  1. I use mine quite a bit since I purchased a few months ago. Lots of jerky (salmon, beef and chicken), dried fruit and dried herbs. I do not treat fruit with anything as the instructions suggested dipping in juice that I am intolerant of - apples, pears, blueberries all turn out great. I keep it on back porch or laundry room while it is running as the noise...
  2. Happy Easter Everyone!!! Mom is settled in a very nice skilled nursing facility in downtown La Jolla -- to start recovering from her incorrect dx and prescribed meds given over the past 9 months. Long road ahead but I am extremely hopeful this little dynamo will be back walking her 3-4 miles a day in the coming months I'm not posting anywhere else...

Hey Guys...been consisting on "astronaut food" for a few days -- oh that is baby food in squeeze packettes I've used as safe food for awhile -- was happy to see them at the SD Celiac fair recently and they are making grown up versions -- sorry tired and rambled. tonight hubby and son made tons of tri tip and other stuff for everyone left over for house show...
  5. I make cookies - then freeze. I find it easier to make them all at once and then put in quart size ziplocks or -- if ambitious the sealer. They taste great when pulled outta the freeze - or so I am told by my hubby and sons. edited to add....i saw something about batter...pancake, waffle or aebleskeiver batter lasts for AT LEAST a week in the frig.
  6. ok..lazy...didn't read whole thread - but thought I'd add smart and finals HUGE jug of cheap soy sauce is gluten free -- have no idea what other offending items may be in this jug - this is what my gluten-free men use often for multiple uses. for me - I stick with SanJ Tamari -- can't have it often, but is definitely gluten-free and the one I trust...

Pete in the dinner thread -- with a yummy Italian evening to boot Dinner here is a very large meatloaf -- if I didn't use up too many bread heals with stuffing the other night -- otherwise I'll punt. Mashed potatoes - sweet for me. Peas for them - Asparagus for me. Brownies -- and I am eating one!
  8. Ditto what Peg said -- Quinoa has a really high lectin content -- I was eating it a lot when first diagnosed -- as it is supposed to be a great gluten-free food. It is indeed a wonderful gluten-free food, but it is also extremely hard to digest if your digestive system is damaged. Remove it for awhile - but do trial it again at some point -- will likely...

  13. Hubby made my favorite gift of cauli fried rice -- he has gotten so good at it -- I don't think I'll ever attempt it again and steamed broccoli - left the bbq tending of the steak to son. All delicious -- is it me or does it taste better when someone else prepares? Perhaps I was just happy to be home -- Mom is trying to use walker regularly -- finally...
  14. Here is something you can tell him... "Thanks Doc...I have Celiac Disease and you are fired" or "I have determined I have Celiac Disease and you need to read current research regarding my condition so you will know as much as I do". Joking aside -- a good primary can take care of your follow up unless you need subsequent endoscopic biopsy......
  15. Just have a minute -- but if gastro refused BASIC celiac antibody testing -- yes, you should request from Allergy - although celiac antibody testing is not within their normal tests. Any chance your primary can order proper celiac antibody testing?
  16. A biopsy being negative does NOT rule out Celiac Disease. Have you received the results? I do think that once the endoscopy is complete it is time to remove gluten. Hang in there Mom!
  17. Welcome J! Seven days isn't long in the grand scheme of removing gluten. It is possible you are getting some from cross-contamination - it is possible what you are experiencing is gluten withdrawal symptoms. IMO it is way too early to look to other food intolerances - unless you can pinpoint a reaction to a certain food. A detailed food/symptom...

  22. Welcome Phil's Mom and Philly!!! Forgive my tired eyes...what are his 6 foods with gluten? This is the best starting point...replicate foods he loves. For now....everyone else has given excellent advice...so I'll say goodnight along with a big HUG

  25. Hi Again...not sure you saw my welcome in the other thread you posted in so....WELCOME! Celiac Disease diagnosis is very scary -- but given time you will learn to eat safely. The transition is tough. For now...read as much as you can...I'm in the middle of making gluten-free pizza for many teens so if no one else says hello - which I doubt - I'll check...
