Just in case it helps, this is something we ran into a few times in the last, oh, 8 months or so? A company that had been safe made a change that suddenly made it unsafe for us. One time it was something we should have noticed, because the company started adding new ingredients that weren't gluten, but made it unsafe for us, anyway. Another couple times it...

Ah, thanks, missed that one!

A friend's gluten cc moment is probably a more useful one for your relatives. :-) I have a friend who went out to a fast food place with her family. She didn't eat anything there and just got a 'water cup' so she could get water from the soda fountain. It was one of those spouts that is usually lemonade but you could press the 'water only' button to get...

Were these potatoes that you roasted yourself? If they are regular potatoes that you roasted, it may not be sulfur/sulfites. The sulfite issue with potatoes is typically what is added to most processed potatoes foods (it keeps them from browning) so frozen potato products, potato chips, that sort of thing. But it's not usually added to plain potatoes. Canola...

ARCHIVED Diagnosing Food Intolerances
T.H. replied to cavernio's topic in Food Intolerance & Leaky Gut
Your last statement hit the nail on the head, IMO. It's really, really uncertain, unless you happen to have just the right reaction to the right food and get just the right test (if there even IS a test for your reaction!). What you're reacting to can be affected by so many factors, and our food supply comes into contact with so many things besides that,... -
ARCHIVED May Have Found A Huge Answer...but Still Confused (Possible Dairy Allergy)
T.H. replied to zebaldwin's topic in Food Intolerance & Leaky Gut
Hmmmm... Perhaps you have a true intolerance rather than an allergy? If that's the case, amount may be a factor in whether you get a migraine. From what I remember from our allergist was telling us, it takes a few days for dairy to get out of our systems. So while dairy one day may be fine, or tiny amounts of dairy cc might be okay, you add them up over... -
A true intolerance to citric acid is extremely rare (although it absolutely does exist, so you could be right on the money.). More common seems to be a reaction to what the citric acid is contaminated with or what it was sourced from. The link Skylark gave listed sugarcane as the main food source for the fungus used to make citric acid, but in my experience...

ARCHIVED Almost A Year On Diet And No Results
T.H. replied to eazyeazy's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
So sorry to hear that you are having such a tough time! For your current diet, do you always eat the same brand of food, or source from the same farm? If you do, how well do you do if you try another brand or farm source for your apples/chickens/eggs and so on? For the other foods that you have tried, have you tried multiple sources/brands, or only... -
ARCHIVED Warning! Quinoa Contamination With Barley
T.H. replied to squirmingitch's topic in Gluten-Free Foods, Products, Shopping & Medications
I just came across that, too. Sigh...stuff is everywhere, argh. -
You know, it's really nice to hear someone be able to say that. :-) So many of us have to cook that it's comforting to realize that for some of us, that's a GOOD thing, you know? I really wish I was in that position. I do find it very satisfying when I make a dish that turns out really well, or find a recipe that is simply awesome. But at the end of the...

This came up on another site, and I thought it deserved to come here, too. :-) Open Original Shared Link The relevant section: "...Most of the quinoa comes from Peru and Bolivia and has been grown in areas where other (problematic for Pesach) grains were generally not grown. However, as the popularity of quinoa has risen, this is no longer the absolute...

ARCHIVED Sharing A Hospital Gluten-Free Experience
T.H. replied to T.H.'s topic in Coping with Celiac Disease
Oh she did, at great length and with a lot of detail, made it all as official as possible. And if that didn't work, I have a feeling she managed to make them pay attention a LOT more when she also made sure to let them know her profession: she's a lawyer. Oh, and as to what city that was in: Tucson AZ. I don't recall which hospital, though, I'll... -
ARCHIVED Sharing A Hospital Gluten-Free Experience
T.H. posted a topic in Coping with Celiac Disease
Just sharing a friend's hospital experience because honest to god, it was so bizarre it's hard to believe! A celiac friend of mine just had a baby a few weeks ago with a c-section and had to stay in the hospital for a couple days. She'd heard a lot of horror stories about people's gluten free experiences in the hospital, and as she has food allergies on... -
Ow! Don't have the gastro symptoms myself, but just wanted to give you a virtual hug for the pain. *big honkin' hug* Do you have anything that seems to help the rash? If you have any prickly pear cactus or aloe vera plants nearby, the inner pulp of both of those has worked well on any rashes my children have had.

ARCHIVED Extra Diet Restrictions For Healing?
T.H. replied to Baddfrog's topic in Super Sensitive People
If you are in the USA, it may be worth your while to call up the companies making your gluten free foods to ensure that your food suppliers are being as careful about gluten as you are. Here in the USA, there is no law currently regulating our gluten free food, so while some companies are very good about testing every batch of their gluten free products... -
ARCHIVED Cross-Contamination Considerations
T.H. replied to kaygato's topic in Super Sensitive People
If extra care is taken about the wine and that doesn't solve the problem, you may want to investigate the wafers as well for potential cross-contamination issues. What steps are taken during communion to ensure that your wafers are not coming into contact with gluten? Do you pick it up yourself from a special plate, or does someone who has been handling... -
Oh goodness, no, I didn't mean to imply that it would explain most of our reactions. Sorry 'bout that. Just mentioning it for those of us who are still able to eat some processed gluten-free foods, especially in Europe where hydrolyzed wheat is allowed as an ingredient in gluten-free foods. I know that some people here pay attention to the ppm of gluten...

ARCHIVED Super Sensitive And Lactose Intolerant.....lots Of Questions
T.H. replied to USF1970's topic in Super Sensitive People
re: lactose and dairy. It's annoying, but if you want to try lower lactose dairy, like buttermilk or sour cream or yogurt...it's label reading time again. If you make these yourself, you're good, and the way they are made has the bacteria essentially consume all or almost all of the lactose. If you are in Europe, you are frequently good. If... -
For those who are careful to only eat tested gluten free products but have had issues with tested gluten free products that contain hydrolyzed gluten, this might provide some possible answers why. Open Original Shared Link Essentially, it mentioned that in foods and beverages with hydrolyzed gluten proteins, the sandwich ELIZA test, which is usually...

Oh, late to the conversation, but figured I'd add in what info. I have on sulfites, in case it helps. Salt can be bleached with sulfites and cause a problem. Most processed corn ingredients, like citric acid or cornstarch, is sulfited (it's soaked in a sulfited solution before processing). Grapes are typically no good due to many of the additives used...

Open Original Shared Link "Seronegative celiac disease occurs. Endomysial antibody positivity correlates with more severe villous atrophy and not mode of presentation of celiac disease. Serologic tests, in clinical practice, lack the sensitivity reported in the literature."

I wonder if some of the severity of the reaction might be due to other foods you consumed during the day that added to your sulfite load? You might already be very aware of these, but just in case it's new info, foods from the Brassica family (cabbage, mustard greens, radishes, etc...), and the allium family (onions, garlic, leeks, and so on) are only...

ARCHIVED Corn Sensitivity And Pain Relief
T.H. replied to GFreeMO's topic in Food Intolerance & Leaky Gut
On cornallergens.com, she says that Aleve is corn free. I haven't looked recently to see if that's still the case, and I'm not sure how long she's had that information up, but it might be worth a look, anyway.
