ARCHIVED Healthy Bread In Five Minutes A Day
Roda replied to halfrunner's topic in Gluten-Free Recipes & Cooking Tips
Has anybody experimented with substituting some of the brown rice and sorghum flours? I was wondering about using some teff, amaranth and/or millet in the recipe. -
ARCHIVED Easy, Yummy Bread In Minutes
Roda replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
So far this is still my favorite bread to make a sandwich with. I mix up a single batch and spread it in a rectanglar glass dish and microwave for about 70 sec. I have substituted the brown rice flour with sorghum and did not like the taste as much. I also have used half brown rice/sorghum flour and it tasted much better. I still prefer it with its original... -
ARCHIVED Favorite Recipe For Last Year
Roda replied to purple's topic in Gluten-Free Recipes & Cooking Tips
I have made this twice. I used the exact flours in the recipe. Flavor was alright but I found it to be way to dense. The first time I chalked it up to forgetting the honey (no food for the yeast). Second time I did it right and I even saw the yeast working. It did not raise any highter than the first loaf. Maybe my yeast was bad. Any ideas? -
I have been wanting to host a party. I have been to one years ago and the representative demonstrated the products by using and making a few food items. Has anyone hosted a party gluten free? I could easily get with the rep and substitute ingredients, but what about the bakewear etc? would it be alright? I would say no to anything done on stonewear....

ARCHIVED Favorite Recipe For Last Year
Roda replied to purple's topic in Gluten-Free Recipes & Cooking Tips
Did you use the called for flours or did you substitute any? This sounds like it would be good baked in my new clay baker. -
For all you that exercise on a regular basis, I have a question. I have began exercising at the end of December. I have been using the EA Sports Active on the wii. For some this might not seem alot, but I have been pretty much exercise intolerant for the last few years. Since raising my ferritin levels, I have been able to exercise. The only problem...

If you didn't have access to soap and water, would hand sanitizer get gluten off your hands enough to prevent cross contamination? I ask because I made my kids/husband sandwiches on a road trip and used sanitizer after touching their bread before I ate my sandwich.

ARCHIVED Heart Palpatations/Shortness Of Breath
Roda replied to kampingal's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I had the heart palps and shortness of breath and it was directly related to my ferritin being so low. I have just this past August gotten my ferritin level up enough for these symptoms to subside but I still need to get it up more. Two and a half years before diagnosis this caused me to go to the emergency dept twice and put on metoprolol.(didn't know... -
ARCHIVED 3 Months Of Gluten Free
Roda replied to secretsauce's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
FYI I'm one that reacts badly to gluten free oats. Like the other poster said, try avoiding them and see what happens. My main gi complaint was acid reflux. It was the first symptom to go away. Now if I am glutened it is the first thing to come back. I have noticed the longer I am without gluten and if I get glutened, smaller amounts now are setting... -
ARCHIVED Spices
Roda replied to beksmom's topic in Gluten-Free Foods, Products, Shopping & Medications
If you are gluten free it is wheat, rye, and barley to avoid. Anything with malt in it is off limits too (made from barley). Some people can eat certified gluten free oats, but I am one who reacts very badly to it so I don't eat them at all. I did replace my wooden cutting board, wooden utensils, baking stone and got a small cheep 2 slice toaster just... -
ARCHIVED Spices
Roda replied to beksmom's topic in Gluten-Free Foods, Products, Shopping & Medications
All single ingredient herbs/spices are gluten free. Others have posted that McCormic will disclose gluten. I did not replace my herbs/spices but I knew they did not have any contamination (ie use measuring spoons in flour/gluten ingredients and then use them in the spice/herb containers). I did replace my powdered, brown and regular sugar since I would... -
Well I went and got it this afternoon. Hubby and I took out the old one and hooked up the new one. Wow! We broiled ribeye steak and they were done in no time. It is nice to that the broiler is a top broiler. No more bending down on the floor to open the drawer! It has two bake options: conventional and convection. The manual recommends lowering...

Do you still bake for the recommended time or is it less too?

ARCHIVED Question About Everyday Minerals
Roda replied to hermitgirl's topic in Gluten-Free Foods, Products, Shopping & Medications
I sent for samples a long time ago(before gluten free). I loved it. I've been using neutrogenia mineral make up and there is no comparison. I found an old sample and started using it. I am going to order some soon. -
My oven has been possessed. It has not been right for about a year. I have already spent around $140.00 in repairs/labor and if I try to have the supposed problem fixed again, I'm looking at around another $150.00. I just don't think it is worth it and I am probably going to buy a convection oven. Any tips or suggestions for baking when going from a conventional...

ARCHIVED Quinoa Flour
Roda replied to Roda's topic in Gluten-Free Foods, Products, Shopping & Medications
No other flours mixed with it. Just nasty. I like to eat quinoa and I rinse it before I cook it several times. I bet it does not get rinsed before grinding. -
I decided to try quinoa flour. I bought a bag of Bob's Red Mill. I thought it smelled bitter. I then decided to try a chocolate fudge cupcake recipe (on the back of the bag) and there is a strange bitterness to them. I did make them sugar free using erythritol and some stevia extract (non bitter) but I don't think this made them taste off. I have used...

ARCHIVED Help Me Figure Out What Had Gluten
Roda replied to Coleslawcat's topic in Gluten-Free Foods, Products, Shopping & Medications
Were your herbs/spices ones you had prior to going gluten free? There is a chance that they are contaminated from using them prior. I did not replace my herbs/spices because I never "double dipped" the measuring spoons. I did however, replace my powdered sugar, brown sugar and regular sugar because I would use the same measuring cups when measuring ingredients... -
I have noticed when I am typing a response that I can not always see all of the text on a line. The advertisements seem to me to be getting in the way. Also if I happen to proof read my response before posting and I find an error, if I go back up to an area to fix, it the box seems to "jump" and you can not see where your cursor is. You have to scroll...

I am back on track now going into week two. My husband also got me an early birthday present of ea sports active for the wii. I have been doing this almost every day. It will really get you going if you have not been doing to much exercise like me. I really like it and it is fun and I don't think I will get bored with it any time soon. I can already...

Any time I eat alot of salads/beans after a period of not having alot, I tend to get an upset stomach. For me it is the increase in fiber that bothers me. If I gradually build up then I'm fine. Maybe it is just to much fiber at one time and try increasing it gradually.

I was a little overweight before diagnosis but lost 10 lb in the month before my biopsy. I think it was nerves. I gained the 10 lb back and then some more. I am now trying to follow the south beach way of living with modifications for gluten free. I am now able to tolerate exercise and have been working out with the ea sports active. My husband bought...

I would have my mom's fried chicken with homemade egg noodles in a chicken broth/gravy and dumplings on top. I'm drooling just thinking about it.
