  1. I have made pie crusts for many years but I have never rolled the dough this way! I love it! I will make one this weekend. It also sounds like I need to put on "The Twist" to dance that crust into shape. THanks for the tip!
  2. I get 2 different rashes when glutened badly, that's initially what made me think celiac. One rash started on one side and later the other side matched it. The other rash, the one with the blisters, I only get on one side. I sometimes have those on my scalp also.
  3. A lot of your symptoms sound like me. I'm so glad you are putting it together now. My baby was 20 before I figured it out. Notice that my dr. didn't, I had to. Don't think because you now have joint pain and tingling it rules out celiac. On the gluten-free diet, my joint pain completely went away. The tingling and numbness took longer but I only have...
  4. If you were gluten-free, that could cause a negative blood test or you could have had a false negative. If you feel better on the diet, maybe you should just choose to remain on it and feel better. I did. I won't eat gluten again just for a test to tell me what I already know. If you feel it's necesary to have certain test results, you must eat gluten...
  5. Blood tests can be inconclusive especially in young children. You can definately start a gluten free diet. This will tell you whether your child is sensitive or not. Your her mother, you know her best. Don't let any doctor or test results tell you what your instincts already know. I hope she's feeling better soon. She's lucky her mom is so on...
  6. Welcome to the forum! You are a big sweetie to check this out for her! It would be nice to get her some written info like my fave book "Eating Gluten Free for Dummies"
  7. I went to Applebee's Friday night and had a good experience. I ate the house steak and added grilled mushrooms. Came with a baked potato and vegetables. It was all good and no reaction.
  8. I usually have on hand Salsa (chopped tomatoes with green chilis) corn chips (have a long shelf life in unopened) canned tuna mayonaise chocolate bars popcorn meat in the freezer canned beans Pancake mix rice If we don't buy groceries one week, we're OK w/ these staples on hand.
  9. You can make a standard pie crust from the back of your shortening can with your favorite flour blend. It's delicious and also good for chicken pot pie. I also like the pumpkin without crust sometimes. I will definately try it with coconut milk. Thanks for the tip!
  10. All good advice but I'll add that you'll get a nicer cookie if you use half butter and half shortening. They'll brown less quickly and have an especially good flavor. For your cheesecake. I make a Death by Chocolate cake that is excellant. I took the regular recipe from the cacao website and subbed the 4 T's of flour with cornstarch and the sour cream...
  11. I will have to get back to you on Monday. My recipe for the flour mix is at home and the computer is at my shop. I can tell you it's a Bette Hagman blend.
  12. I went back to traditional pie crusts after trying a couple of gluten-free recipes. I knew better, they had butter in them and other things that I know can be a problem. The problem with butter in cooking is it's low melting temperature. THat's why in cookies and pie crusts they can brown too quickly. When baking cookies always allow at least half shortening...
  13. I would probably add a little stronger line about medical diet. It could be confusing otherwise as to whether you are dieting for "fun" in which case they may ignore your needs or secretly sabatoge you thinking you are just another spoiled American. Medical doctor's orders are well respected. Translating also has to take into account cultural perceptions...
  14. We had a great Thanksgiving, nearly all gluten-free. We baked our normal bacon turkey but DH forgot to start the oven. In the morniing, I started the oven and everything turned out fine. My Mom invited my niece and family to eat also and it was a nice group with my two at home for the meal. They had dinner rolls and I made my own gravy. I did make stuffing...
  15. I ate ice cream every night for at least 13 years when I was growing up. Part of my bedtime ritual as a kid: ice cream and reading. Now that I'm gluten intolerant, I find myself giving up a lot of childhood comforts (I grew up on PB & J and Italian food). Don't give up your comfort foods! I have PB & J every night for dessert. I double...
  16. My shopping is similar for basics. Silk Soy Milk Rice Chex marshmallows ( for squares or right out of the bag) Chocolate bar, giant Snickers, only full size bars peanut butter and jelly 100 pack of corn tortillas butter cheeses Lowry's Seasoned Salt corn chips Walmart brand chopped tomatoes with green chilis...
  17. Just had to chime in and say I have been gluten-free for a year and my skin has never been this clear and skin so soft as it is now. Not since I was 12 YO!!
  18. I'm kind of a wierd LI. I usually react quickly to any milk but I can tolerate some amounts. I can have butter and aged cheeses, even cream cheese but not fresh milk or cream, no ice cream. When I was experimenting with the enzymes, I would still react but it was delayed for a few hours, meantime I swelled up like a balloon. Yuck...
  19. Vent away! We all need to do it sometimes. When you vent here, we understand. I would also ask about your dairy consumption. You may need to let it go for awhile. The advice to check for hidden gluten is a good one. It can really hide, you know? Do you still use flour in your house? It could be getting to you if you breathe it or touch it. Supplements...
  20. I have come to say in restaurants "I have some severe food allergies and can't let even a crumb of bread touch my food or I'll have a reaction". They get this kind of wording and it sounds kind of mysterious to them since it isn't completely specific. I know it isn't accurate but it's a restaurant and the important thing is not to get sick. If people...
  21. I have to agree that keeping you healthy is an investment in your family's health. I have banned the wheat flour from my kitchen. So far washing shared utensils has worked for me after I ridded the kitchen of scratched skillets. I think you could definately have breathed in flour. I won't go near it any more. Could you get some help preparing batters...
  22. I think we all overlook some more subtle ways we might ingest hair products. I've been reading about posters who are glutened by inhaling flour. Of course, you inhale it and then mucous is passed into your stomach and BOOM, gluten in your digestive system. Now I love steamy hot showers, does it make sense that some of your conditioner molecules steam...

    ARCHIVED Help

Julz, I have to admit to knowing little about iodine. I do not have a problem with fish and I used to take kelp supplements that were beneficial to my heart "pounders". The store stopped carrying them & I haven't taken them since. .... but...I can't answer your question. It does seem like seeweed might have iodine. Anyone out there...
  24. I can't tell you the science of it but I can tell you that it took many weeks for my DH to clear up & longer for the skin discoloration to return to a healthy pink. If I have a bad reaction & it returns, again a long time to heal although the itching does seem to back off faster than the skin condition. I sometimes have days where I suddenly realize...
  25. THanks for the reminder of pumpkin roll! My families fave too! I had kind of blocked that out. I made it for them last year when I was a rookie but this year...since I have all of you to help and a year of cooking under my belt, Ill just convert my recipe. This will be a GREAT holiday season!
