That's the basic idea of this thread...we all talk food and general conversation -- much like we would if we were dining in each other's homes -- my husband likes to lurk in this thread because we both cook -- he just doesn't post -- that's a good point -- if there is anyone else reading along...   3. My thought is now that all your testing is complete -- remove all sources of gluten for at least three months - six is better. The tests are not perfect - as for those "patchy" spots -- make sure you get the written copy of the pathology report -- in addition to a written copy of the doctor's procedure report. In this case I think you need to do what is best for you...if you are having horrid reactions to CC I would not intentionally eat gluten again. I would have the endoscopy done.   10. Hi Norman! Everyone is different and symptoms improve at all different rates. My son had severe nasal congestion -- it has improved, but isn't completely gone - gerd and sinus issues are his only remaining symptoms - although much improved. I also have no problem with folks other than celiac going gluten-free -- I do however strongly dislike when people who "try" to go gluten-free don't really understand removing gluten -- many a teenaged girl has explained to my celiac son that he doesn't understand the gluten free diet -- lol -- he just smiles and waits for them to see that he actually does...

  14. What type of roast? How much does it weigh? I would roast the roast -- then cut it into little pieces to use in a variety of ways. Salt and pepper is all we use regularly on my meat -- I do use dried herbs and garlic as well if you have them lying around.

Skin, nails and hair all improved -- and I had pretty good skin and great hair before I was gluten free - my nails had always peeled and broke easily -- then a few months in my gums started improving - always had gum issues even with very good dental hygiene. I had some improvement with digestion for the first six months -- then had other issues pop up....

A GMO labeling law proposed in California last Fall was gaining momentum and looked as if it would pass - then Monsanto and other big chemical corporations threw a ridiculous amount of advertising dollars at California -- saturating the airwaves...

I say "heavy" because my entire life - except for my teen years when I lived on rabbit food and diet coke - I was husky, heavier and fatter than I should have been for my caloric intake and extreme exercise level.
