  4. I am going to the MN State Fair on Thurs. I have avoided it several years and am now ready to face "everything on a stick...."   5. Lots of homemade ice cream has flour in it... so I would not be surprised to see it in the commercially made stuff. Like everything else, it is a must to check the label and not just assume that it is gluten-free.
  6. I have permanent neurological damage from gluten. I take B12 shots and that does help but the neuropathy in my legs and feet is still there. Some days it is worse than others but it is better with the B12 shots. Good luck.....
  7. This looks easy.... I no longer do much baking but might be willing to give this a try. Can you make up the pizza crusts, bake them with no toppings and freeze them for later use? Just curious... if you have never tried to do this, I may still give it a try and see if they can be frozen after being baked.
  8. The pretzels are great.... Both of my daughters like them better than the regular ones. (Neither have celiac disease). I think that they are the one thing that really tastes like the "real" thing!!!

  11. When I first went gluten-free, I was so overwhelmed by the diet that I just ate hamburger, lettuce with a lemon squeezed on top and baked potato with all the butter I wanted.   15. Just curious, were the blisters on your hands really deep and do they develop within what seems like seconds? I used to get these all the time and just thought that I had touched something that I was alergic to but now I wonder, were these also a symptom of getting glutened? I haven't had them for years. They also really itched!
  16. I never freeze the pasta with the sauce. I freeze it in plastic bags and then when I am ready to use it, I just put it in a colander and run very hot water over it until it thaws in only a minute or two. I have found that reheating it makes it mushy. This method doesn't seem to do that. I add the warmed up sauce and it is good to go!

NONE of the breads taste like real bread..... that being said, I do make bread in my bread maker and when it first comes out and is still warm, the end piece has the texture and taste of real bread (of course, I eat it with lots of melted butter on top). I do miss sandwiches so I have learned to "like" my gluten-free bread. I usually toast it or grill it...

  20. I never cook the noodles before hand and I have used all different brands of noodles. I just put a layer of sauce on the bottom of the pan and then just layer it starting with the noodles.   24. I tested negative for a wheat allergy but with flattened villa and a positive biopsy, there is no doubt that I have celiac disease. An allergy is a whole different ballgame than celiac disease.
  25. Some grocery stores sell frozen cookie shapes at Christmas. I used to buy these when my kids were little. After all, it seemed that the most fun part was decorating the cookies with frosting, etc. for me it eliminated the mess of 3 sets of little hands trying to make the cookie batter and we all had a lot more fun when mom wasn't stressed!
