The What's For Dinner Tonight Chat
GottaSki replied to jess-gf's topic in Gluten-Free Recipes & Cooking Tips
oops forgot to mention dinner... Tri Tip on the Q Zu noodles for me - angel hair with lots of garlic and butter for the men Broccoli They are still working on minty fudge cake for dessert -- I am having a few M&Ms -- small amounts of soy seem to be ok -- I am whispering that because last time I bragged about my red lentil experiment I got schooled... -
The What's For Dinner Tonight Chat

That's the basic idea of this thread...we all talk food and general conversation -- much like we would if we were dining in each other's homes -- my husband likes to lurk in this thread because we both cook -- he just doesn't post -- that's a good point -- if there is anyone else reading along... What are you having for dinner tonight? -
ARCHIVED Negative Biospy! So Confused Please Help
GottaSki replied to KristinIrwin's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My thought is now that all your testing is complete -- remove all sources of gluten for at least three months - six is better. The tests are not perfect - as for those "patchy" spots -- make sure you get the written copy of the pathology report -- in addition to a written copy of the doctor's procedure report. Good Luck -- let us know how it goes... -
ARCHIVED Blood Test Came Back Positive, Now For The Biopsy
GottaSki replied to EmiPark210's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I generally say stay on gluten until the endoscopy is complete. In this case I think you need to do what is best for you...if you are having horrid reactions to CC I would not intentionally eat gluten again. I would have the endoscopy done. While remaining on gluten gives the best possible chance of accurate biopsy -- it is still completely possible to... -

ARCHIVED Fibro & Celiac
GottaSki replied to Tiredsean's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I was diagnosed with Fibromyalgia seven months after my Celiac Dx. I had horrid reaction to the first fibro drug I was given - Savella -- not surprising as I have been given a host of meds over the years for my autoimmune symptoms -- all failed miserably. I did have some success by supplementing targeted amino acids - sadly this was short-lived and the... -
ARCHIVED 18M Old - With Genetics Against Her
GottaSki replied to Aprilelayne's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Celiacs come in ALL SHAPES AND SIZES - period. I don't mean to yell, just get frustrated because I had obvious celiac symptoms since I was a toddler -- but they were not "classic" symptoms. Hoping off my soap box.... Soy can be very tough to get completely rid of -- like gluten it hides in many, many processed foods. Yes, it is declared more... -
ARCHIVED Sinus Congestion?
GottaSki replied to norman516's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Hi Norman! Everyone is different and symptoms improve at all different rates. My son had severe nasal congestion -- it has improved, but isn't completely gone - gerd and sinus issues are his only remaining symptoms - although much improved. I hope this improves for you quickly -- also sometimes we blame gluten for some issues that can be attributed...- 1 reply

Thanks for the update! I think I'll ask for one for my next birthday -
I also have no problem with folks other than celiac going gluten-free -- I do however strongly dislike when people who "try" to go gluten-free don't really understand removing gluten -- many a teenaged girl has explained to my celiac son that he doesn't understand the gluten free diet -- lol -- he just smiles and waits for them to see that he actually does...

What type of roast? How much does it weigh? I would roast the roast -- then cut it into little pieces to use in a variety of ways. Salt and pepper is all we use regularly on my meat -- I do use dried herbs and garlic as well if you have them lying around. -
Well said....you remain in my daily prayers... Big HUG

ARCHIVED What Were You First Symptoms To Go Away?
GottaSki replied to norman516's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Skin, nails and hair all improved -- and I had pretty good skin and great hair before I was gluten free - my nails had always peeled and broke easily -- then a few months in my gums started improving - always had gum issues even with very good dental hygiene. I had some improvement with digestion for the first six months -- then had other issues pop up.... -

ARCHIVED Do You Wonder What All The Fuss Is About Gmos?
GottaSki posted a topic in Introduce Yourself / Share Stuff
Good Morning All- I have to admit until very recently I had no idea what the big deal about GMOs was.... A GMO labeling law proposed in California last Fall was gaining momentum and looked as if it would pass - then Monsanto and other big chemical corporations threw a ridiculous amount of advertising dollars at California -- saturating the airwaves... -
Good job K...will be interesting to hear the response .... maybe she will simply delete her post ... minimally she will likely consider more carefully before posting about her fad diet attempts - well hopefully.

ARCHIVED Why Can't I Lose Weight?
GottaSki replied to ButterflyChaser's topic in Related Issues & Disorders
My digestive system was in very poor shape from decades of damage caused by undiagnosed Celiac Disease -- it took me over three years to find all the foods that my damaged system was having difficulty digesting. The last piece of this puzzle was Histamine Intolerance -- this is where your body can't manage histamine levels in your body properly -- there... -

ARCHIVED Why Can't I Lose Weight?
GottaSki replied to ButterflyChaser's topic in Related Issues & Disorders
I say "heavy" because my entire life - except for my teen years when I lived on rabbit food and diet coke - I was husky, heavier and fatter than I should have been for my caloric intake and extreme exercise level. Doctors ALWAYS (at least 8 primary docs over 25 years) dismissed me when I said I am heavier than I should be -- with a look like - sure... -
ARCHIVED What Is Wrong With Me
GottaSki replied to rube2112's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hi Robb- Has your pain increased on the diet you just listed? If so, it is entirely possible it just is not the correct combo for you. For instance I consumed quite a bit of fresh spinach over the past few years -- thinking it was the best green for me -- WRONG -- it is high in histamine -- if you have severe damage in your small intestine - your body... -
ARCHIVED What Is Wrong With Me
GottaSki replied to rube2112's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Could not have said it better myself - and yes IrishHeart and I both have walked in your painful - frustrated - sick to death of doctors dismissing our symptoms - shoes. I still wake each morning in a great deal of pain -- a 15-20 minute soak in hot epsom salt bath gets me moving and then unless I run into a food from my no-no list I am generally full...
