  10. Did you get tested for soy sensitivity? My reactions to soy are just as bad if not worse than gluten. I had no idea I had a problem with soy until I got the test.
  11. I have been using Arrowhead Mills cornmeal and just discovered that they also have a blue corn meal. I think my next corn adventure will be Blue Corn Dogs. I just made them with yellow corn (the day before I discovered the blue corn at Whole Foods).
  12. In one of the notes under her recipe she says ... "For a change of pace I sometimes use Pamela's Ultimate Baking & Pancake Mix as my flour mix (and leave out the baking soda, powder)." You could try using this if you don't want to mix up your own flours. I have tried some of her recipes and they have all been wonderful!
  13. For pie crust I use Betty Crocker's recipe with substitutions to make it gluten, dairy, and soy free. I usually use Bob's Red Mill Flour Mix, Spectrum Palm Shortening, and a touch of butter flavoring for the substitutions...next time I might try the new soy free Earthbalance for the shortening. I have also found it takes about twice the amount of cold water...
  14. I like Kinnikinnick's brown sugar cinnamon waffles. They also have original flavored ones, but I don't like them quite as well. I used to eat the Van's waffles before I found out soy made me sick and I think the Kinnikinnick ones taste better in my opinion.

  17. My husband thinks New Grist made by Lakefront Brewery is the best of the gluten free beers. We have been able to special order it from the liquor store.
  18. I really like Carol Fenster's recipe too! I make it diary free using rice milk or almond milk adding 1 Tbsp of cider vinegar per cup as recommended in her cookbook "Gluten Free, Quick & Easy". I haven't had problems with the batter getting thick after sitting, but maybe this is because of the different milk.
  19. I have been researching vitamins and found that Solgar's Vitamin D3 is free of yeast, soy, gluten, and dairy. It doesn't say free from egg, but doesn't look like it is in the ingredients unless it is disguised as something else.     I don't have a celiac doctor and have not been officially diagnosed, but with great results from the diet, I would not go back to eating gluten, dairy, or soy. My mother-in-law is a diagnosed celiac by blood test and biopsy. Her doctor is Dr. Buser (in Kansas City). She said he is very knowledgeable about celiac and she would definitely recommend him....
  21. I just started feeding my fish dried brine shrimp and thin paper sheets of seaweed. I found them both at the pet store. All of the flake food I have seen contains wheat and soy protein.
  22. I buy taco shells that are gluten and soy free. One brand is Art's...they also make blue corn chips that are really good. I think the other brand we sometimes get is Perez...it is in a green and white box. I think both companies are local to KC, so I don't know if other cities would have them.
