The crushed tortillas that I bought.... (they came in a round can) were REALLY nasty. I tried them on Tuna Casserole and thought they were just plain yucky!!!!! I also tried them in a meatloaf and again they were really nasty. I guess I am beginning to think that if they don't taste like the real thing, they are not worth wasting my calories on them! ...

Your Pot Pie sounds like an old family recipe on my mom's side. I just made it for my two daughters. Unfortunately, I had to use real flour as I do not think that it can be made using a substitute flour. If you come across a recipe, I sure would like to know. It was fun to teach my daughters how to make it. Even if I can never have it again, it was...

ARCHIVED Healed And Never Get Sick
sparkles replied to Lisa's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
If you have a diagnosis and know for sure that you have celiac disease, why would you do a gluten challenge? -
ARCHIVED Frozen Food Suggestions
sparkles replied to JustMe75's topic in Gluten-Free Foods, Products, Shopping & Medications
Be careful with Amy's frozen foods. Some of the labels read, "NO GLUTEN INGREDIENTS".... and on the other side, it says that they are produced in facililties that process wheat. It depends on how sensitive you are. I really liked the enchiladas, mac and cheese, and the Mexican bowl. They were fast (expensive) but fast and made great lunches but they... -

ARCHIVED How Do I Overcome Bad Advice?
sparkles replied to sharps45's topic in Parents, Friends and Loved Ones of Celiacs
Your nephew is 22.... seems like IF given some correct information, he might make the right decisions about his diet. Print up a few articles about celiac disease or turn him on to this site. But like everything, some people find it easier to ignore the facts and stay in denial. Let's face it, if we could just eat a "little" gluten, life would seem much... -
ARCHIVED Thanksgiving Is Coming!
sparkles replied to Offthegrid's topic in Coping with Celiac Disease
Be careful of the prime rib. If it is one that is purchased with rub already on it, it very well could have a flour base!... Also some ham is not gluten free.... I know that it sounds like they should both be gluten-free, but better check out the brands and make your decision based on that. Also most AuJus has wheat in it. -
I know that they have a gluten-free menu and I order from it BUT still get sick!!! I think like most restuarants CC can and does take place. I think you just have to learn from experience and even if they say gluten-free, be prepared for CC. There are only a few places that I really trust!!!! PFChangs is NOT one of them...least ways the one in Edina,...

ARCHIVED Thanksgiving Is Coming!
sparkles replied to Offthegrid's topic in Coping with Celiac Disease
After accidentally getting glutened at family gatherings, I decided to just bring my own Thanksgiving dinner. I roasted a turkey breast, made stuffing, corn pudding put it in a plastic container and while everyone else was gathering their food, I put mine on a plate covered it and heated it in the microwave. I enjoyed my meal.... ate some salad that I had... -

ARCHIVED New Article By Dr. Peter H.r. Green And Dr. C. Cellier
sparkles replied to ENF's topic in Publications & Publicity
I get tired of seeing "losing weight" as a symptom of celiac disease. I am overweight, the result of having celiac disease, and would like to see that part of the disease acknowledged and addressed. Has anyone here seen it addressed by a doctor? If so, I certainly would like to read about it. The article was really interesting BUT, my villa were flattened... -
ARCHIVED Feeling Sick And Blood In Stool....starting To Get Worried
sparkles replied to Sweetfudge's topic in Coping with Celiac Disease
NOT to scare you, BUT the blood in my stool was the first sign of colon cancer! Don't ignore this... it could be nothing or it could be something.... and that something can be fatal! The blood went away after a few days but by that time, someone had cancelled their colonoscopy and I took that appointment and the cancerous polyp was discovered. If I had... -
ARCHIVED My Doctor's Daughter Has celiac disease
sparkles posted a topic in Coping with Celiac Disease
I went to the doc the other day and as soon as my doc came in the room, she informed me that her daughter had been diagnosed with celiac disease. I said that is too bad and my doc' response was basically, "It really isn't a big deal. I gave up bread and pasta a long time ago." ..... so all her daughter has to do is the same thing. I wasn't up to an argument... -
ARCHIVED Do You Take Communion?
sparkles replied to dandelionmom's topic in Coping with Celiac Disease
It seems to me that sometimes the rites of religion get in the way of God. In my old church (Lutheran), I used to help serve communion and prepare the communion table. I felt very privileged to be a part of this sacrament. Communion has always been very special to me. When I found out I had celiac disease, I felt like I had lost a very important part... -

ARCHIVED Insensitive Spouse
sparkles replied to p38lightningbolt's topic in Parents, Friends and Loved Ones of Celiacs
Knowing first hand how difficult it is to leave an abusive relationship, I won't question your reasons for staying BUT that said, perhaps YOU need to question your reasons for staying. He is threatening your health.... I am not sure that "murder by wheat" would stand up in court but you must know that the outcome of injested wheat can be colon cancer as... -
ARCHIVED Husband Still Doubts Dx...getting So Tired Of It!
sparkles replied to Sweetfudge's topic in Coping with Celiac Disease
This is probably really harsh but I would sometimes like to surprise my non celiac friends with a little ex-lax (or maybe a LOT) in some brownies. Wait for the intestinal pain and embarrassing trip to the bathroom and then say, "Oh my, it must be CC with the ex-lax that was on the shelf." I know, I know, it is a little weird... but it might get the point... -
I like the fact that they took the disease seriously and were very upfront and honest about their possibility of CC. Hats off to Red Lobster.... though I haven't eaten there for a very long time and probably won't in the future, I do appreciate their honesty!!!!!

ARCHIVED Bruises Easily...anyone Else?

Check B12 levels! and the other B complex vitamin levels.... Sometimes the low normal range still indicates a problem. -
I have literally scratched the skin off because of this itch... no bumps, just itch! I don't think it is DH. I had a skin dr check it and the biopsy came back not DH. Of course, he could only biopsy the areas that were scratched off as there were no bumps. I wonder if besides celiac disease it could be an allergy to wheat though the allergy tests on wheat...

I used to love "eating" my way through the fair.... if only they could come up with gluten-free onion rings and cheese curds, mini donuts, pronto pups, chocolate chip cookies ( that taste like the REAL thing).... BUT I am glad to hear that the pork chops are gluten-free. That was always our first stop as we parked behind the Heritage Square and began our...

I grow my own or use McCormick, Tone, and Durkee. Check their websites. They list what is gluten-free.
