I would only add to the good replies you've already had that when you go on and off the gluten-free diet you put some pretty hard stress on your healing system.   14. Black coffee is gluten-free that is really not the issue. The issue is that there is a big chance for CC in a restaurant and for people that are ultra sensitive, even coffee can be a problem.   20. I have always thought it was CC in the Starbucks. I have my own small coffee bar in my flower shop and I have had to give up coffee. It gave me tremors. It's not the caffeine as I have more of that now. I also found I was having a gluten reaction to some of my syrups.   22. The testing is a good base for future but remember that it is very hard for children that young to test positive by blood. So if they both test negative, don't take this as they don't or never will have celiac disease. They still can have it or suffer from it in the future so keep an eye on them.
  23. I really have to disagree with that. When you have family that just won't listen, no amount of info, U-Tube or handouts will move them. They just don't want to be moved.   24. The labeling laws require that allergens be listed. Maltodextrin has to list the source as wheat if it is used. Chances are that no North American products use maltodextrin made from wheat. The other products listed in the book used to be sometimes be derived from wheat but in the US those products have been changed. Hydrolized doesn't mean wheat anymore...
  25. I know at least one person on the Specific Carbohydrate Diet has a teeenage son with UC. She went on that diet with him to minimize the drugs he might take. You might check that out. There is quite a long thread on this forum where people discuss this approach.
