Also, chocolate chips used in ice cream is usually a gluten "no no" becuase flower is used on the lines for anti sticking purposes. A company cannot add flour to any food without declaring it on the ingredients label as WHEAT. However the OP said that he is sensitive to soy and chocolate commonly does have soy lecithen added. -

The endoscopy was a piece of cake. The easiest procedure I've ever had. Don't worry, I was nervous too but it really was nothing. If your dr wants to gluten challenge you, ask up front if you have severe symptoms will he dx you from that? I am gluten-free and without dx. My financial circumstances didn't allow testing so I just went for it. I probably saved myself months of testing and sickness. I've never looked back or doubted my dx. My body told me clearly what I could tolerate and what I couldn't. I won't say I'll never go to a dr again but now I do my own research and discuss it... -

Sounds like you probably have other intolerances. You can go to an allergist for testing if you wish. Others who have had this testing can speak up and say which type of tests is best. If you have the ability to find out if a food is made in a shared facility, then do so. Ask about how the equipment is cleaned and see if you feel that is acceptable. I agree that I lost weight until I started baking! The grains seem to put weight on me fast. Right now I'm pretty much off them again. The basic diet you described feels the best to me and the weight comes off slowly by itself. -

Is there any special reason why you need a dr's diagnosis? If you don't get anywhere again, why not just go on the gluten free diet? You don't need a diagnosis to do it and it is healthy to try. Your bloodwork could be negative if you are IGA deficient. If you want to know, you could post the results along with the lab's parameters here for someone to look at. -

I actually am on the Nuva Ring now. I resisted but it's actually the best I've been on. It's gentle with low doses of hormones and you insert it once a month. Now that I'm getting older, dr wants me to have a vaginal ablation to stop my periods. I'm wondering what will happen to my hormones if I'm off all the stuff. Past experience has not been good!... -

I'm sorry you're feeling bad! My cycles are the worst too. My dr finally put me on continuous birth control to stop them. You could be one of those people who starts out crappy then gets better over time. You might want to lay off the gluten-free processed foods for a bit. Those alternate grains can be rough on your digestion while you're healing... -

Instead of making yourself crazy with the possibilities, why not have him re-tested for celiac disease? Get a celiac blood panel drawn, if he is still making antibodies, then he is getting gluten somewhere. That would be a good place to start. What's a typical day's diet like? Have you been re-tested for blood antibodies? It would show if you are still being exposed to gluten.
