You might try eliminating soy, oats, and iodine, too--if it ends up that you actually have celiac, these three things can be problems for many people who have celiac. -

If you DO try Udi's again, the way to make it especially soft and yummy is to place a couple of slices into a plastic sandwich bag and leave it in your car for a few hours. Your bread will be steamed to perfection for any type of sandwich. Usually, I just microwave a few slices when I'm in a hurry, but then the bread is a little stale tasting; however,... -

Erewhon makes a great crisped cereal, and it's gluten free. As for the mainstream cereals, both Cocoa Pebbles and Fruity Pebbles are gluten free (but the marshmallow varieties aren't). -

This IS complicated! And I can only say that I called every thyroid hormone replacement lab in the U.S., and every single one assured me that their product contained iodine. Before I went on thyroid meds (and I've taken BOTH Levothroid and Armour), if I accidentally ate gluten, I didn't break out into DH blisters because there was no iodine in my system... -

Your doctor is probably unaware that there are four different types of tests for celiac, and experts recommend that a minimum of two tests be done. Regarding your question about if there are any options for taking medications without iodine, no, there is no other option. I called every lab in the U.S. that manufactures thyroid meds, and they all said that iodine was crucial. Boo hoo.... Your tiredness might be because you have either iron anemia or pernicious anemia (low B12), or you might even have a thyroid condition in addition to possible celiac. It sounds as though you need some testing to get some answers. I also get achy bones and joints when I'm accidentally "glutened." So, celiac is definitely a possibility for you. -
