  1. Red snapper soup with lots of garlic. :-)
  2. Is it fresh fruit and veggies that are an issue, so that you can have canned or preserved but not fresh? Or is it raw fruit and veggies and you can have them cooked? I thought at first you meant that you could have canned, but then slices of tomato didn't make sense so I thought perhaps I should get some clarification. :-) For one idea, there's an easy...
  3. An old cookbook of mine suggested getting a hot pan with a little olive oil and frying the french fries/sweet potato fries for just a couple minutes before putting them on a cookie sheet and baking them. The pan has to be hot when the s. potatoes are put in, and they get turned once so they have a little crust on the outside. Supposedly, this helps them stay...
  4. We ended up doing a lot of asian food, specifically making japanese bento boxes. Rice balls are easy - Sushi rice soaked for 1-6 hours and then cooked, cooled, and formed into a shape with salted hands. A filling inside works well - fish or meat or fruit, depending on what you want the rice ball for. We made gluten-free falafel with homemade hummues to...
  5. If you try the dairy and you DO need a dairy free chocolate, Enjoy Life brand chocolate is pretty good. It's gluten free, dairy free, and free of a few other allergens, too. They make chocolate chips and chocolate bars, both. You'll likely be able to order on-line, if you don't see any in your local stores. This chocolate doesn't melt as nice as dairy...
  6. #1 What did your abdominal pain feel like and where was it primarily located, constant or intermittent? And what % has it improved, if at all after being gluten free, and time frame to get their?? No gut or ab pain at all. Afterward, however, I developed ab pain periodically in response to food allergies. These seemed to start being an issue after going...
  7. Studies are showing that 4 times more people are having their 'triggering' event than 50 years ago, so the population with the genes (that never would have developed the disease) are now developing it more frequently. However, you may not be the only one, even if you are the only one with gut issues. Experts recommend that all your family now get tested...
  8. From what we've been able to figure out, it's during the defeathering process. Birds are usually put into a drum-like machine that rotates and plucks the feathers off. However, the bowels are usually not completely emptied/eliminated before this process, so a little of the stomach/bowel content tends to coat the skin and anywhere else it touches during this...
  9. Congratulations on figuring out that it's dairy! Have you ever been checked for the H. pylori bacteria, or gotten the endoscopy? Celiacs are more susceptible to the bacteria, and it can cause ulcers. Fructose malabsorption might be worth looking at as well, since this seems more prevalent in those with other gut issues, and can cause gut pain...
  10. My daughter would be close, I guess. As far as I knew, she wasn't ill, although she complained of being tired sometimes. But she slept poorly, anyway, so we assumed that was why she was tired, you know? We tested her because 2 people in the family had come back positive for the disease. Since she's gone gluten free, though, we've come to realize that she...
  11. Thanks, hon. I think my body is just trying to tell me that it's high time I became a genius and invented time travel, so I can go back a couple hundred years and live with, like, the inuit or the mayans or something.
  12. What other foods are you eating? It's slightly possible that you might have developed another intolerance of some kind. They can cause the symptoms you mention (physical ones), and some of these may be in almost all foods, like corn, which is even in many of our regular salt brands. A good friend (non-celiac) went to the doctor for two years with symptoms...
  13. Congratulations on feeling better! :-D It's really amazing to feel like a completely different person just after changing the diet, isn't it? I couldn't believe it myself!
  14. And if you come up clear for any kind of UTI or diabetes? A few of us also have a frequent urge to pee as a sign of low level gluten cc. I've not seen this listed in any literature, so I'm not sure the cause, but it has been a topic a couple times here at celiac.com, and there are others who have experienced the same thing. I always test negative for UTI...
  15. I think that's the general thought for most ER's, pharmacists, doctor offices, and such, when they see the celiac disease label. That's not actually the case, however. Some celiacs have symptoms for a day or two, but their gut is damaged, which means they are nutrient deficient until that heals, which can be days, or weeks, or even months, depending on...
  16. I must admit, I have a bit of angst over this as well. A close friend's daughter nearly died because of this kind of crap. Her daughter had the celiac disease that triggered and got really bad, really fast. She had their daughter on chicken broth for 2 months, while waiting to see a specialist, because everything else (full of gluten) was making the little...
  17. *warning, whiny venting ahead* You would think that with this reminder so recently, I would be safe, but no...had to go and push that freaking envelope, argh! Just went to an old victorian, historical farm (really, really pretty). I've been there before I got diagnosed, know there are areas where animals and hay are and stayed away from them (going...
  18. If your symptoms are not severe, my dietician recommended a slow approach for the process. She has her patients start by making gluten free foods for one meal a day - natural ones, like, say, a baked potato with broccoli and cheese on it. Do that for a week, about. Then the next week, do it for 2 meals a day, then three meals, then snacks, then eliminate...
  19. Unfortunately, things like supplements, enzymes, and the sort of thing you mentioned tend to be problematic for many super-sensitive celiacs due to gluten cc. They are rarely gluten free enough for us to use safely, even if they might have been useful if we could find a clean source.
  20. I definitely noticed a change in my symptoms as this has gone along (I'm only about 2 years into the diet, at this point). Trace gluten seems to have an effect similar to what you experience, mentally. My memory gets a little worse, forgetting words and things like that more frequently. I kind of wondered what it was, too, until I ended up getting a...
  21. One thing we've run into with both my children and my friend's celiac 2 year old is that you can be sure there are no trace amounts of gluten in her food, but that doesn't mean there are no trace amounts of gluten getting into HER. My friend's 2 year old has had a terrible time of things, because he puts his hands in his mouth all the time (normal, right...
  22. That's one of the things that really surprised me when I finally started exploring the gluten ataxia and safe gluten levels. I used to think that the tests could detect whether I was getting gluten cc, but this isn't actually the case. The tests just look at whether we are ingesting enough gluten cc to set off the antibodies that attack our gut, you know...
  23. I have not looked into any genetic differences between modern vs. ancient forms of wheat, so I couldn't speak knowledgeably about that. However, there does seem to be some evidence that even in ancient times, celiac disease existed, so whatever differences exists, ancient wheat doesn't seem to have been any better for a celiac's body. As an example, last...
  24. Okay, first - jeesh there is a lot that can cause dizziness! I swear, the fact that we so often navigate this on our own, without a lot of help, and STILL figure it out is frankly amazing! On that note, something that may help some here, but definitely not all, re: gluten ataxia - I mentioned in my earlier post that I had to drop gluten down to ridiculously...
  25. According to my biopsy, my gut is looking awesome right now - no inflammation, no lesions, no blunted villi, and so on. While I have met some people who claim that they can now eat many foods they were unable to before, that has not yet been the case for me. All the foods I reacted to when I was first diagnosed still do bad things to my body. Perhaps it hasn...
