  1. I've decided that the next time someone asks me what are the symptoms I will ask, "Have you ever had the stomach or intestinal flu or maybe food poisoning?" Then I will tell them, "It's like that plus some other symptoms in different variations." I really think that's the closest I can come to explaining a glutening to someone. It's hard for them to...
  2. I agree with you about the bread, yuck... I just use corn tortillas in place of bread. I like them toasted first. I also use them to make PIZZA!!. I toast them first so they are crispy then bake the pizza. Very tasty and fast. Try it!!
  3. The recipe is at home and the computer here at the flower shop. I will bring it in for you. There are a couple of tricks to a roll and I will tell you those now. This is a cake batter but baked very thin. So it tends to break when you dump it out of the pan. So I spray the cookie sheet with Pam VERY heavily. When you pour and spread the batter...
  4. I think the problem is you are expecting this condition to be text book with text book reactions and recoveries. Sorry, nothing could be further from the truth. Not only do we all rect differently and heal differently, each person's individual reactions can vary. I don't have the same reaction twice. Sometimes it affects my joints, the fuzzy thinking...
  5. Good point, SBJ. I never considered myself a Yuppie but compared to others I guess I live a very rich person's life.
  6. An elimination diet is a good indicator. My friend's grandson is a mess of rashes and has been for some time. After traveling from dr to dr, they finally got to a gatrso with a brain. First his child has eczema. Dr told them eggs were the #1 allergen for eczema. They have a family history, anecdotal not dx's, of celiac. He has the mother trying an...
  7. M-m-m-m-m...it all sounds delic!! Keep them coming!!
  8. I'll admit right here that I'm no athlete but Ann Curry from the Today show climbed Kilimanjaro last month and they had extensive coverage of it. I'll bet you could watch that coverage on their website. Maybe you would even get a response if you e-mailed her. You never know until you try. Personally, I would probably pack nutrient dense foods like...
  9. I have to brag! I converted my old pumpkin roll recipe and it was delicious!! I've been afraid to try it. It's such a good recipe that I used to even sell them every Christmas. I love it and so does my family. So, woo-hoo!!
  10. We're going to Indy to be with our kids for Christmas this year as they both are working as much as they can during the break. We're usually at home but Mom is going to Arizona before Christmas so we are free to travel, dog and all!! We haven't decided what to cook and I wondered what others are having. We are usually pretty casual for Christmas...
  11. I haven't converted a recipe just like this but I have had good luck using my flour blend plus xantham with old recipes. It isn't as flavorful though so I usually add a bit more sugar and something else to up the flavor. Like in pie crust I add a T. of sugar and for certain recipes, cinnamon. For pizza crust a bit of boullion and parmesan cheese. ...
  12. Congratulations on your great speech! You know, we never know where opportunity will meet us. Your teacher helping you meet someone who is going to help you meet someone else who can help you, is awesome. Good job on talking to your class about celiac, it is not easy to do.
  13. Why did they send you this questionare? Was it prompted by your dr?
  14. You know, they say there is no such thing as bad publicity so I say go! Even if their calling it a "Yuppie" disease is offensive, it will start people thinking and talking about it. ABC will get a ton of comments from celiacs and others who find the article innacurate. Then they will do a follow-up from the other point of view....it will all lead to...
  15. You should not be wheat/rye free if you are planning an endoscopy. You can skew the results. You need to be eating plenty of gluten leading up to test for an accurate result. I'm no expert on the blood tests. Others here can give you advice on those. All I do know is that young children are very hard to diagnose from blood tests due to the large number...
  16. I have acid reflux and it just burns my esophagus. The rest of it sure sounds like when I eat gluten and you mentioned the times you had gluten too. The other posters hit the nail on the head; you eat gluten you are sick. When you don't, you recover. Keep a food/ symptom diary for awhile if this isn't clear to you. Sometimes gluten can fuzzy up our thinking...
  17. Wow, your mom sounds like she's miserable. In light of your dx, is she going to be tested? Seems like her problems could be lightened by the gluten-free diet. How great would it be to help her heal?
  18. Congrats on your diagnosis. It's a great relief to put a name to your seemingly disjointed problems and finally have an action plan. I was so relieved and grateful. I know you are on an exciting journey to improved health. Have a healthy holiday and New Year!!
  19. I tend to be hypoglycemic but that's improved since going gluten-free. I still need to eat something about every 2 hours. When my sugar crashes, I really get moody; grouchy and angry and can't think straight. I can relate to him. I don't wake up that way though. The high protein snack is the best for me but the juice? No, for me that would be too much...
  20. Wow, keeping from her dad seems like you're punishing her. I know why you're thinking of it but try thinking of it from her point of view. I don't know if trying the diet for a few days is enough for her but it certainly was for me. My symptoms didn't all clear up that fast, but I saw enough improvement that I was astounded. I also within one week was...
  21. I agree with the other posters; the right person will be compassionate with you and won't think it a burden to support you. Just as you would support him if he were sick or disabled. You are not a monkey on someone's back. You are a great person who eats a certain way. Would you judge a potential date the way you feel they will judge you? I have...
  22. I haven't had the courage to eat a salad out yet. Maybe with your suggestions I will try. I don't eat out a lot except by my shop where the local spots take care of me. If you can't advocate for yourself at a restaurant, you run a high risk of glutening.
  23. My friend's grandson was told eczema is most often helped by avoiding eggs. They are conducting an elimination diet with him now. Hope this info is helpful.
  24. I've been lactose intolerant most of my life. I'm not willing to try milk again no matter what. That said I can tolerate some things with dairy; butter, aged cheese but not anything with powered milk like hot chocolate mix. I can eat milk chocolate unless it's the expensive high cream kind. Nestle's is Ok. You see we're each individuals and react uniquely...
  25. My DH took several weeks to clear up and a little more for the skin to be a normal pink color. But that was on the gluten free diet. If it's DH, you won't clear up while eating gluten. If you have a proper biopsy done and it is positive for DH, that is a clear dx of celiac. No more testing is necesary unless you want it. If you want the tests, continue...
