamela's bread mix or gluten free pantry. Yesterday I made two loafs in my bread machine. The first one I put in 2 tablespoons of molasses, 2 tablespoons of sunflower seed and 2 tablespoons of chopped almonds plus 1 table spoon of poppyseeds. An excellent look alike wheat grain bread! The second one, I added... -
ARCHIVED Another Breadmaker Question
ksymonds84 replied to Emilysmomma's topic in Gluten-Free Recipes & Cooking Tips
I bought one of the more expensive breadman pro's because of the gluten free cycle and guess what...I rarely use the gluten free cycle! I would go with the less expensive breadman from target especially since you only want it to make dough. Good luck and happy bread making! -
ARCHIVED Burping!
ksymonds84 replied to BelievinMiracles's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Sorry we haven't responded yet. For me, I didn't have burping problems to your extent but I did always burp alot after I ate especially with gluten. Now I only burp if I accidently get glutened or go over my quota for dairy. How long have you been gluten free? I'm almost 6 months gluten free and feel the best ever, it can take a while to heal, some up... -
Hi Walt One question came to my mind, could your son have had something with gluten before he started eating the chips? I live on tostitoes scoops and salsa but have my own bag seperate from my kids just in case they ate a sandwhich etc and forgot to wash their hands before reaching into the bag. I also keep my own salsa because my kids will dip...

Are you keeping a food diary? If not, write down everything you are eating and how you feel afterwords (next day for me) and after a few weeks you will start to see patterns. This helped me discover my other intolerances. Cross contamination is also a possibility when you share the kitchen with gluten eaters (I do as well). Everyone tries very hard to...

ARCHIVED Oscar Meyer Hotdogs
ksymonds84 replied to mouth's topic in Gluten-Free Foods, Products, Shopping & Medications
If you can find boarshead in your area, their hotdogs are fantastic (i only make chili dogs with them not a big hot dog eater). They are the old fashioned casing and are still stuck stuck together in a rope. It says gluten free right on the package. -
ARCHIVED Broccoli Crunch
ksymonds84 replied to Ridgewalker's topic in Gluten-Free Recipes & Cooking Tips
Thanks for posting, I get a mild geographical tongue reaction to vinegar when used in salads and its nice to have a recipe version that doesn't contain it. I will probably skip the lemon juice as well since you said its fine without. Thanks again, sounds perfect for summer -
ARCHIVED Baked Lays Potato Chips - Are They Gluten Free?
ksymonds84 replied to Emilysmomma's topic in Gluten-Free Foods, Products, Shopping & Medications
Me too. I practically live on the scoops with pace picante sauce. I am very sensitive and haven't had a problem but I only buy the scoops, stax, and sometimes the big frito's. For other chips, I haven't had a problem with the regular cape cod potato chips. -
ARCHIVED Symptoms Improved After Going On Atkins?
ksymonds84 replied to TDMB's topic in Parents, Friends and Loved Ones of Celiacs
This was how is was for me too. I got diagnosed with IBS in my late teens and thought that the strict low carb diet I was on cured the IBS. Now I know it actually cured glutened intolerance. As soon as I went off the diet my symptoms came back which is why I stayed gluten light for years and my blood tests came back negative for celiac. My doctor does... -

ARCHIVED Diagnosed, Sort Of
ksymonds84 replied to IMWalt's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Walt, Getting a concrete lab test is not always possible for some of us. Blood work has a 30% chance of a false negative and the endoscopy is often a hit or miss thing since the intestines are so long and its easy to miss a patch. My doctor diagnosed me based on a positive dietary response. The Mayo Clinic actually considers a positive dietary...
