ARCHIVED Gluten Free Thanksgiving
ang1e0251 replied to SAHM2one's topic in Gluten-Free Recipes & Cooking Tips
We usually cook the biggest turkey we can find cuz we really like leftovers!! But I don't think it matter much because you are cooking at such a low temp. When you turn it up, you're going to keep an eye on it, mostly because you are dying to eat all that bacon! If you're cooking just a breast, then I wouldn't leave it in overnight. I'm trying to remember... -

Hi, guys! Sorry I haven't kept up for a couple of weeks, mu DH shared his cold with me then I had a dental issue that took a couple of weeks to calm. When I have to take cold meds and especially pain meds for the tooth, my weight goes nuts. I gained 7 pounds during that time & even though I knew why, it was sure discouraging. Friday I was finally... -
ARCHIVED Yes! You Can Make gluten-free Green Bean Casserole
ang1e0251 replied to Fiddle-Faddle's topic in Gluten-Free Recipes & Cooking Tips
I am so sad. I wanted to test run the casserole this weekend but really running into some roadblocks. I cannot find Cream of Mushroom Soup by Progresso in any of my stores. Any suggestions? I know I can make it from scratch but I was trying to avoid that. Also I looked at the Funyuns and they include maltodextrin. Isn't that a no-no? ... -

For breading any kind of chicken nuggets or meats I use gluten-free instant potato flakes. I just buy the WalMart brand. You can season any way you like but the coating is crispy and delicious. Easy to use too. -
I haven't had gluten dreams but I guess if you're eating gluten in your dream and happy about it, maybe it's just your mind giving you a safe place to have a treat. I think if the fear dream is becoming more frequent, you can try a trick I taught myself as a child for nightmares. Just before falling asleep, I would tell myself, "If the monster chases...

I'm not sure how your dr. knows your tremors are not from celiac. I also have had increased hand tremors that have decreased dramatically since going gluten-free a year ago. They really kick up again if I'm glutened. Of course I don't know about your tremors, but it's hard to discount anything as not being related to Celiac. It seems like the symptoms...

ARCHIVED Looking For The Best gluten-free/df Cake Frosting
ang1e0251 replied to Sweetfudge's topic in Gluten-Free Recipes & Cooking Tips
My family recipe is one of those with no recipe. But it's the best around. My sister now sells the cookies we used to make for Christmas and she has people make orders from far away just to have this special flavor. It may not "sound" as good as others when you read the ingredients but I have never had anyone who tasted it who wasnt very, very satisfied... -

For cold weather, Slice potatoes or use Ore Ida frozen. Layer potatoes, minced onion ( dehydrated is OK), sprinkle a little corn starch & pepper in a microwave or oven safe dish. Add chicken broth to cover & microwave, covered until potatoes are cooked. You can bake also if you have the time. For micro, I go at 10- minute cook times till I'm... -
Rissa, In Indiana we call those Apple Dumplings. The ladies in my church just had a big sale of them and I was definately feeling left out. Your recipe sounds yummy. Is your dough pliable? I made my regular crust this weekend and the flavor was great, I just used my gluten-free flour blend. But it was a lot more delicate than wheat crust, I'd like...

The gals in my town ran a "Harvest with a Heart" this year. People donated produce and they "sold" it for donations once a week. When they had a lot of zuchini they offered a recipe for Zuchini Milk. I haven't tried it but they told me they used it baked goods with success. Zuchini milk Peal and sead zuchini. Blend into a puree in your blender...

ang1e0251 replied to SAHM2one's topic in Gluten-Free Recipes & Cooking Tips
I've also made the bacon turkey as a breast only in the "season" and it is just as good! Just a shorter cooking time. Don't you love Thanksgiving food? -
ARCHIVED Gluten-free Food And Teenagers

