Wine is considered safe for Celiacs. This reaction may have nothing to do with Celiac. A reaction to sulphates is separate from Celiac Do you get this reaction from any other alcohol?

I am assuming he was diagnosed with Celiac? Has he removed dairy? Celiac disease damages the part of the intestines that help digest dairy. The ability to digest dairy may return in a few months. -

I just want to point out that when this thread started, it was not in The Super Sensitive Section. I, and likely most other posters, were not responding to a self-identified Super Sensitive. Never did he identify as Super Sensitive.

I assumed from something you posted that you knew you were having Celiac issues because your antibodies were still high? Or you had a repeat endo and they found Celiac damage? that was what made me think you were talking refractory .

I think that it can take a while to "balance" everything out. And as we heal, how much fat, sugar, fiber, etc we can tolerate or need can change. Even so, I find that maybe my GI system is a little more "delicate" that other peoples and more sensitive to too much fat or sugar or fiber.

I am not even sure why you are asking about coffee. if the docs think you may have Refractory Celiac - I don't think coffee is allowed on the Gluten Elimination Diet (Fasano Diet). Most doctors want you to try that for 6 -8 weeks (if I remember the time frame correctly) before going to steroids or whatever the next step is. It usually "cures" the supposedly...

Just because they don't spend the extra money to test a naturally gluten-free food - like applesauce, doesn't mean they believe it contains more than 20 ppm. If something is "certified" gluten-free, it does not mean that some certifying group does inspections or testing of the foods. Its more of an agreement a company makes with a certifying organization... -

I think you should ask the companies. I am guessing it is because they are not testing the applesauce, for instance. It would add to the cost for everyone, even the people who don't care about the gluten-free label. And may be a "legal" cinsideration Also, the shared facility is a voluntary statement. -

Lots of companies make "naturally gluten free" foods and nothing that isn't. An apple sauce factory isn't going to make bread..... You can always all to see what they are talking about in regard to shred facility. You might find it isn't what you think. -

What she said! and gluten isn't the " cause" of Celiac. They are trying to find what causes the Celiac gene to be " turned on" and are finding several possibilities, including a common virus. " gluten" is the term most commonly used for the actual proteins in wheat, rye and barley that cause an antibody reaction in poeple with Celiac disease... -

I guess this isn't plain rice? You might check with your Celiac association web page. I think that there is a law that all gluten must be clearly labelled? So it must say "wheat" -

So , like I said before - gluten isn't lurking in her body. So "detox" doesn't really apply. It can take months for antibodies to lower. In fact, there was a study that found that, even gluten-free, for a couple of weeks, the antibodies might rise. So, you can treat symptoms with things like Pepto Bismol or Ibuprophen. -

Gluten is like any other food - in a day or two it has made its way through your system. did you take your kids off gluten without testing them for Celiac? -
Its called an open face sandwich! You could use 2 pieces of toast and pile stuff on top. Stick a little lettuce/spinach on top. Or a bread salad - salad and sandwich ingredients on top of bread or with big toasted bread cubes on top.

You need a small business lawyer. I know it costs money but you seem very confused about the legalities.
