  1. Are you guys still breaking out after going gluten-free? I took a few weeks to heal but I don't have ongoing breakouts. Are you sure you aren't getting sneaky gluten from somewhere? What do your current bloodwork test show?

  3. The worst part of my rash was active for about 2 months and took just as long to heal. Now I only get it when I'm glutened. I have one bump on my hand from some bean soup my Mom made this week. I did ask her what was in it but I should have read the bean can labels. Just goes to show that even someone with experience makes rookie mistakes.

  5. If you feel you cannot stick to the diet unless you have a definate dx, then keep eating gluten and get the celiac blood panel and an endoscopy of the small bowel with multiple biopsies.   6. I think the villi blunting warrants diet trial but in the meantime, getting the second opinion from a recommended expert is a good idea if you feel you need a secure dx. With your family history and blunted villi, a positive dietary response would be a clincher, IMO.
  7. I agree, just go on the diet and it will quickly be clear to you the benefits. You have definate symptoms that should respond if gluten is your problem. That's exactly what I did. I started the diet and never looked back.
  8. I see your dr said that celiac disease would have showed up in your endoscopy. It's not always noticed with the naked eye, that's why they take multiple biopsies. Did they take biopsies of the small intestine? Or did they stop at the stomach? Ask for a copy of all your tests. There are different ways to interpret them. Some dr's take some interpretations...

  11. You can do it! There are just a lot of ups and downs when you start out. I agree with the simple whole foods. The frozen prepared foods or mixes are hard on you in the beginning. Just simple foods you prepare yourself then note down in your food journal. If you have symptoms, then note them too. This seems simplistic but it really will help you pinpoint...

  13. I used corn tortillas in place of bread. They are cheap and easy to use. I like them toasted and they make a good base for pizza. For snacks I like cheese and fruit, chocolate and nuts, popcorn. I don't eat much in the processed foods arena. The PB cookies with no flour are the best. I made those long before I went gluten-free.

  19. I had fries once in the past year. I did have a reaction so I won't have them again. I do eat their burgers 2 - 3 times a month, bunless, at different locations with no problem.

  21. I was just looking at my old fry bread recipe the other day. I haven't made it gluten-free but I think just subbing the flour for a gluten-free flour blend and adding some Xanthum gum would do it. Let me know how they turn out. My kids would be really surprised if I made these for them. I don't think they have had them since we left AZ.
  22. I thought I read that green means it ran through the large intestine faster than normal. Dr. Oz has a Poop Primer on his website.
  23. I've never had the shots but the B12 I take orally definately gives me a boost in energy. When I first started, I took a higher dose and had to make sure I didn't take them in the evening. They would interfere with my sleep.
  24. I have the restless leg after going gluten-free. I keep mine under control with magnesium and Sublingual B12. The B12 is the key. If I forget it, I feel that squirmy feeling coming back so I get up and take it. Soon the feeling is gone. I never tried to change my iron intake.