Welcome to the board!! I think you have been given great advice. I think coming in and reading some of the teen section could help her wrap her mind around the whole thing. It's a lot to take in especially at her age and double conditions! Wow, I really admire her for being able to face each day. I might just want to pull the covers over my head! ... -
ARCHIVED How Do You Deal With Reactions?
ang1e0251 replied to Batsu13angel's topic in Coping with Celiac Disease
Welcome!! I usually let the D run it's course. I let myself rest as much as I am able, vegging out is OK on those occasions for me. I'm usually pretty brain foggy too, so no brain surgery those days. And I can get ravenous.. so I let myself eat easy to digest, safe foods. I definately warn those around me that I may be lazy, angry, unreasonable, not... -
ARCHIVED Is Smithfield Ham gluten-free? I'm Confused...
ang1e0251 replied to ang1e0251's topic in Gluten-Free Foods, Products, Shopping & Medications
Now that I have been reading about nitrites and nitrates, I wonder if I was reacting to those. Good call, DMarie. I will watch out for those. I seldom eat lunchmeats or ham. But now I know that I might not tolerate nitrites & nitrates. -
ARCHIVED Gluten Free Thanksgiving
ang1e0251 replied to SAHM2one's topic in Gluten-Free Recipes & Cooking Tips
Oh man, you guys are getting me in the mood! For your chocolate cream pie, the filling is easy. Make gluten-free chocolate pudding and as part of the liquid add about a tablespoon of strong coffee. Coffee brings out the flavor of the chocolate, enhancing it and giving it a richer depth. I think gravy made with cornstarch is excellant. ... -
I have also made mock "pumpkin" pie from cooked carrots, it's very good.

I'm really stumped and at a loss whether or not I can eat ham now. I did not baste it mearly fried it with my eggs in my regular pan with my regular utensils. These are the ones I use daily. I don't know about my friend. She mentioned she used the ham to canned bean soup but as I said, she is an old hand at this so I know she is careful about... -

ARCHIVED Is Smithfield Ham gluten-free? I'm Confused...
ang1e0251 replied to ang1e0251's topic in Gluten-Free Foods, Products, Shopping & Medications
We both, unbeknownst to each other, had ham in our homes. My mom bought the ham shared & I had it for breakfast several mornings. I experienced what I call a "slow burn reaction". It takes 3-4 continuous use days for me to fianlly have a reaction, seems like it adds up over the days. My friend also ate in her home from ham she personally bought ... -
ARCHIVED Is Smithfield Ham gluten-free? I'm Confused...
ang1e0251 posted a topic in Gluten-Free Foods, Products, Shopping & Medications
I had a reaction to Smithfield ham that I ate over 3-4 days. My friend, by coincidence, also ate ham during that time and reacted. I don't know what brand she ate. The dextrose was the only thing I wondered about but it s/b OK in the US, right? "Cured with: water, corn syrup, dextrose, salt, sodium phosphates, sodium erythorbate, sodium nitrite... -
ARCHIVED Is There Anything I Can Do To Supress My Appetite?
ang1e0251 replied to blondebombshell's topic in Related Issues & Disorders
I apologize if I've misunderstood, are you saying after breakfast "everything is gone" because you have diarrhea? If that's true, you are still eating something you're reacting to. -
Does she likes eggs? I usually have eggs for breakfast. The protein is excellant and you can cook them in so many ways. What do you think?

ARCHIVED Recovery And Mental Clarity
ang1e0251 replied to mhb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Increased mental clarity? You Bet!! I am better and better as time goes on. I can really tell if I'm accidentally glutened, I feel so stupid. It's like a bad head cold where you are so stopped up that your reflexes are all slow motion. Before I went gluten-free, I was really hazy, couldn't recall names, words sometimes wouldn't come. Now if I draw... -
ARCHIVED Frustrated By My Sisters
ang1e0251 replied to Treen Bean's topic in Parents, Friends and Loved Ones of Celiacs
I feel your pain. I too have closed ear sister. She more than likely has some of it going on but even when she describes a yucky symptom to me, no reaction to "it could be celiac". She's really in denial. But I long ago stopped trying to help her with issues. She will listen but, you know, Angie couldn't possibly know anything, she's a tree hugger type...
