Welcome, Day! Just keep reading the forum and you'll learn that we eat rather well. There's no reason you can't have pizza, burgers and chow mein...they just need to be gluten-free, which isn't as difficult as it sounds. Hopefully you cook as it'll make it a lot easier. That's a trick question, Marc! I really don't think you can compare gluten-free breads to others. My loaves are not normally the size of gluteny bread. Obviously the French bread isn't...I gave you that link because it used such few special ingredients and IMHO at least, it tastes good and would be a good one to start with. You're welcome, Marc. No, you're not driving me crazy...it takes a lot more than that! Gluten-free breads are usually more like a thick batter and not a dough that can be kneaded and shaped into a loaf. I use the flat paddle attachment, not a dough hook, with my mixer (it comes with it along with the whisk and dough hook). I've never used the dough... -

Whew! That is expensive. I'd definitely check Quaker rice cakes at Wal-Mart if you have one near you. Or even another local grocery store should have them for under $3.00. Just be aware that the small size ones may not have the gluten-free label.

Hi Tim, if you've been gluten-free since March, it might be difficult for you to do a gluten challenge in the hope that you get accurate test results from a celiac panel. That amounts to eating the equivalent of 3 to 4 pieces of bread for 3 months...and even then you might come up negative on a test. Ouch! Since you are basically gluten-free, you might... -
The large Quaker rice cakes are marked gluten-free right above the ingredient list (always check the label). I have the plain lightly salted ones that I enjoy with peanut butter on them. I think the last time I bought them at Wal-Mart, they were $2.00. Hopefully you don't have a problem with rice???

Welcome, Tim! So sorry you are having so many problems...a lot of us have been down that route. I don't know what the ratio is of men and women on this forum...maybe we women just express ourselves more freely and men tend to suck it up. I've never read any statistics that I can recall. Getting tested for celiac will not get you a pity party around... -
I've heard of people here who have quickly grabbed a loaf of Rudi's bread and inadvertently picked up one that was not gluten-free. I'm assuming they were in a hurry or perhaps didn't know you made both kinds. It's admirable that you are GFCO certified and test <10 ppm so that all but the most sensitive celiacs will be able to consume your gluten...

Marc, you can browse through Annalise's bread book on Amazon and also read the reviews. I've never tried to calculate how much a loaf of homemade gluten-free bread costs. My cost would depend on whether I use a complete all-purpose gluten-free flour (Iike Jules Shepard's) or make up my own mix, which I'm sure I can mix up for less than $4.00 a lb., even... -
I figured that's what you meant. I think I've read of people here who have been on omerprazole or other acid reducing meds and had too low stomach acid. Hopefully someone else will chime in who has had that problem.

I tried corn on the cob twice this summer and it definitely did not like me nor did popcorn I tried a few days ago. I thought perhaps it was the amount of fiber but don't know. I don't think I have a problem with other corn products or corn starch, etc. -

Kristen, you might want to use the google search button on the top right of your screen and search lunch ideas. I know there have been some recent threads about it. You're liable to pull up some ancient posts, too, so check the info to make sure items suggested are gluten-free if brands are mentioned. -

Natural vanilla flavor is processed with corn? That's puzzling to me. Where did you read that? What a bummer that you got sick from the Ben & Jerry's. Are you sure you can tolerate dairy? A lot of newly diagnosed celiacs have to avoid dairy products (specifically lactose) until they've healed. -
