  1. Could it be vitamin and mineral deficiencies as a result of your celiac? It can take some time before your intestinal lining heals. Have you been tested for deficiencies?? I'm worried for your health....
  2. Yes, your symptoms are very consistent with celiac. I'm worried about your B vitamins--have you been tested for Thiamine and B12 deficiencies? Deficiencies in these vitamins can cause memory problems, diarrhea, and fatigue. Also, you should definitely get tested for iron anemia. The fact that you're not having periods AND you're having memory problems...
  3. Wow! Those are great ingredients! Very healthful and good choices for a snack that will give you energy. I'll bet your husband couldn't cook his way out of a paper bag (am I right??). Maybe he just doesn't like food that is healthful and prefers the processed type....oh, well. Enjoy your delicious snack! As for gluten-free cooking, I simply use regular...
  4. That's a good idea! I contacted a local magazine about five years ago to write a positive story on the restaurants that offered gluten-free menus in our area, and they were very interested in publishing it. They had scheduled the story to run two months from the time they interviewed me about my idea...and then I got diagnosed with breast cancer a week...
  5. I can only suggest eliminating ALL grains (including rice) and beans. In reading about how our digestive systems have developed and evolved over time, I've learned that humans simply cannot eat these particular foods. Because you're a vegan, you would probably not consider reading about the primal/paleo diet...but if you're interested in getting to the...
  6. Ah, the bitterness of accepting the gluten-free diet. I remember it well. It took me about three years to get over the pain of watching other people enjoy foods that I used to love to eat. However, I eventually either forgot how things tasted or had come to terms with the fact that those foods were poison to me...because I no longer feel tempted by those...
  7. Since this job doesn't yet exist, I'm also pondering which classes or degrees might help me further my goals. I only have a B.A. (I'm classifed, not certificated, though I've taught at the postsecondary level) and have thought about returning to earn my Master's in Health Administration....but that sounds sooooo boring (and costly!!). I'm always looking...
  8. Actually, your children may hold the key to your "official" diagnosis. I'd had every symptom in the book since I was a child, and when I finally figured it out at age 47 (I'd given up on doctors by that time), I simply went on the diet and became well again. However, I had my son tested because he had many of the same symptoms....and he tested positive...
  9. I work in education, but I'm hoping to retire soon in order to work in the medical field. I would very much like to create a job, such as health advocate, that would help doctors understand how to identify celiac...and help patients who have been newly diagnosed. Of course, this is a dream job that doesn't yet exist, but I would like to pitch it to Kaiser...
  10. After going gluten free more than seven years ago, it took about 18 months for the daily diarrhea to resolve. My arthritis and muscle/connective tissue problems (e.g., muscle soreness, tendinitis, carpal tunnel) resolved somewhat and finally went away completely after I started taking a ratio of Omega 6s to 3s. I won't get into that, because that's a huge...
  11. Thanks, Pricklypear! It's nice to see this type of thing in print. Twenty-five years ago, it was difficult to come up with any information, and I was left to do research at libraries, which contained outdated books. Thank goodness, the Internet arrived and saved me eventually.
  12. Yes, I have celiac--was diagnosed more than seven years ago, but I believe it was triggered when I was 11. Even so, I had horrible bone, muscle, and connective tissue pain from birth because I was born with Rickets--we believe my mom's celiac was triggered during her pregnancy with me, so I was born with nutritional deficiencies. Three hours away from...
  13. prickleypair1971, I'm also an organic gardener, and I never even thought about how the fish emulsion, Wonder Grow, and MaxSea might be affecting the soil. Since most of the organic fertilizers I use are of the spray type (as you also indicated), I use them exclusively on foliage. Funny, though--I never considered that they'd be high in iodine. Duh!...
  14. Luckily, I haven't been cc'd yet with gluten-free pizzas that I've eaten at four different restaurants in California. I can't vouch for all such restaurants, but I've been lucky so far.
  15. You sound ideal! Cynthia Kupper can be contacted at 253/833-6655 or cynthia.kupper@gluten.net . Also, if you live anywhere near Marin, there's an active GIG chapter there. It's the first and, I believe, only GIG chapter in California If you're interested in their contact information, just let me know. Where do you live in Northern California?
  16. I only eat pastas and other foods that are certified gluten free and completely avoid those products that are made in facilities or on equipment that processes wheat. I eat only Tinkiyada and Glutino brands of pastas. I know that learning to read labels is important, and soon both you and your daughter will easily recocgnize exactly which products you...
  17. AVR1962, The ratio of Omega 6s to 3s should be anywhere from 1:1 to 2.5:1. Therefore, you would need to take 1/2 teaspoon of organic flaxseed oil along with 3/4 teaspoon of organic safflower (or grapeseed) oil in a glass of juice. Not only will your muscles not hurt, you'll be able to work out harder and longer.
  18. Thanks so much, Skylark! I'll take a look at the literature over the three-day holiday. Yes, I agree that it's very complex....and I hadn't even considered the natural fertilizer possibility. No matter what caused it, though--it's here to stay. I really appreciate your taking the time to explain this concept. Are you a chemist?
  19. Have you tried contacting GIG directly? They're very friendly people! I worked with them when they were developing their restaurant training program because I was developing a similar program for my senior project while attending St. Mary's College in Moraga. (By the way, which part of Northern California do you live in? I live in the S. F. Bay Area....
  20. Skylark, I appreciate your comments...and I hope they're accurate. I spoke with a geologist on this matter some years ago, and he was vehement that once iodine mixes with soil, it becomes part of the food chain forever. However, you seem very knowledgeable about this subject, and I would be interested in learning more. Do you have any information that...
  21. I NEVER eat in a Chinese or Japanese restaurant (except PF Chang's), because I always get sick afterwards. I assume it's because they're cooking the food in a pan that had regular soy sauce in it earlier or the grill wasn't cleaned. Oftentimes, there's a language problem, and I assume that they truly don't understand how sensitive a person with celiac can...
  22. Is she not using a gluten-free shampoo? Does she wear lipstick or chapstick that isn't gluten free? Does she share tools or equipment with students or friends who eat gluten and perhaps haven't washed their hands? I assume that, as a high school student, she's moving from classroom to classroom and placing her hands on each desk where she sits. Cross...
  23. I used to think that muscle soreness after weightlifting or other strenuous activities was normal, but I came to accept that I was wrong. Soreness indicates that there is excess lactic acid...and this means that there is LOW OXYGENATION of the cells. This is very bad. Unless you read Brian Peskin's book, you will consider muscle soreness after exercise...
  24. Perhaps I can shed a bit of light on this. A lot of feed/grass is grown in soil that was contaminated with iodine back in the 50's and 60's when nuclear testing was done in Nevada (and possibly other states) with radioactive iodine. While the radiation eventually dissipated, once iodine gets into the soil, it's there for pretty much an eternity. It gets...
  25. Okay, I'm guessing here. First, it's possible that the weight machines you used were used previously by people who had eaten gluten....in other words, you got cc'd. However, I think it's more likely that you are experiencing excess lactic acid buildup in your muscles. This can happen with poor oxygenation of the cells (either from iron anemia or another...
