  1. It seems the next day the bread is always harder. Of course, the first day it's more crusty and I think some of the moisture from the interior of the bread is then absorbed into the crust so the bread is drier.   2. Let us know if you like Pamela's bread. Hopefully you'll not bake many bricks...but think bread crumbs, croutons, stuffing, etc. I've read that some of the KitchenAid attachments can really tax the motor. I'm sure making a bit of sausage would be fine but it's not meant to grind massive amounts (like a large amount of venison if you're a hunter).

  6. I wouldn't worry about the cracks. If the bread tastes good, that's what counts!!! I've made bread that mysteriously cracks, too, even when I didn't let it rise in the bowl. 'Tis a mystery but if I end up with something edible, I'm pretty happy.
  7. So true! I've never tried Pamela's but I do keep diddling around with recipes. I figure most everything I make from scratch is better than anything I've ever bought (frozen or a mix).
  8. I find that Amazon usually ships faster, too. I don't have a problem with Bob's Red Mill flours/starches...it's just the mixes I don't care for. Good to hear the Sam Mills pasta reheats good, too! I usually make smaller portions but that would sure save a lot of time.   10. Personally, I'd go for the endoscopy as long as you're scheduled. Hopefully your GI dr. will take several biopsies...I'd insist on it. After all, he's already scoping you so this is the time to do it. And unless villous atrophy is especially severe, it's usually not visible to the naked eye. He will be able to see other things that might be going on....

  12. I had that feeling you might have those restrictions. Are you looking for something sweet? I was originally going to suggest Pamela's Baking & Pancake Mix for banana bread but it has dairy (also almond meal). And it pretty well leaves out mixes like Betty Crocker.

  14. I live in a much smaller area than you do and I don't have any problem get Bob's Red Mill products. To start with you might like to pick up some various bread and pizza mixes to try so you don't order in bulk and get stuck with something you don't like. Maybe the guy at Mother Earth can tell you what their best selling mixes are. No Publix or Winn...
  15. My pooch is not easily offended! LOL I think the problem with Bob's Red Mill mixes is that they contain garbanzo bean flour and some people don't like it. Others do. Do you have any health food stores? If so, you might call to see if they carry Pamela's. No Whole Foods or Wegman's around here. On the other hand, I do use a lot of Bob's Red Mill flours...
  16. I think the risk of cross-contamination is too great. In the case of scoops, what if someone scooped up wheat or barley and then dipped the same scoop into your rice? Of what if the bin that you pour the stuff from first contained wheat and then the store did not clean it out thoroughly and then put rice in it the next time around? Or is it even possible...

  20. Well, I think she's wrong. Yes, there is gluten in other grains (from what I understand) but it is NOT the kind of gluten that's in the grains we must avoid like wheat, barley and rye. Oats is iffy if it's not certified gluten-free and there are some celiacs who simply cannot tolerate oats even then. I buy Ancient Harvest quinoa, which is marked gluten...
  21. Neal, since you feel a bit better, perhaps you should try eating smaller meals more frequently. Not saying that will help, but I wouldn't push it by having a large breakfast.
  22. I don't know if there's anything in vitamin water that might cause you to feel poorly. My own opinion is that vitamin water is a huge rip-off so I don't buy it. I would think it probably doesn't have much in it that would make it healthy...water, flavoring, a smidgen of vitamins/electrolytes and sweetener. You might want to explore some of these Open...
