  1. I don't blame you for not wanting to feel ill! The question I would have is would you be willing to stay on a strict gluten-free diet for the rest of your life without an "official" diagnosis? That's not saying there's a guarantee you would get a diagnosis even if you went through all testing. But a few months or years down the road are you going to regret...

  3. The good news is that if you don't have an issue with gluten, nothing will happen when you go back to it. Your body will let you know and probably rather quickly.
  4. I'm waiting to hit the lottery!!! I want a knock-your-socks-off bread recipe...still searching, still tweaking. Thus far nothing I've tried has measured up to expectations but generally I do make things that are at least edible.

I have several size pans...the standard 9x5" el-cheapo pans from Wally World, some ancient glass Pyrex loaf pans, a couple of 8 x 4-1/2" Norpro pans from Amazon and a 9x4x4" loaf pan made by USA Pans. I've been using a spring-loaded ice cream scoop to make hamburger buns in a muffin top pan...
  7. Do you have access to an Asian market? Sticky rice flour is also known as sweet rice flour or glutinous rice flour. I haven't tried it for gravy as I'm not much of a gravy person. I should try it when making a curry as that would definitely need a roux (at least in my not-so-authentic curry recipe). I have used cornstarch to thicken sauces and find...

  9. I have some Great Value Half & Half and it does have carrageenan in it (I don't have any heavy whipping cream).
  10. My daughter buys it at Whole Foods (the Cherry Creek store)...fresh gluten-free bread is on the rack with the regular bread. She said parking is a pain at that store. I didn't ask if she saw the hamburger buns there.
  11. I'd love to taste Udi's fresh bread. Can't even begin to imagine it...but then if I did, I probably wouldn't be doing all the experimenting I'm doing. At least I rarely, if ever, bake bricks any more. No Whole Foods or Trader Joe's around here (no Wegman's either). The hamburger buns I baked aren't bad. I think I could have pushed the rise a bit...

  17. I bought the KitchenAid Artisan model, which meets my needs nicely. Love2travel is a major foodie and I believe she has a high end pro model. Amazon really kicks the prices around on KitchenAids. There's a $30 rebate now on certain models (including the Artisan).
  18. Crunchmaster chips are good (not sure they can be called a chip or a cracker since I don't have any right now). I prefer the original flavor. Lays Stax potato chips are marked gluten-free on the container. I've been buying Utz potato chips but don't think they're available nationally.
  19. Some brands I like are Johnsonville for Italian sausage, Jimmy Dean for breakfast sausage and Hillshire Farms for Kielbasa and other sausages. Of course, I read the label each time I buy any sausage.

  22. Rice is generally safe but then some people have problems with it, too. Personally I don't have a problem with rice.
  23. I've had corn on the cob twice this summer and it did not like me. I felt fine after I ate it but had issues the next morning. This was fresh corn, not processed or handled by anyone but me. I've thought it could possibly be too much fiber but otherwise I haven't a clue. No problem with cornstarch, corn flour, etc. so I'm clueless.
