  1. Coconut oil or olive oil. In a few rare cases I'll use canola but I really don't like to use oil from something that is inedible by humans. My other preferred cooking oil are bacon grease (for frying/sauteing), or sometimes goose fat (if I can get it) or pork lard.

  5. Hi Mars and welcome! That isn't an unusual set of symptoms. Also you mentioned Colonoscopy. If they are planning to test for celiac disease, they need to be performing an Endoscopy with biopsy (taking a minimum of 8 to 10 samples). And are you Spirit or Opportunity?

    GAPS. I have personal experience with a friend's son and one of our grandsons whose ADD/ADHD improves immensely when on a GAPS diet. (Gut And Psychology Syndrome).

    My brain fog manifest(s/ed) itself: Problems typing (type the wrong word/misspelling simple words) - go to correct and type the same wrong word, transpose letters and have to retype. My normal typing speed is about 70wpm. When I'm brain fogged I maybe can type 20-30 if I'm lucky. Reading aloud - I'm a very fast reader and normally don't have a problem...

I know that symptoms may reportedly resolve for non-celiac gluten sensitivity, but celiac disease does not resolve in the sense that one can eat gluten without damage. One could become asymptomatic or non-presenting, but the fundamental underlying auto-immune disorder is non-resolvable (as far as I understand any research...

    Yay for Sylvia's suggestions! Living Gluten Free for Dummies saved my sanity. A friend whose husband has celiac disease loaned it to me. I highly recommend all three of those.   18. I have to vote for the soy. After going gluten-free, I continued to have panic attacks, anxiety attacks, insomnia, muscle spasms/uncontrollable small muscle twitching, and hot flashes.
