  1. I would venture to guess that you're probably deficient in certain nutrients (e.g., zinc, B vitamins, and/or silicon), and that's what is making your scalp itch and your hair to fall out. For me, those symptoms were relieved by taking zinc. If you decide to take zinc, it should be chelated zinc, and you'll need to take copper with it. Perhaps your doctor...
  2. I can't speak to the folic acid, but as for the Vitamin D....well, my mother had undiagnosed celiac disease when she gave birth to me, and I was born with ricketts. Not a good way to start out life....so perhaps the Vitamin D recommendation might be good to follow. Just speaking from experience...

  5. I agree with the above poster that you'll need xanthan gum. Otherwise, your cookies will fall apart and not be at all chewy. Whenever I make cookies, I use a gluten-free flour mix (usually from Bob Red Mills) and add 2-3 teaspoons of xanthan gum. I've never had to use an "official" gluten-free cookie recipe to make cookies....so it's really easy to make...

  7. Because you have positive bloodwork and symptoms of celiac, you probably DO have celiac--regardless of whether or not the biopsy is negative. Your gastro should have taken between 6-12 biopsies, not several. That's a tip-off that he is not well versed with diagnosing celiac disease.   10. Yes. IrishHeart, I have a Bella, too! And she's a special kitty: She can detect when my breast cancer returns. She's been right twice in the past year...and my oncologist refers to her daily sniffings of me as "cat scans." Thank goodness, she's only six years old--I want her to live a nice, long life...and to help me live one, too.

  24. As the poster above indicated, a colonoscopy will show NOTHING related to celiac. Please ask them to do an endoscopy instead of, or in addition to, the colonoscopy. Regardless of the results, though, you should definitely go gluten free for life. I'm so glad that eating gluten free helps you!
  25. I thought that all of the Van's gluten-free waffles contained soy flour--am I wrong? I got really sick from eating them the first time and then read the ingredient list. I was sickened by the fact that a gluten-free waffle would contain soy flour--it just didn't make sense. For breakfast, I either make a smoothie that contains all of my supplements....
