Peppermint oil actually helped me a ton too when I had IBS, but once I went completely off dairy and gluten I didn't need to take them anymore. -

I personally have never taken marshmellow root caps.. but I can tell you what I do/have taken that seem to have actually helped a lot. A good multivitamin - definitely need to get one of these. Enteric Coated peppermint oil pills - really only need these if you have bacterial overgrowth, but I actually did find them to be very soothing when I had IBS... -

I actually eat Soy Ice Cream, I was bit skeptical at first but it is awesome. It's called Purely Decadent, Moca Almond and Chocolate Chip Cookie Dough are amazing. They're gluten and dairy free. Unfortunately not much. The only thing you can really do is minimize your intake of them as much as possible and give yourself time to heal until you can tolerate them again. I have the same issue as you. It's seems the "healthier" I eat, the more out of wack my digestive system feels. It's funny how some of the best foods for you seem to be the most difficult to digest. I believe your issues with other grains are probably due to the insoluble fiber content - it is very rough on the digestive tract, scraping it clean. Do you have issues with cruciferous vegetables like broccoli and lettuce as well? -

I would say what you are experiencing is pretty common. It has happened to me a couple of times, I still get really bad D if I consume to much fat and not enough soluble fiber. Perhaps yours is caused by the same thing. Now, I tend to stick with peanut butter or nuts and avoid oils. I still have a lot of issues with fats but they just taste so good! I actually... -

In my experience the majority of people who go gluten-free after diagnosis gain weight, but stop once it levels out. So you might gain some, but I would not be concerned about gaining too much. -
I would have to advise against eating the same thing everyday. I know it must be difficult if you are allergic to a lot of things but I think that is partly how allergies form, by consuming too much of one thing and not eating a balanced diet. It really depends on what your issues with food are. If you just have poor digestion in general, you want to get one that digests carbs, proteins, and fats. Most recovering celiacs really only have issues with fats, so only a lipase enzyme is necessary. However, I have found it difficult to get just a fat digesting enzyme unless you order online. The human body is an amazing system so I suppose anything is possible, but I would think it to be very unlikely. If you were ingesting gluten it would continue to move through your digest track and eventually be eliminated within a couple of days, depending on fiber intake. I have never had issues with grains except for those containing insoluble fiber. But I would not be too concerned, it doesn't seem that unlikely and many people do have issues with most grains when initially going gluten free. Some people after they fully heal can eat a whole wheat sandwich and feel no ill effects. BUT that does not mean that no damage is being done. Many people are in fact asymptomatic. Not that I know of, but I had negative blood work and a negative biopsy. The real "Gold Standard" is the dietary response. It is the only truly reliable test in my opinion.
