				ARCHIVED Chocolate Eclair Cake
purple replied to ebrbetty's topic in Gluten-Free Recipes & Cooking Tips
Recipes for puddings can be found in the book "Gluten Free Quick and Easy" by Carol Fenster. On p. 241 is a cooked choc. pudding. On p.242 is an instant vanilla pudding. She lists what milk subs to use that are best. Be sure to read all of both pages if anyone is interested. Both sound easy. -

purple replied to mama2two's topic in Parents, Friends and Loved Ones of Celiacs
Here is what we like to do. We live about 125 miles round trip to Dairy Queen. My daughter's birthday is mid July so its impossible to get an ice cream cake home. We tried dry ice once. So we make an ice cream cake ourselves. Bake the 9x13"cake or brownies the day before. (You could make 2- 8x8 's with different flavors). Cool it. Remove it from the pan... -

I know this is a teenager section but no one else has reponded to your post yet. I would like to know how you came to find out you are a celiac and what were your symptoms. I am watching my 16 year old really close now. Thanks...

To add to what's been posted so far you can experiment with coconut flour. It has 6 grams of fiber in only 2 Tablespoons(12 grams fiber in 1/4 cup!). Don't use much at a time. I replaced 1/4 cup in choc chip cookies that called for 2 1/4 cups gluten-free flour mix. I didn't notice any change. I only add 1 or 2 T. in a recipe. You could smell it in the dough... -

I have only tried Tinkyada and have had no trouble. However my daughter said she didn't like the curly noodles frozen and thawed. I made chicken alfredo and froze some for her so I never tried them thawed. Be sure to rinse them.
