  1. IBS - A day or two - also had to eliminate dairy. Acid Reflux - A day or two, still get occasionally due to issues with digestion of fats. Oils seem to cause me the most trouble, and dairy of course. Sleep problems - I'd say I started sleeping like a rock after about a week. Lack of energy - Still struggling with that, Vitamin B supplements help a lot...

  3. I believe Amaranth has insoluble fiber in it which can be very rough on the system. It scrubs the intestines. I know I have issues with foods high in insoluble fiber, it could be that.
  4. Add me to the list as well. First year of college got really sick, lost almost 30 pounds, I was already a little underweight, 6-2 and 160lbs. Saw a GI, thought it might have been Celiac, so he tested for that. Before I got the results I went gluten-free and noticed some improvements but immediately stopped that after finding out the tests were "negative"...
  5. Perhaps your body has just become more sensitive to gluten? And when you accidentally ingested gluten it released all the antibodies it had stored up? Those are just guesses, I really don't know what I am talking about. But I have noticed that after going gluten-free I have become more sensitive to gluten.
  6. Took me about 3 months. B12 complex helped a lot. Now I take one maybe once a week if I need it.. Exercising also gave me a lot of energy during the day and helped me sleep like a rock.
  7. My guess is that he is having issues with other foods. I would start out by cutting out dairy, soy, and corn. When I initially went gluten free I felt amazing then I had some setbacks. I have found that for some reason corn bothers me. A lot of people have sensitivities. When going gluten-free you expose yourself to a lot of foods that you did not normally...
  8. The only sure fire way to know, I think, is if you have Thrush, which is Candida of the mouth. The symptoms are too broad and varied and as far as I know, they can do a stool culture test but I have heard that Candida is already present in out GI tract so the tests are very unreliable anyhow.

  10. Does it truly make you constipated? I have found that sometimes apples make me bloated cause of the fiber, but never constipated. In the past I have confused bloating with constipation.

  14. I have the same issue. BUT, recently just got an awesome idea from someone else; mix rice, chicken, beans, salsa, corn, peas and carrots. You can carry it around in a tupperware container, I like to eat it cold but you could also heat it up in the microwave before you go. I use Birdseye Steamfresh rice with mixed vegetables, Bush's baked beans, Newman's Own...
  15. You bring up another good point. Sometimes the signal for thirst can be misconstrued as the signal for hunger. SO if you think you are hungry drink some water and see if you are still hungry afterwords.
  16. I can definitely relate to gluten cravings/addiction, whatever you want to call it. And I definitely think I am still going through some withdrawal even though it has been two months already. I have to say it is very tough. I will be full but will still want more. It's very difficult when you are receiving mixed signals: your brain tells you you want more...
  17. Trader Joe's makes a pretty good almond butter. It is simply just roasted almonds (no salt added) and is gluten-free.

  19. I was at the beginning and then slowly weened off of them. How long does it usually take to be able digest fats properly again?
  20. I'm the same way. but if you think about it, it really does not matter one way or the other. I think, I know at least for me, that I am just channeling my frustration away from the real problem that I have to deal with: getting better. If I had a confirmation that it was Celiac, sure it might makes things a little bit simpler, but not necessarily better....

Sometimes not knowing can be worse, but then again, you never know how you will feel once you truly know the answer.   22. Is anyone else experiencing problems with fat digestion? I feel like whenever I eat a handful of nuts they just go right through me and I do not absorb them. I also get gas and burp a lot after eating them. They also do not seem to fill me up. It is difficult to get an adequate amount of calories while limiting fats. Especially when I seem to have a problem...

  24. Same for me, or I have eaten something with too much fiber, usually just the insoluble kind seems to aggravate me.
  25. I usually stay away from these products. I don't trust their definition of "thoroughly cleaned." Would you trust the person washing the lines? I have also found that some products made on the same lines as wheat/gluten are also hit or miss. I had 3 or 4 bags of Lay's chips, also made on shared lines, and was fine, but the fifth bag hit me like a piece of...
