ARCHIVED Need To Vent
Roda replied to A&Z'S MOM's topic in Parents, Friends and Loved Ones of Celiacs
I always pack something for me to eat if I am going to be away from home for awhile. I even pack snacks etc. for my kids also and they are not on any restricted diet. When we travel to my parents (560 miles away) or my inlaws we always pack a cooler so we can eat on the road. -
ARCHIVED Potato Flour Vs Arrowroot Flour/starch
Roda replied to Roda's topic in Gluten-Free Recipes & Cooking Tips
Well Purple, I managed what I call a sucess with the sugar cookie recipe. I used a mix of 1 1/2 cups sorghum flour, 3/4 cup cornstarch (all I had), 3/4 cup arrowroot starch/flour, and 1 cup tapioca flour. I made the sugar cookies that my boys and I are crazy about (originally made with BB flour) and they turned out good! My husband tried them and liked... -
ARCHIVED Significant Other Wants To Say Something
Roda replied to txplowgirl's topic in Coping with Celiac Disease
I was thinking the same thing. My husband and I joke around in a way that most people think we are odd. For us it is a good, as you say, tension buster and we can get on with things. We have a very strong and open relationship. Alot of the time at his work and mine all I hear is people takling very negatively about their spouse. If they would just open... -
ARCHIVED Can A Celiac Live In A Gluten House?
Roda replied to karenhockley's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I am in a shared house also. Our meals that we eat together are gluten free. The kids still eat cereals, bread, and pasta. However, most of my baked goods are gluten free. If on the off chance they want a goody that is not gluten free they keep box mixes of brownies, cake etc and make it when the mood strikes. They have their own set of utensils for... -
ARCHIVED Potato Flour Vs Arrowroot Flour/starch
Roda replied to Roda's topic in Gluten-Free Recipes & Cooking Tips
Well, I was going to try this mix in my sugar cookie recipe I usually make with the Better Batter Flour. Do you think it would work? My sugar cookies always come out great so I'm a little nervous. -
ARCHIVED Significant Other Wants To Say Something
Roda replied to txplowgirl's topic in Coping with Celiac Disease
I am the one with celiac the only one in our household of four. My husband and two boys do eat alot of gluten free food as our meals that we eat together are all gluten free. In the event we have pasta, we cook regular for them and gluten free for me. It has worked out so far. I feel that my husband would benefit from a trial of gluten free, but that... -
ARCHIVED Potato Flour Vs Arrowroot Flour/starch
Roda replied to Roda's topic in Gluten-Free Recipes & Cooking Tips
I have all of those ingredients in the house except potato starch. I was thinking of doing a mixture, following your recipe, and using a combination of cornstarch and arrowroot. I'm excited now! -
ARCHIVED Anyone Have Ct Enterography Done
Roda replied to Roda's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I wasn't to terribly concerned I actually have or will develop the small bowel cancer and I don't mind having the test done either. It is pretty non invasive, drinking some contrast and getting the iv contrast. I just figured if he was going to recommend it that the years undiagnosed with symptoms should factor in. I see alot of people that come in through... -
Point well taken and I do agree with you. Unforunately the first thing people catch when they read something like this is it's a fad and make assumptions for people who are on the diet for legitimate reasons. I guess you can't have it both ways sometimes.

ARCHIVED Iron Deficiency/ Hair Loss
Roda replied to NOLA-girl's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I have been iron deficient since 2006. Ferritin never above 10 and lowest was 4. I finaly started tolerating oral iron supplementation this August and I have raised my ferritin to 33. Still a ways to go but definately better. I shed a lot of hair, but recently I have noticed the hair loss has decreased and I have new hair growth coming in! It does... -

ARCHIVED Anyone Have Ct Enterography Done
Roda posted a topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I went to my GI appointment Monday and it was a pretty straight forward visit. The doc liked the way my ferritin and iron was improving and told me I was not showing any signs of malabsorbtion. He mentioned that eventually I would need a small bowel x-ray in particular CT Enterography. I do know what this is (I'm an X-ray technologist), but was wondering... -
ARCHIVED Newly Celiac, Questioning Diagnosis
Roda replied to Caniac's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
How were you diagnosed? There are plenty of people that are suprised by the diagnosis because they say they did not have symptoms. Alot of those people also, after being gluten free for some time, realize that some of the everyday things that they thought were normal have improved. Sure it could be a coincidence that both gave you problems at the same... -

If you wouldn't mind telling me, what all is in your sorghum mix? I've been partial to this lately. -
ARCHIVED Need Great Holiday Cookie Recipe - I Want To Blow Them Away!
Roda replied to Lynayah's topic in Gluten-Free Recipes & Cooking Tips
Yes. Be aware though that when baking cookies with butter they tend to spread more than with shortening or margarine. Test bake one and see. If needed add more flour. -

I'm having a hard time correcting my 5 year old. He says yogrit for yogurt. His father says it like this too. Grrr. -
Back in September I decided to loose some needed weight. My parents actually got me excited about it. I started the South Beach diet and by six weeks I had lost 13 pounds. I didn't cheet and was really proud of myself. We had our halloween party and that was the first I had strayed from my diet (no I'm not cheeting with gluten at all!). It went down...

Well, I just winged it and went for an appointment this morning. I really liked this new doctor and her personality made me feel at ease. She was easy to talk to. I knew that she "got" celiac by a comment she made. She said something to the fact that I was lucky my blood work was positive and went on to say that there can be alot of false negatives, even...

ARCHIVED Yippy! Spam Is Gluten Free!
Roda replied to Glamour's topic in Gluten-Free Foods, Products, Shopping & Medications
My mom used to slice it and fry it in butter and we would eat it on toast. For some reason that sounds good. Now if I could find some gluten free bread to toast that tasted good. On a side note Underwood Deviled ham spread is gluten free too. Here is a link to B&G Foods, Inc. products that are gluten free including the deviled ham. Open Original... -
ARCHIVED Potato Flour Vs Arrowroot Flour/starch
Roda replied to Roda's topic in Gluten-Free Recipes & Cooking Tips
Thanks for the clarification. I have learned something new today. I have been more eager to experiment with blending different flours/starches than I was a year ago. -
I don't know about the celiac connection, but I can relate to periods being wacky. Before gluten free my periods came like clockwork every 28 days. I did have horrible pms symptoms that my husband said I was not fit to be around. Since gluten free the severe mood swings of pms have resolved (thank goodness), but my periods never come the same time. For...

ARCHIVED Potato Flour Vs Arrowroot Flour/starch
Roda replied to Roda's topic in Gluten-Free Recipes & Cooking Tips
I was going to make a flour blend that called for 1 tablespoon of potato flour, 1 cup cornstarch, 1 cup tapioca flour and 1 cup rice flour. It may be to much effort. I may just go buy a premixed blend to make Santa some cookies. I ran out of Better Batter and have not ordered anymore. I have not been baking much, but when I do I have been using coconut... -

I made these today and they are really good. I had my own almond meal that I had made in the blender and the texture was good enough for me. I shared some at work and got rave reviews. I liked them warm with strawberry polanar all fruit spread.
