This is not a complaint! Learning to cook gluten-free was hard but now adding vegan to that is 100 times harder. The good thing besides eating healthier and trying new foods is I am learning how to cook things I have never made before and eat them (I am picky). I use Carol's flour blend: 1 1/2 cups sorghum 1 1/2 cups potato or corn starch 1 cup tapioca flour In Carol's Quick and easy book she lists the subs for corn: arrowroot, potato starch, amaranth starch. You can buy extra milk and freeze it in containers if you have a big freezer. We live an hour from the nearest big store. Our milk in our tiny town costs over a dollar more per gallon(1/2 gal here is the same price as a whole gallon at Walmart). So I learned to freeze milk. My suggestion to add to all the other good ones above is to let her help in the kitchen as much as she wants to. She can learn at a young age how to make gluten-free foods. Give her several choices each time so she can be in charge of what is to be made. Kids love the kitchen and helping. I used to have a daycare and the kids loved helping. Also let her choose... -

I made lasagna last week and never had a problem. Here is what "I think" I did. Filled a large, flat, nonstick,frying pan about 1/2 full of water(adding another cup or 2 if it needed it). I guess my splurge is to not run out of coconut oil so I can pop organic popcorn in it. Love to crunch a bowl full several nights a week while I read. I gotta have several bags of chocolate chips in the cupboard for baking cookies and muffins...my favorite thing to do. And of course you have to have all those flours to go with them too.
